PAUL PRUDHOMME'S CAJUN MEAT LOAF

I've never been a fan of meat loaf. After all, its a loaf of meat with ketchup on it...or so I thought. My friend made this for me last night and it was so good! The recipe is from Paul Prudhomme (of K-Paul's, New Orleans). Warning: this is very spicy and if you're not used to eating "cajun" type foods, you might want to back off on the cayenne & hot sauce just a bit.

2 whole bay leaves
1 tablespoon salt
1 teaspoon cayenne (ground red pepper)
1 teaspoon black pepper
1/2 teaspoon white pepper
1/2 teaspoon ground cumin
1/2 teaspoon ground nutmeg
4 tablespoons unsalted butter
3/4 cup finely chopped onion
1/2 cup finely chopped celery
1/2 cup finely chopped green bell pepper
1/4 cup finely chopped green onion
2 teaspoons minced garlic
1 tablespoon Tabasco sauce
1 tablespoon Worcestershire sauce
1/2 cup evaporated milk
1/2 cup catsup
1 1/2 lbs ground beef
1/2 lb ground pork
2 eggs, lightly beaten
1 cup very fine dry breadcrumb

Steps:

  • Combine the seasoning mix ingredients in a small bowl and set aside.
  • Melt the butter in a 1-quart saucepan over medium heat. Add the onions, celery, bell peppers, green onions, garlic, Tabasco, Worcestershire and seasoning mix.
  • Saute until mixture starts sticking excessively; about 6 minutes, stirring occasionally and scraping the pan bottom well.
  • Stir in the milk and catsup.
  • Continue cooking for about 2 minutes, stirring occasionally.
  • Remove from heat and allow mixture to cool to room temperature. REMOVE BAY LEAVES.
  • Place ground beef and pork in an ungreased 9 x 13 inch baking pan.
  • Add the eggs, cooked vegetable mixture (cooled) and the bread crumbs. Mix by hand until thoroughly combined.
  • In the center of the pan, shape the mixture into a loaf that is about 1 1/2 inches high, 6 inches wide and 12 inches long.
  • Bake uncovered at 350° for 25 minutes, then raise heat to 400° and continue to cook until done, about 35 minutes longer.
  • Serve Immediately as is or with "Very Hot Cajun Sauce for Beef".

2 tablespoons butter
2 small ribs celery
finely chopped
1 onion
finely chopped
1 green bell pepper
finely chopped
4 cloves garlic
finely chopped
Salt and pepper
1/2 cup beer (lager not dark)
2 tablespoons fresh thyme
finely chopped
1 1/2 cups breadcrumbs or ground Ritz crackers
1/4 cup Franks RedHot sauce or 3 tablespoons Tabasco
1 large egg
lightly beaten
2 pounds ground pork
1 tablespoon ground paprika
a palmful
1 teaspoon ground fennel
1/3 palmful
1 1/2 teaspoons ground coriander
1/2 palmful
2 14.5-ounce cans diced tomatoes with green chilies

Steps:

  • Preheat oven to 350F
  • Heat skillet over medium heat, melt butter and add celery, onions, peppers and garlic
  • Cook to tender, 10 minutes, season with salt, pepper and thyme
  • Deglaze with beer and reduce 1 minute, then remove from heat and cool
  • Meanwhile, in a large mixing bowl moisten bread or cracker crumbs with hot sauce and vegetables
  • Add egg and meat to bowl, season with salt and pepper, paprika, fennel, coriander and mix to combine
  • Form a loaf about 4 inches high on baking sheet lined with parchment
  • Bake 1 hour or until cooked through and golden on top
  • Pure tomatoes and chilies in food processor or blender, and then place in small pot and heat
  • Season with salt and pepper to taste
  • Serve meatloaf with mashed potatoes or mashed sweet potatoes alongside
  • Spoon tomato sauce over meatloaf and garnish with scallions

3 whole Bell Peppers (2 If They're Large)
2 whole Medium Onions
1 bunch Celery (5-6 Ribs)
8 cloves (to 10 Cloves) Of Garlic
6 tbsp. Butter
1 tsp. Salt
1 tbsp. Worcestershire
1 tsp. Black Pepper
1 tsp. Ground Nutmeg
1 tsp. Cayenne Pepper
A Few Shakes Of Hot Sauce (optional)
2 c. Ketchup, Divided
1/2 c. Whole Milk
1 c. (to 2 Cups) Breadcrumbs
2 lb. Lean Ground Beef (92% Lean)
1 lb. Ground Pork
3 whole Eggs
2 tbsp. Honey

Steps:

