2 tablespoons olive oil
1 lb boneless skinless chicken breasts (roughly 2 large; sliced into 1/2 inch pieces; see note 1)
3 tablespoons cajun seasoning ( note 2)
2 bell peppers (sliced into strips)
1 red onion (sliced into strips)
2 cups cherry tomatoes (quartered)
4 large tortillas (to serve)

Steps:

  • Cook Chicken - Heat olive oil in a medium non-stick pan over medium heat. Add the chicken, and sprinkle with 1 ½ tablespoons of cajun seasoning. Cook, stirring frequently, for 5-7 minutes, until cooked through.
  • Sautée Veggies - Remove the chicken from the pan and place in a clean bowl. Add the bell pepper and onion to the pan, sprinkling with another 1 ½ tablespoons of cajun seasoning. Cook for 5 or so minutes, until slightly softened.Add the tomatoes to the pan, cook for 1 minute until soft. Add back the chicken, toss everything up, then remove from the heat.
  • Portion - (For meal prep only)- Divide between four 2-cup capacity storage containers.
  • Serve - When you are ready to serve, spoon heated filling into wraps or tortillas and enjoy!

2 boneless, skinless chicken breasts (partically thawed and sliced in strips)
2 flour tortillas
lots of fresh leaves of spinach
honey mustard
2 Tbsp cajun seasoning
1 tsp garlic powder with parsley
1/4 large sweet onion
1 clove garlic crushed and minced (mine was from a jar)

Steps:

  • 1. As it says above slice the chicken while partly frozen. It is easier. Then add the spices and toss well. put in fridge for 1-4 hours before starting this dish.
  • 2. 20 minutes before dinner Put together the wraps by putting on a plate and smearing lightly with honey mustard. We like the marzetti's from the produce isle. Then add a couple of layers of spinach over the honey mustard. set a side.
  • 3. In a wok or fry pan add a spray of oil. over Med high heat toss the chicken to fry until done. adding the onion strips the last 3 or so minutes just to lightly cook.
  • 4. divid chicken and onion mix between three wraps and play down the center of each. Now just roll and serve. Eric had two I ate one. was a wonderful and light dinner. You could add a cream of potatoe soup or potato chips of you wish

  • In a large shallow dish, mix the oil, Cajun seasoning, Italian seasoning, garlic powder, and lemon pepper. Place the chicken in the dish, and turn to coat with the mixture. Cover, and refrigerate for 1/2 hour.
  • Preheat the grill for high heat.
  • Lightly oil the grill grate. Drain chicken, and discard marinade. Place chicken on hot grill and cook for 6 to 8 minutes on each side, or until juices run clear.

4 medium tortillas, flour, fat-free
1 tablespoon all-purpose flour
1/2 small onion, red, thinly sliced
1 teaspoon paprika
2 cup mixed baby greens
3 1/2 tablespoons Cajun seasoning, divided
8 medium basil, leaves
1 1/2 teaspoons fresh lemon juice
4 teaspoons fat-free mayonnaise
1 small tomato, cut into strips
Salt and pepper to taste

Steps:

  • Mix the 3 tablespoons of Cajun seasoning, paprika and flour. Season chicken with salt and pepper and coat with seasoning mixture. Spray a large, nonstick skillet with cooking spray. Over medium-high heat, add chicken to pan and sauté until cooked through (approximately about 1 to 2 minutes per side). Remove chicken from heat and set aside. In a separate bowl, mix mayonnaise, lemon juice and 1/2 teaspoon Cajun seasoning for the dressing. 8 slices bacon
2 cups shredded chicken
salt and pepper
1 mango, finely chopped
6 tablespoons mayonnaise, divided
2 tablespoons fresh lime juice
1 large avocado, or 2 small
4 large whole wheat or spinach tortillas (10-inch)
2 cups shredded romaine
1 large tomato, diced

Steps:

  • Place the bacon in a large skillet and cook until crisp. Transfer to a paper towel lined plate and set aside.
  • Place the chicken in a large bowl and season with salt and pepper. Add the mango, 3 tablespoons of the mayonnaise and the lime juice.
  • Remove the pit and skin from the avocado and place in another bowl. Roughly mash, season with salt and pepper, then stir in the remaining 3 tablespoons of mayonnaise.
  • Lay a tortilla on a work surface and spread 1/4 of the avocado mixture over the tortilla, leaving a 1-inch border. Layer 1/4 of the lettuce down the center, followed by 1/4 of the tomato, 2 slices of bacon, then 1/4 of the chicken mixture. Fold in the 2 sides of the tortilla, then roll up like a burrito.

