1 small onion
1 celery rib
1 small green pepper
3 tablespoons butter
3 garlic cloves, minced
2 teaspoons dried thyme
1 teaspoon paprika
1/2 teaspoon each salt, white pepper and pepper
1/2 teaspoon ground mustard
1/2 teaspoon hot pepper sauce
1 boneless pork loin roast (4 pounds)
2 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • Finely chop vegetables. In a large skillet, saute vegetables in butter until tender. Add garlic; cook 1 minute longer. Stir in seasonings and pepper sauce., Cut several slits in roast to within 1/2 in. of bottom. Place in a 5-qt. slow cooker. Spoon onion mixture between slits and over the top of meat. Cover and cook on low for 6-8 hours or until pork is tender., Transfer roast to a serving platter; keep warm. Strain cooking juices and pour into a small saucepan. Combine cornstarch and water until smooth; stir into the pan. Bring to a boil; cook and stir until thickened, about 2 minutes. Serve with roast.

This wonderful roast creates an incredible sauce for drizzling over the meat. If you like it spicier add more cayenne.

2 tablespoons butter
½ teaspoon cayenne pepper
1 teaspoon dried oregano
½ teaspoon ground black pepper
½ teaspoon dried thyme
½ teaspoon ground mustard
2 cloves garlic, minced
1 (4 pound) pork loin roast
salt and pepper to taste
1 tablespoon olive oil
2 carrot, cut into 1/2 inch pieces
1 red bell pepper, cut into 1/2 inch pieces
1 stalk celery, cut into 1/2 inch pieces
1 large onion, cut into 1/2-inch pieces
3 tablespoons all-purpose flour
½ cup chicken broth

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Melt the butter in a small skillet over medium heat. Stir in the cayenne, oregano, pepper, thyme, mustard, and garlic. Cook for 1 minute. Use a paring knife to make several small incisions in the fat side of the meat. Stuff the slits with the spice mix, and rub the remaining mix over the surface of the meat. Sprinkle the roast with salt and pepper.
  • Heat the olive oil in a roasting pan over medium heat. Put the roast in the pan, and surround with the carrots, red pepper, celery, and onion. Lightly salt and pepper the vegetables. Place roasting pan in preheated oven, and cook for 1 hour and 45 minutes. Increase the oven temperature to 425 degrees F, and cook for an additional 15 minutes to brown the meat. Cook until meat is 145 degrees F (63 degrees C). Remove roast from pan, and let stand 10 minutes before slicing.
  • Place the roasting pan, with the pan juices, over medium heat. Whisk the flour into the hot drippings, and cook for 3 minutes. Pour in the chicken stock and cook, whisking occasionally, for 6 minutes. Strain sauce, and serve with the sliced pork roast.

2 lbs single boneless pork loin roast
3 tablespoons paprika
1/2 teaspoon cayenne (red pepper)
1 tablespoon garlic powder
2 teaspoons oregano
2 teaspoons thyme
1/2 teaspoon salt
1/2 teaspoon white pepper
1/2 teaspoon cumin
1/4 teaspoon nutmeg

Steps:

  • Combine all seasonings and rub well over all surfaces of roast. Place roast in shallow pan and roast in 350 oven for about an hour until internal temp is 155 to 160 degrees F.
  • Remove from oven, and let rest 5-10 minutes before slicing.

CAJUN PORK JAMBALAYA

The keys to jambalaya are fresh ingredients and perfectly steamed rice. Some folks cook jambalaya on the stovetop, but I've adopted an easier, foolproof oven method. When the pot is in the oven, cover tightly with a heavy lid and do not peek - steam cooks this dish. When removed from the oven, do not stir the jambalaya. If you do (and I warned you), it will become a mushy, sticky, starchy mess. Follow the recipe and you will become a jambalaya master.