  • Preheat oven to 400 degrees.Chop all of the fresh vegetables (peppers, onions, celery) into a small dice and mince the garlic. Over medium-high heat, melt 6 tablespoons butter. Once butter begins to start browning, add the diced vegetables and garlic. Add about 1 teaspoon salt. After these have cooked for a few minutes add 1 tablespoon Worcestershire sauce, 1 teaspoon black pepper, 1 teaspoon nutmeg and 1 teaspoon cayenne pepper. If you like it hot, add a couple shakes of your favorite hot sauce. Next add about ½ cup of ketchup. Continue cooking and stirring for a few more minutes. Remove from heat.After allowing the mixture to cool for a couple of minutes, add about ½ cup of milk. Stir until combined. Next add at least 1 cup of breadcrumbs. Continue adding breadcrumbs and stirring until mixture is a nice, thick paste. In a large mixing bowl place the ground beef and pork. Whisk 3 eggs and add to the meat. After allowing the pasty vegetable mixture to cool down a bit, begin incorporating it into the meat. Keep working all of the Cajun-Vegetable mix into the meat until all is blended well.Spray a sheet pan with some non-stick cooking spray. Next, using your hands, form your meat mixture into a loaf on the sheet pan. Make the loaf around 6-8 inches wide and about 1 ½ inches thick. In a small bowl or measuring cup, mix together ¾ cup of ketchup with about 2 tablespoons honey. Slather this sauce over the whole meatloaf.Place in a 400 degree oven for about 40 minutes.

2 teaspoons plus 1/4 teaspoon freshly ground black pepper
4 slices bacon, cut in half
2 tablespoons white or red wine vinegar
1/2 cup canned tomatoes, chopped or crushed
2 tablespoons butter
1 large onion, chopped
1 rib celery, finely chopped
1/2 red bell pepper, finely chopped
2 teaspoons minced garlic, plus 1 teaspoon
1 teaspoon chopped thyme leaves
1 teaspoon chopped rosemary
1/3 cup chopped fresh parsley
2 eggs
1 1/2 teaspoons Dijon mustard
1/2 cup ketchup, plus 1/4 cup
2 tablespoons plus 1 teaspoon Worcestershire sauce
1/2 cup Heavy cream
2/3 cup Breadcrumbs
1 pound ground chuck
1/2 pound pork sausage (such as breakfast sausage)
1/2 pound ground veal
1 1/2 teaspoons salt

Steps:

  • In a large skillet heat the butter over medium-high heat until melted. Add all but 1/4 cup of the onions, the celery and all but 2 tablespoons of the bell pepper and cook, stirring occasionally, until vegetables are softened and beginning to caramelize around the edges, about 6 minutes. Add 2 teaspoons of the garlic, the thyme, rosemary, and parsley and cook for 2 minutes. Remove from the heat and allow to cool.
  • Preheat the oven to 350 degrees F.
  • When the vegetable mixture is cooled, transfer to a mixing bowl and add the eggs, mustard, 1/4 cup of the ketchup, 1 teaspoon of the Worcestershire sauce, and heavy cream and mix until thoroughly combined. Add the breadcrumbs, ground chuck, pork sausage, ground veal, 1 teaspoon of the salt and 1/4 teaspoon of the pepper and mix until just combined. Do not overmix. Transfer meat mixture to a 9 by 5 by 3-inch loaf pan and using your hands, form mixture into a loaf shape. Arrange the slices of bacon on the top of the meatloaf and set aside.
  • In a small saucepan combine the remaining 1/4 cup of chopped onion, remaining 2 tablespoons of green pepper, remaining teaspoon of garlic, remaining 1/2 cup of ketchup, remaining 2 tablespoons of Worcestershire sauce, remaining 1/2 teaspoon of salt, remaining 2 teaspoons of pepper, vinegar, and canned tomatoes and bring to a boil over medium-high heat. Cook until thickened, about 5 minutes.
  • Pour the sauce over the uncooked meatloaf and bake for 45 minutes to 1 hour, or until the bacon and sauce are slightly caramelized on the top of the meatloaf. Remove from the oven and cover loosely with aluminum foil. Let stand for 10 minutes before serving. Slice and serve along with the Macaroni with 4 Cheeses.

3/4 cup Oatmeal
2/3 cup Ketchup

1 1/2 teaspoons Cajun Seasoning
1 teaspoon Dijon Mustard
1-2 teaspoons Hot Sauce (To Taste)

1 tablespoon Orange Juice
1 teaspoon Cajun Seasoning

Steps:

  • Preheat oven to 375 degrees.
  • Sauté onion and bell pepper in olive oil, until softened, and starting to caramelize.
  • In a large bowl combine sautéed onion mixture, ground beef, oatmeal, ketchup, eggs, worcestershire sauce, brown sugar, Cajun seasoning, mustard, hot sauce, and salt.
  • Mix until well combined.
  • Place into pan, and shape into a loaf.
  • If you have a broiler pan available you can line the lower pan with foil or parchment paper for easy clean up and cook meatloaf on upper pan so the grease can drip off.
  • Mix all ingredients together, until well combined.
  • Spread 3/4 of barbecue sauce over meatloaf. Cover with bacon strips.
  • Bake uncovered for 30 minutes. Brush with remaining barbecue sauce, and bake an additional 30-45 minutes until cooked through. Internal temperature should be 160 degrees.
  • Allow Meatloaf to rest 5-10 minutes before slicing.

