2 pkg sausage (i use eckrich skinless)
6 potatoes (i use 1/2 bag yukon gold)
1/2 onion, chopped
seasoning to taste

Steps:

  • 1. Slice the sausage into 1/2-1 inch pieces and chop your onion. I use frozen, chopped onion. Peel potatoes and cut them into uniform cubes, about 1-2 inches square.
  • 2. Heat 3 tbsp oil in a large skillet or Dutch oven, and add the sausage and onion. Cook over medium to medium-high heat until onions are translucent and sausage begins to brown. Add a tablespoon or two of water if sausage starts to stick.
  • 3. Add potatoes to the pot along with the sausage and onions. Fill the pot with about 2 inches of water and add seasoning of your preference. Since I am from south Louisiana, I like spicy food. I use onion powder, garlic powder, and Tony Chachere's (Cajun seasoning). I sometimes add chicken bouillon powder to the water, as well.
  • 4. Cover and cook over medium heat, stirring occasionally, until potatoes absorb the water, about 60-90 minutes. If the water cooks out before the potatoes are very soft, add more. You don't want the potatoes to get crusty.
  • 5. Your dish is done when the water is all absorbed by the potatoes, and the potatoes are extremely soft.

4 center-cut pork chops, about 1-inch thick
2 teaspoons Cajun seasoning
⅓ cup all-purpose flour
¼ cup vegetable oil
2 onions, thinly sliced
2 cups milk

Steps:

  • Season pork chops with Cajun seasoning and coat completely with flour, reserving any leftover flour.
  • Heat oil in heavy skillet over medium-high heat. Add pork chops and brown, about 2 1/2 minutes per side. Remove to a plate. Add sliced onions to the pan drippings and cook for 1 minute.
  • Dust onions with leftover flour and continue to cook until brown, another 4 to 5 minutes. Add milk and bring to a boil, stirring until incorporated. Return pork chops to the skillet; cover, reduce heat, and simmer until gravy is thick and pork chops are tender, 20 to 25 minutes.

12 Oz Medium Cooked Shrimp (Peeled & Deveined)
14 Oz Smoked Sausage Rope (Sliced)
4 Cups Par-Boiled Small Potatoes (Halved)
4 Mini Corn on the Cobs (Quartered)
1/4 Cup White Onion (Diced)
1/8 Cup Old Bay Seasoning or to Taste
Olive Oil Spray

Steps:

  • Begin by being sure the potatoes have been par-boiled. We use small potatoes, cut in half for this recipe.
  • Once the potatoes are done, combine the remaining ingredients into a large bowl, mixing well.
  • Place a sheet of foil into your air fryer, being sure that air is still able to circulate.
  • Add in about 1/2 of the mixture on top of the foil to fill the air fryer basket. Note - We used a 4-quart air fryer basket, so we made this amount in 2 batches.
  • Once the ingredients are added, spray with a nice coat of olive oil spray.
  • Cook at 390 degrees for 6 minutes.
  • Open up the air fryer, carefully mix the ingredients.
  • Cook for an additional 6 minutes.
  • Repeat these steps for the next batch if needed.
  • Serve.

  • Sprinkle the potatoes and onions with the seasonings. Place in a cast iron, magnelite or Teflon coated skillet with the cooking oil over medium heat.
  • Cover and cook for 10 minutes, stirring every 5 minutes. If you hear the vegetables sizzling, you will need to stir and maybe reduce the heat some.
  • When the potatoes are brown, scrape the bottom of the pot, and add water, stirring to mix. Continue cooking uncovered, add water as needed and stirring as needed to prevent sticking until potatoes are soft throughout.
  • Serve and sprinkle with paprika or more black pepper. Chopped green onions may be added. If adding smoked sausage, add towards the end and heat thoroughly; although there are cooks who like to add it right at the beginning with the potatoes. Serve over rice or as a side dish.
