LOUISIANA ROASTED PECAN PIE



Louisiana Roasted Pecan Pie image

I first tried this at Cajun Connection in Utica, IL and immediately decided that I needed to master the recipe. Roasting some of the pecans first gives the pie a very nice rich and toasty taste; I added a bit of bourbon whisky just for kicks, but it's totally optional. Pie crust can be your own famous recipe or a purchased one; I hate making pie crust and usually just buy one.

1 unbaked pie shell (8-1/2 inch to 9 inch)
1/2 cup pecan pieces
3 eggs
3/4 cup sugar
1/4 cup brown sugar
1 cup corn syrup
2 tablespoons butter, melted and cooled
1 1/2 teaspoons vanilla extract
1 1/2 tablespoons Bourbon (optional)
1/8 teaspoon salt
1 cup pecan halves

Steps:

  • Dry roast the 1/2 cup of pecan pieces in a 300 degree F oven until dark; keep an eye on them so they don't burn, though. I start checking after 5 minutes and check frequently after that. When they're dark, transfer pecan pieces to a cutting board or plate and crush a little until they're in very small pieces. Set aside.
  • Preheat oven to 350 degrees F.
  • Beat eggs in a large bowl until frothy. Add sugar, brown sugar, corn syrup, butter, vanilla extract, bourbon (if using), salt and reserved roasted pecan pieces. Combine thoroughly then stir in the 1 cup of unroasted pecan halves.
  • Pour mixture into an unbaked prepared pie shell, place pan on a baking sheet and bake at 350 degrees F for about 40 minutes.
  • Reduce oven heat to 325 degrees F and bake until filling is browned on top and crust is lightly browned; start checking after about 30 minutes in the oven.
  • Remove from oven and allow to cool thoroughly before serving.

4 eggs
1/2 teaspoon salt
1/4 cup butter, melted
1 1/4 cups corn syrup, light
1 1/4 cups brown sugar
1 teaspoon vanilla extract
1 cup pecans
1 deep dish pie shell

Steps:

  • Set oven to 350 degrees.
  • Put pecans inside of the pie shell, put on sheet pan and set aside.
  • Beat eggs well.
  • Mix the salt, butter, corn syrup, brown sugar, and vanilla extract well. Add this to the egg mixture.
  • Pour this entire mixture over top of the pecans in the pie shell.
  • Bake for about 45 minutes at 350 degrees.

1/2 cup sugar
1 tablespoon cornstarch
1 cup Karo syrup
1/4 cup louisiana cane syrup
1 tablespoon vanilla
3 eggs, beaten
1 cup chopped pecans
1/2 cup fig preserves (figs chopped if whole)
1 pinch cinnamon
1 pinch nutmeg
9 inches pie shells, uncooked

Steps:

  • Preheat oven to 425 degrees.
  • In large bowl combine sugar and corn starch. Add syrups, vanilla, eggs. Use wire whisk and blend thoroughly.
  • Add nuts and preserves stirring into mixture. Season with cinnamon and nutmeg.
  • Pour into pie shell and bake on center rack for 10 minutes. Reduce temperature to 375 degrees and bake for 35 minutes. Remove and allow to cool.

This is a hand-me-down recipe that I think started with Paul Prudhomme back when he was chef at the Commander's Palace in New Orleans. A fairly rich pie. You should make the servings fairly small.

3 medium sweet potatoes, boiled, peeled and mashed
1/4 cup firmly packed dark brown sugar
2 tablespoons granulated sugar
1 tablespoon butter
1 tablespoon pure vanilla extract
1 large egg
1 tablespoon heavy cream
1/4 teaspoon ground cinnamon
1 pinch nutmeg
1 pinch ground allspice
1 9" unbaked pie shell
1/2 cup chopped pecans
3/4 cup granulated sugar
2 large eggs
3/4 cup dark corn syrup
1 tablespoon butter, melted
1/2 teaspoon salt
ground cinnamon
2 teaspoons pure vanilla extract
whipped cream

Steps:

  • Preheat the oven to 300°F.
  • Combine the mashed sweet potatoes, both sugars, butter, vanilla, egg, cinnamon, nutmeg, and allspice in a large mixing bowl.
  • Beat with an electric mixer until well blended and smooth.
  • Scrape the mixture into the pie shell and sprinkle the pecans evenly over the top.
  • In another large mixing bowl, prepare the topping.
  • Combine the granulated sugar, eggs, corn syrup, melted butter, salt, cinnamon and vanilla.
  • Stir until well blended and smooth.
  • Scrape the mixture over the pecans.
  • Bake until the pie is nicely browned, about 1 1/2 hours.
  • Let cool completely on a wire rack and serve topped with whipped cream.
