Cajun Jambalaya With Catfish, Scallops and Shrimp image

A smokey, spicy, seafood Jambalaya. I made with brown rice because that is what we enjoy, please do use your favorite rice but adjust liquid and cooking times accordingly. Do check out Recipe #477279, it is what gives the smokiness.

14 medium shrimp, peeled and deveined
8 sea scallops, quartered
1 lb catfish fillets, cut into 1 1/2 inch pieces or 1 lb cod, cut into 1 inch pieces
2 tablespoons creole seasoning (Smokey Creole Seasoning)
2 tablespoons olive oil
1/2 cup diced onion
1/2 cup diced red bell pepper
1/4 cup diced poblano chile
1/2 cup diced celery
2 tablespoons minced garlic
1 cup fresh tomato sauce
3 bay leaves
1 teaspoon Worcestershire sauce
1 teaspoon chipotle hot sauce
1 cup rice (Take note cooking time will be longer for brown rice) or 1 cup brown rice (Take note cooking time will be longer for brown rice)
3 -4 cups chicken stock
12 ounces andouille sausages, sliced

Steps:

  • In a bowl combine shrimp, scallops, catfish and Creole seasoning, and work in seasoning well.
  • In a large, heavy, pot heat oil over high heat.
  • Saute the onion, peppers and celery, 5 minutes. Add garlic, tomato sauce, bay leaves, Worcestershire and chipotle sauces.
  • Stir in rice and add broth.
  • Reduce heat to medium and cook until rice absorbs liquid and becomes tender, stirring occasionally, about 15 minutes for white 30 minutes for brown rice.
  • Brown rice:.
  • Check after 20 minutes and add more broth if using brown rice if needed,.
  • When rice is just tender add shrimp, scallops, catfish mixture and sausage. Cook until seafood is done, about 10 minutes more.
  • Season to taste with salt, pepper and Creole seasoning BUT more then likely you won`t need to.

1 lb raw shrimp
1 (6 ounce) jar oysters (I use just crab meat) or 1 lb crabmeat (I use just crab meat)
1 1/2 cups raw rice (rice cooker cups)
1/2-1 cup melted butter or 1/2-1 cup melted margarine
1 medium onion, chopped
1 medium bell pepper, chopped
1/2 cup onion tops, chopped
1 teaspoon chopped garlic
1 (10 1/2 ounce) can beef broth
1 (4 ounce) can mushrooms, drained
seasoning (of your choice, I use TexJoy Steak Seasoning)

Steps:

  • Mix everything in rice cooker (uncooked).
  • Season to taste (remember, the broth is salty).
  • Turn rice cooker on.
  • Takes approximately 30 minutes.

1/3 cup butter
1/2 cup scallion, trimmed and chopped
1/3 cup red pepper, diced
1/2 cup celery, diced
1 tablespoon garlic
8 ounces shrimp
24 oysters
2 cups fresh tomatoes or 2 cups canned tomatoes, diced
1 cup water
1 bay leaf
1/4 teaspoon cayenne pepper
1 cup brown rice

Steps:

  • Melt butter in deep skillet or saucepan.
  • Saute scallions, pepper, celery and garlic and cook over medium-high heat until tender.
  • Stir in shrimp and oysters.
  • Cook 5 minutes, then add remaining ingredients, except rice.
  • Reduce heat and simmer 10-15 minutes.
  • Stir in rice, cover and cook 45-60 minutes or until rice is tender.

I learned this recipe from a restaurant in a town named Opelousas, lots of paprika are called for here, I recommend starting small, then adding more. There are no tomatoes in this recipe, so it is faster than normal jambalaya.

1 diced green bell pepper
1 diced onion
1/4 cup paprika (add gradually)
3 -6 minced garlic cloves
1/2 lb shrimp
1 lb crawfish
3 tablespoons olive oil
1/2 lb butter
1/2 lb andouille sausages or 1/2 lb smoked sausage
3 cups cooked rice
salt, to taste
pepper, to taste
cayenne

Steps:

  • Heat butter and olive oil, add onions and peppers and cook for 8-10 minutes.
  • Add sausage or andouille and cook for 2-3 minutes.
  • Add paprika and garlic.
  • Add shrimp, cook for 6-7 minutes.
  • Add crawfish, cook for 2-3 minutes, if not dark enough add more paprika.
  • Add rice & season to taste.