1/2 cup mozzarella cheese
1/4 cup cilantro (minced (optional))
4 8 '' tortillas

Steps:

  • Lay tortillas on a clean flat surface. Place about 1/2 cup chicken, 1 tablespoon ranch, 2 tablespoons of cheese, and 1 tablespoon of minced cilantro on each tortilla. Fold tightly to form a burrito shape.
  • Heat a heavy-duty pan or grill to medium heat. Coat with a light layer or oil or cooking spray and cook wraps for 1-2 minutes on each side or until the tortilla is crispy and golden. Remove from heat, slice in half and serve immediately.

1 pound boneless, skinless chicken breasts
4 ounces pepper jack cheese, shredded
1 cup frozen spinach, thawed and drained (you can also use fresh cooked spinach)
2 tablespoons olive oil
2 tablespoons cajun seasoning
1 tablespoon breadcrumbs (I used Italian style)
Sea salt, to taste
Freshly ground black pepper, to taste
Lots of toothpicks

Steps:

  • Preheat oven to 350 degrees fahrenheit. Flatten the chicken to 1/4-inch thickness. Season the chicken with salt and pepper. In a medium bowl, combine the pepper jack cheese, spinach, salt and pepper. Combine the Cajun seasoning and breadcrumbs together in a small bowl. Spoon about 1/4 cup of the spinach mixture onto each chicken breast. Roll each chicken breast tightly and fasten the seams with several toothpicks. This part requires a tiny bit of skill and I typically use about 8 toothpicks in each roll to ensure none of the filling seeps out. Be sure to count how many total toothpicks were used! Brush each chicken breast with the olive oil. Sprinkle the Cajun seasoning mixture evenly over all. Make sure you get underneath, too. Sprinkle any remaining spinach and cheese on top of chicken (optional). Place the chicken seam-side up onto a tin foil-lined baking sheet (for easy cleanup). Bake for 35 to 40 minutes, or until chicken is cooked through. Remove the toothpicks before serving. Count to make sure you have removed every last toothpick. Serve whole or slice into medallions. *If you have little ones eating this or your spice tolerance is fairly low, halve the Cajun seasoning and double the breadcrumbs. Also, try substituting some of your favorite vegetables in place of the spinach. Some of my favorites include broccoli (parboiled before stuffing in the chicken) and crunchy chopped celery.

  • 1. Squeeze fresh lime in a small bowl; reserve juice and set aside.
  • 2. In a medium bowl, combine ranch dressing, 1 tablespoon of the reserved lime juice, cilantro and Cajun seasoning. Stir in chicken and Mexican-style corn to ranch dressing mixture.
  • 3. Peel and seed avocados. Cut each half lengthwise into 4 slices. Toss slices in reserved lime juice in bowl. Set aside.
  • 4. To assemble wraps, spoon about 1/2 cup chicken mixture onto each Flatout wrap. Arrange avocado slices and spinach leaves on top. Roll up the wrap. Serve with salsa, if desired.

2 tbsp light mayonnaise
2 tbsp plain yogurt, 2-4% MF
4 tbsp English cucumber, finely diced
2 tsp honey
¼ tsp cayenne pepper, ground
¼ tsp black pepper, freshly ground
1 tsp olive oil
¾ lb boneless, skinless chicken breast(s)
⅓ cup salsa
1 tsp honey
¼ tsp cayenne pepper, ground
6 cups baby spinach
4 whole grain tortillas, 10 inch (25 cm)

Steps:

  • Mix mayonnaise, yogurt, cucumber, 2 tsp (10 mL) honey, ¼ tsp (1.25 mL) cayenne and black pepper in a small dish. Set sauce aside.
  • Heat olive oil over medium-high heat in a non-stick skillet. Cut chicken breasts into strips 1 inch (2.5 cm) wide and 6-8 strips per breast. Sauté until they are beginning to turn golden - about four minutes per side. Stir in the salsa, 1 tsp (5 mL) honey and ¼ tsp (1.25 mL) cayenne pepper. Reduce heat to low and simmer, stirring occasionally, about 5 minutes or until chicken is cooked through.
  • Spread each wrap with a quarter of the mayonnaise sauce (about 1 ½ tablespoons - 25 mL). Spread 1 ½ cups (375 mL) baby spinach over full surface of each tortilla. Then arrange a ½ cup (125 mL) of chicken salsa mixture across the centre. Tuck in the right and left hand side. Fold in bottom of tortilla and start to roll upward encasing to make a tight roll.
  • To serve, cut in half on the angle.