4 strips of smoked bacon, chopped
2 cups diced onion
2 cups diced celery
2 cups diced green bell pepper
2 tablespoons minced garlic
2 cups sliced smoked pork sausage, cut into bite-sized pieces
1 cup sliced andouille sausage, cut into bite-sized pieces
1 cup diced tasso
1 cup diced ham
½ cup beer
1 cup chopped flat-leaf parsley
1 cup diced green onion tops
1 tablespoon cayenne pepper
Dash of hot sauce
Kosher salt and freshly ground black pepper
4 cups uncooked Louisiana long-grain white rice, such as Supreme
4 cups chicken stock

Steps:

  • Preheat the oven to 400ºF.
  • In a large, heavy cast-iron pot with a heavy lid over medium-high heat, fry the bacon until crispy. Remove the bacon, chop into pieces and save for later.
  • Add the onions, celery, and bell pepper to the bacon drippings. Cook until translucent and add the garlic. Cook for another 2 minutes and then remove the vegetables to a platter.
  • In the same pot, add the sausages, tasso, and ham. Continue to sauté until the meats turn brown, about 5 to 10 minutes. Deglaze the pot by pouring in the beer and scraping the bits from the bottom of the pot while stirring.
  • Add the bacon pieces, all of the browned vegetables, parsley, and green onions. Add the cayenne and a couple of shakes of hot sauce along with salt and black pepper to taste.
  • Add the rice to the pot and stir until evenly distributed. Add the stock and stir again.
  • Here is the important point of jambalaya cooking - cover the pot and place in the hot oven for 1 hour. Open a cold beer and forget about it. Do not stir or even raise the lid on the pot for the first hour. In that hour, all the flavors are coming together, and the rice is gently cooking.
  • At the end of 1 hour, take a peek, but do not stir (or it will become sticky and starchy). Make sure most of the stock has been absorbed and take a taste to see if the rice is cooked to at least al dente. If so, turn off the oven, cover the pot and let it continue cooking in the carryover heat of the oven for another 20 minutes.
  • When your guests are seated, remove the pot from the oven and place in the middle of the table. Uncover and dig in. Oh, and be sure to have lots of French bread and ice-cold beer.

2 tablespoons steak sauce (Lea & Perrins)
1 cup chopped onion
2 1/2 tablespoons dry mustard
3/4 cup chopped garlic (approx 1 head garlic)
Cajun-style seasoning salt, or other seasoning salt (optional)
1/2 cup tiger sauce (a brand name of sweetened hot sauce)
6 ounces tomato paste, thinned with 1/4 cup water or chicken broth
1 teaspoon chopped parsley
3 tablespoons brown sugar
1/2 cup Worcestershire sauce

Steps:

  • MARINADE: Combine chopped onion, chopped garlic, chopped parsley with the Tiger Sauce, Worcestershire sauce, steak sauce and dry mustard (and seasoning salt to taste, if using). Mix well.
  • Make slits into roast and rub sauce well into and over the roast (a basting syringe works well to place sauce into slits).
  • Allow to sit in the refrigerator for 6 hours (or overnight).
  • TOMATO SAUCE: Mix tomato paste (thinned with 1/4 cup water or chicken broth), parsley, and the brown sugar very well and set aside.
  • Cook roast in a covered grill until the internal temperature of the roast is 170 degrees.
  • Brush with Tomato Sauce when done and serve.

1 boneless pork shoulder butt roast (3 to 3-1/2 pounds)
1/2 cup finely chopped onion
4 teaspoons prepared mustard
1 tablespoon hot pepper sauce
1 tablespoon Worcestershire sauce
1 tablespoon steak sauce
3 garlic cloves, minced
1 teaspoon seasoned salt

Steps:

  • Place roast in a shallow baking pan; cut 8-10 small slits in roast. Combine remaining ingredients; press into slits and over top of roast. , Bake, uncovered, at 350° for 45 minutes. Cover and bake 1-3/4 hours longer or until a thermometer reads 160°. Let stand for 10 minutes before slicing.

  • Preheat oven to 325 degrees. Remove roast from refrigerator about 30 minutes before cooking. Wipe thoroughly with a damp cloth or damp paper toweling.
  • In a small bowl, mix together the seasonings and rub the seasoning mix on all sides of the roast & in all crevices.
  • Take about 1/4 cup flour and pat it over all the roast, including the skin (quenne). Author note - Instead of using all of the separate seasonings, I often just use Tony Chachere's Creole seasoning.