1/2 cup salt
1/4 cup each pepper, white pepper, cayenne pepper, ground cumin and nutmeg
40 green onions, thinly sliced
15 medium onions, chopped
10 medium green peppers, chopped
40 garlic cloves, minced
4 cups butter
1 cup Worcestershire sauce
2/3 cup hot pepper sauce
6 cans (12 ounces each) evaporated milk
1 bottle (64 ounces) ketchup
8 packages (8 ounces each) dry bread crumbs (20 cups)
36 eggs, beaten
30 pounds lean ground beef (90% lean)
10 pounds ground pork

Steps:

  • Combine the seasonings; set aside. In Dutch ovens, saute onions, green peppers and garlic in butter until tender. Add Worcestershire sauce, hot pepper sauce and reserved seasonings. Cook and stir for 8-10 minutes. Discard bay leaves. Remove from the heat; stir in milk and ketchup. Cool. , Add bread crumbs and eggs; mix well. In several large bowls, combine beef, pork and vegetable mixture; mix well.   • Melt the butter or margarine in a saucepan over medium heat. Add the onion, bell pepper, green onions, garlic, hot pepper sauce, Worcestershire sauce, and reserved seasoning mix. Saute until mixture starts sticking to the bottom of the pan, about 6 minutes. Stir in the milk and ketchup; continue cooking for 2 more minutes, stirring occasionally.
  • Remove vegetable mixture from heat, and allow to cool to room temperature. Place the beef and sausage in an ungreased 9x13 inch baking dish. Add the eggs, the vegetable mixture, and the bread crumbs. Remove the bay leaves. Mix well by hand, and form into a loaf about 1 1/2 inches high.
  • Bake uncovered at 350 degrees F (175 degrees C) for 25 minutes. Then raise heat to 400 degrees F (200 degrees C) and bake for another 35 minutes. Let stand for 5 minutes before serving.

CAJUN MEATLOAF WITH CREOLE SAUCE

I woke up thinking creole and cajun. I then thought why not combine it in a meatloaf. This was a huge success! The meatloaf was so flavorful and the creole sauce took it over the top. I served it with fried cabbage and mashed potatoes. I put the creole sauce on the meatloaf and the mashed potatoes.

1/2 c diced celery
1/2 c diced green pepper
1/2 c onion
1 lb lean ground beef
1/2 lb ground pork
1 Tbsp cajun seasoning
2 dash(es) worcestershire sauce
1 egg, blended
3/4 c plain bread crumbs
1 small can of tomato sauce
CREOLE SAUCE
1 c diced celery
1 c diced onion
1 c diced green pepper
2 dash(es) tabassco sauce
2 Tbsp dried basil
2 tsp bacon grease
1 1/2 tsp plain flour
1 can(s) petite diced tomatoes
1 small can of tomato sauce
3 clove garlic minced

Steps:

  • 1. Mix up all meatloaf ingredients. Shape into a loaf. Place in a baking dish and cover with foil. Bake at 350 degrees for 45 mins, remove foil and bake about 10 to 15 mins to brown. Remove and let it rest for about 10 mins.
  • 2. While the meatloaf is in the oven, start cooking the creole sauce.
  • 3. In a skillet saute the trinity (peppers, onions and celery) in the bacon grease until tender.
  • 4. Add the flour and stir it in until blended.
  • 5. Next, add the tomatoes and tomato sauce.
  • 6. Add all of the remaining ingredients and simmer for 30 mins.
  • 7. It's taste time! Taste the creole sauce and and add more tabassco to your liking or let folks add the heat on their own.
  • 8. Next time, I make this I am going to try all beef and see which I like best. I hope that you enjoy this flavorful dish.

  • In a large mixing bowl, combine the beef, sausage, garlic, nutritional yeast, cajun seasoning, cream cheese, eggs, worcestershire and breadcrumbs. Work together with a wooden spoon for a few minutes. Then mix together with your hands (make sure they’re clean!).
  • Place the meatloaf mixture on a parchment paper covered cookie sheet. Mold into a ‘loaf’ shape. Create on the top a slight indentation with a ‘lip’ around it.
  • Bake in a preheated 375 oven for 30 to 35 minutes. Remove. Loosely cover with foil and let the meat rest about 5 minutes. Sprinkle the parsley on top and serve.
