1 pound ground pork
1 rib celery, finely chopped
1/2 green bell pepper, finely chopped
1 small white onion (boiling onion), finely chopped
3 cloves garlic, minced
4 sprigs fresh thyme, chopped, about 1 tablespoon or 1 teaspoon dried thyme
1 teaspoon cayenne pepper sauce, several drops
Coarse salt and black pepper
1/2 cup chili sauce
1/4 cup (3 well-rounded tablespoons) mayonnaise or reduced fat mayonnaise
1/4 cup (3 well-rounded tablespoons) prepared sweet red pepper relish
Toppings: Bibb lettuce or hearts of romaine, sliced vine ripe tomato, and 5 crusty rolls
Serving suggestion: Red Bean Salad, Cajun Oven Fries, recipes follow

Steps:

  • Cut sausage into large chunks and place in a food processor. Grind sausage into crumbles. Combine ground sausage with pork, vegetables, garlic, thyme, hot sauce and a little salt and pepper. Form mixture into patties and cook 7 minutes on each side on an indoor electric grill preheated to high. To cook in a skillet, heat a nonstick skillet over medium high heat and cook burgers 6 to 7 minutes on each side. For outdoor grill, cook patties 6-inches from hot coals or over medium high gas heat 6 minutes on each side, covered.
  • Mix chili sauce, mayonnaise, and sweet relish in a small bowl. Serve burgers on crusty rolls with special sauce, lettuce, and tomato. Serve with red bean salad and Cajun oven fries.

2 tbsp Cajun seasoning
⅓ cup fine breadcrumbs
1 egg
salt and pepper
olive oil
2 burger buns
1 tomato, sliced
½ avocado, sliced
cos lettuce leaves
1 tbsp mayo
1 tbsp sweet onion relish or onion jam

Steps:

  • Combine the pork mince, Cajun seasoning, breadcrumbs egg and a pinch of salt and pepper.
  • Shape the ground pork mixture into 2 evenly sized patties.
  • Preheat air fryer to 360°F/ 180°C.
  • Spray air fryer basket with oil.
  • Add patties to air fryer basket. Ensure they are not touching.
  • Air fry patties at 360°F/ 180°C for 10 minutes, until cooked through [Note 1].
  • Heat a drizzle of oil in a medium fry pan or grill.
  • When the oil is hot, cook the burger patties for 4-5 minutes each side, until cooked through [Note 1].
  • Slice the burger buns in half and place under a hot broiler for 2 minutes until just starting to brown.
  • Slice tomato and avocado.
  • Spread onion jam onto burger bun base. Add a patty, top with slices of tomato and avocado, and cos leaves. Spread mayo inside top of burger bun. Enjoy.

1 teaspoon Cajun seasoning
1 tablespoon capers, chopped
1 teaspoon prepared horseradish
3 dashes hot sauce
1 1/2 pounds ground pork
1 tablespoon Cajun seasoning
2 scallions, green part only, thinly sliced
1 teaspoon hot sauce
1/2 teaspoon salt
1/2 teaspoon pepper
Hamburger buns
Lettuce, tomato, onions, for garnish

Steps:

  • For the Remoulade Sauce: Prepare sauce by combining all sauce ingredients in a small bowl. Refrigerate covered for 1 hour while flavors meld.
  • For the burgers: In a large mixing bowl, combine ground pork, Cajun seasoning, scallions, hot sauce, and salt and pepper, to taste. Wet your hands to prevent sticking and shape into 4 patties slightly larger than the size of the buns. Cover with plastic wrap and set aside in refrigerator if not cooking immediately.
  • Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking. Place burgers on hot oiled grill and cook 5 to 6 minutes per side or until desired doneness. Serve hot on toasted buns with lettuce, tomato, onions, and a dollop of the Remoulade Sauce.

For the Seasoning:
2 tablespoons paprika
2 tablespoons garlic powder
1 1/2 tablespoons oregano
1 tablespoon dried onion powder
2 1/2 teaspoons kosher salt
2 teaspoons dried thyme
2 teaspoons freshly ground black pepper
1 1/2 teaspoons cayenne pepper
For the Sauce:
1/2 cup mayonnaise
1 green onion, finely chopped
1 teaspoon Dijon mustard
1 teaspoon hot sauce (e.g., Frank's, Texas Pete, Tabasco )
1 teaspoon dill relish
3/4 teaspoon Cajun seasoning, or to taste
For the Burgers:
1 1/2 pounds ground beef (80/20 or 85/15)
1/3 cup finely minced onion
2 cloves garlic, pressed
1 1/2 teaspoons Cajun seasoning
Sandwich buns, burger toppings, optional

Steps:

  • Gather the ingredients.
  • In a small bowl, combine the paprika, garlic powder, oregano, onion powder, kosher salt, thyme, and the black and cayenne peppers. Stir to combine. Transfer the mixture to a jar with a lid.
  • In another small bowl, combine the mayonnaise with the finely chopped green onion, Dijon mustard, hot sauce, and dill relish. Add 3/4 teaspoon of the Cajun seasoning (or to taste). Cover and refrigerate the remoulade until serving time.
  • In a large bowl, combine the ground beef, minced onion, pressed garlic, and 1 1/2 teaspoons of the Cajun seasoning mixture. Mix to blend thoroughly.
  • With your hands of a burger press, shape the meat mixture into four burgers. Each burger will weigh approximately 6 ounces. With your thumb, make an indentation in the center of each burger. Refrigerate the burgers until it is time to cook. Store the remaining Cajun seasoning in a cool, dark place.
  • Heat the grill to medium-high heat. When the grill is hot, brush the grate with olive oil or canola oil. Place the burgers on the grill, indentation side up and grill for about 5 minutes. Carefully flip the burgers and continue grilling for about 4 to 5 minutes longer, or until the burgers register 160 F, the minimum safe temperature recommended by the USDA.
  • Transfer the burgers to a plate or rack and tent with foil. Let them rest for 5 minutes.
  • Assemble the burgers on buns with your choice of toppings, along with a generous amount of remoulade sauce.

  • SALMON BURGERS: In a medium skillet heat 1 tablespoon of olive oil over medium heat. Add the minced shallots, red bell peppers, and celery and cook for 3-5 minutes. You want to just soften the veggies. Remove the veggies to a small plate or bowl, allow to cool for several minutes.
  • Add the salmon to a food processor and pulse 2-3 times or until the salmon is well chopped and slightly sticky. Remove the salmon to a medium bowl, stir in the cooled shallot mixture, parsley, capers, garlic, lemon juice, mayo, panko, seafood seasoning, cayenne, ½ teaspoon of salt, and ¼ teaspoon of black pepper. Combine until the mixture is evenly mixed. Divide the mixture into 6 patties. Place 2 tablespoons panko on a plate and place the patties on top. Sprinkle with another tablespoon of panko and press the patties gently.
  • Heat a small amount (about 1-2 tablespoons) of oil in a skillet over medium-high heat. Fry the salmon patties 3 at a time (or 1-2 depending on the size of your skillet), flipping once after 3-5 minutes. The patties should be golden and crispy on the outside and cooked to preference on the inside. Feel for firmness if you prefer a fully cooked patty.
