6 fresh ears corn on the cob
¼ cup butter
1½ tablespoon Cajun seasoning
2 tablespoon lime juice
1 teaspoon garlic salt

Steps:

  • In a large pot, bring water to a boil.
  • Place ears of corn in the pot and boil for an additional 5-6 minutes.
  • Turn off and let corn sit for 2-3 minutes.
  • Melt butter in a small saucepan over medium heat.
  • Add Cajun seasoning, garlic salt, and lime juice. Stir and cook for approximately 2 minutes.
  • Drain corn and place in a serving dish then pour the Cajun butter over the corn.
  • Roll corn to coat all sides and enjoy.

Steps:

  • Insert trivet into the Instant Pot and place your potatoes on top.
  • Place the frozen corn in after the potatoes.
  • Sprinkle some seafood boil seasoning and pour in 1 cup of water.
  • Make sure the instant pot is set to sealing and set instant pot to high pressure for 6 minutes.
  • After 6 minutes do a quick release and serve with melted butter and extra seafood boil seasoning for dipping.

4 ears of corn (husked)
2 tbsp olive oil
salt and pepper to taste
4 tbsp mayonnaise (i used vegan mayo)
⅓ cup sour cream or Mexican crema
1 ½ tsp cajun spice
1 ½ tsp smoked paprika
1 tsp onion powder
1 tsp garlic powder
1 tbsp cilantro chopped
½ cup feta or cotija (crumbled)
1 tbsp lime juice
1 tsp chipotle or chili powder (optional)

Steps:

  • Oil and spices. In a small bowl, whisk olive oil, half of the cajun spice, half of the paprika spice, garlic and onion powder, salt, pepper to taste.
  • Place each cob on a piece of foil. Brush each corn generously with the mixture. Wrap in foil. It is fine if you have extra oil-spices mixture left, you can brush the corn later, right before brushing with the mayo sauce.
  • Transfer the corn to the oven and bake for 30 minutes at 425 F. If you like the corn to be softer, remove it from the oven after 30 minutes, brush it with more oil-spice mixture and bake another 20-25 minutes.
  • While cajun corn on the cob is baking, prepare the mayo sauce. In a medium bowl, mix mayo, sour cream, leftover cajun and paprika, lime juice (or squeeze it later directly on the corn as needed), salt, and pepper to taste.
  • Take the corn out from the oven, let cool slightly and brush with leftover oil mixture (optional) and finally mayo mix all over the corn. (If you want to get the corn slightly charred without using a grill, a grill pan would be a great option here. Transfer the baked corn directly to a lightly greased grill pan and let all the sides grilled until the desired result, don't overcook it though!).
  • Top with crumbled feta or cotija cheese, chopped cilantro, cajun spice. Serve warm!

1 lb baby yukon gold potatoes {or potatoes of choice}
3 ears yellow corn {each cut into 4 pieces}
1/2 cup butter {melted}
1 1/2 tbsp Old Bay Seasoning
1/2 tbsp creole seasoning
juice 1/2 lemon
1 lb medium shrimp {peeled & deveined}
1 13 oz. pkg andouille sausage {cut on the bias}
1/2 lemon cut into wedges

Steps:

  • Preheat oven to 400°. Spray sheet pan with non stick spray and set aside.
  • Bring a large pot of water to a boil and par boil potatoes until just tender {10-12 minutes}. Remove potatoes with a slotted spoon and put into a medium sized bowl. Add corn to the same boiling water and cook for 5 minutes. Remove from water and add to bowl with potatoes.
  • In a microwave proof bowl, melt butter. Add seasonings and lemon juice, whisk until combined. Pour half of the butter mixture over the potatoes and corn, stir to coat.
  • Place seasoned potatoes and corn onto sheet pan, leaving room at one end for the shrimp. Add andouille sausage to the potatoes and corn. Place shrimp in a single layer on the clear end of the pan. Pour the rest of the butter mixture over the top of the shrimp and sausage.
  • Bake for 12-15 minutes. Remove when the shrimp are opaque in color.
  • Serve with lemon wedges and enjoy.

Steps:

  • Remove the husks and silks from the corn.
  • Pour the water and Louisiana Crawfish Crab & Shrimp Boil concentrate in the bottom of the inner pot in the Instant Pot and mix together. Next place the corn on the trivet.
  • Close the lid. Turn the knob to the sealing position. Press the manual button and set for 2 minutes.
  • When timer goes off do a quick release by turning the knob to venting. After the valve goes down carefully open the lid and remove the corn.
  • Place the corn in a bowl, slather with butter and sprinkle on the cajun seasoning.
  • Enjoy!

1 celery stalk, finely chopped
1/4 small white onion
1/4 green bell pepper, cut into chunks
6 ears unhusked corn, soaked in water for 20 minutes
Lemon wedges, for serving

Steps:

  • Heat a grill to 400 degrees F.
  • In a small food processor add the butter, Cajun seasoning, celery, onion and bell pepper.
  • Pull the corn husks open, then remove the silk and secure the husks open in a bundle with soaked twine or a piece of husk ripped from each ear.
  • Place the corn over the direct heat of the grill and cook, rotating occasionally, until the corn chars, 10 to 15 minutes.
  • Brush or smear with butter and cook over the indirect heat while basting and turning for a few more minutes. Serve warm with a spritz of lemon.