1 yellow onion, chopped
2 slices bacon, chopped
1 small red capsicum, seeded and cut into 2 cm pieces
2 cloves garlic, chopped
1 pinch dried thyme
1 1/2 tablespoons cajun seasoning
1 teaspoon cayenne pepper
1 1/2 cups long grain rice
2 tablespoons tomato paste
1 (425 g) can chopped tomatoes
1 1/2 cups chicken stock
1 cup dry white wine
500 g medium green shrimp, peeled and deveined tails intact
500 g mussels, scrubbed and beards removed
250 g fish fillets, cubed
1/2 cup coriander leaves
sea salt
pepper

Steps:

  • Heat the olive oil in a large flame proof pan with a lid.
  • Saute onion, bacon, capsicum and garlic for 5 minutes or until soft.
  • Stir in thyme, cayenne pepper, spice mix.
  • Cook for 2 minutes then add the rice.
  • Add the tomato paste, tomatoes, chicken stock and wine and bring to the boil.
  • Reduce heat, cover and simmer for 10-15 minutes or until rice is just tender and liquid has been absorbed.
  • Add the shrimps, mussels, fish and cook covered for further 3 minutes until seafood is cooked through and mussels have opened.
  • (Discard any that have not opened).
  • Stir in the coriander, season to taste and serve immediately.

2 tablespoons olive oil
1/4 teaspoon black pepper, ground
1 (28 ounce) can whole tomatoes
1 medium onion, chopped
1 medium celery rib, chopped
1 medium red pepper, seeded and chopped
1 cup long-grain rice
2 garlic cloves, minced
1 1/2 cups tomato juice
1 cup bottled clam juice
1 cup water
1 tablespoon Worcestershire sauce
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
8 ounces andouille sausages or 8 ounces smoked sausage
8 ounces medium shrimp
8 ounces scallops (halved if large)

Steps:

  • In a large skillet, heat the oil over medium heat. Add the onion, celery, and bell pepper and cook, stirring often, until the onion is softened, about 5 minutes. Add the rice and garlic and cook, stirring constantly, for 1 minute. Transfer the mixture to a 3 1/2 quart slow cooker.
  • Add the tomato juice, clam juice, water, Worcestershire sauce, thyme, oregano, salt, black and cayenne peppers, and break up the tomatoes with the side of a spoon. Cover and slow cook until the rice is barely tender, 5 to 6 hours on low.
  • Meanwhile, in a medium skillet over medium heat, cook the sausage, turning often, until browned, about 5 minutes.
  • During the last 15 minutes of cooking, stir the sausage, shrimp and scallops into the jambalaya. Increase the heat to high (300°) cover, and cook just until the shellfish are firm. Serve immediately.

3 tablespoons safflower oil
1 1/4 pounds boneless skinless chicken thighs, cut into 1 1/2-inch pieces
Kosher salt and freshly ground pepper
3/4 pound Andouille sausage, thinly sliced on bias
1 medium onion, cut into small pieces (2 cups)
2 ribs celery, cut into small pieces (1 cup)
1 small green bell pepper, cut into small pieces (1 cup)
4 cloves garlic, thinly sliced (2 tablespoons)
2 cups long-grain white rice
1 bay leaf
1 teaspoon paprika
1/2 teaspoon cayenne pepper
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme
4 cups low-sodium chicken broth

Steps:

  • Heat 2 tablespoons oil in a large enameled cast-iron skillet over medium-high. Season chicken with salt and pepper. Add chicken to skillet. Cook, turning occasionally to brown chicken all over, about 8 minutes. Remove chicken to a plate, leaving oil in skillet.
  • Add sausage, cook turning once to brown, about 1 minute per side. Remove to plate with chicken, leaving oil in skillet. Reduce heat to medium. Add remaining tablespoon oil, onion, celery, bell pepper, garlic, and 1 teaspoon salt. Cook, scraping brown bits from bottom of pan and stirring occasionally, until very soft and golden, about 8 minutes.
  • Add rice and cook, stirring constantly, 1 minute. Add bay leaf, paprika, cayenne, oregano, and thyme and continue to cook, stirring constantly, 1 minute. Return meat and any accumulated juices to skillet. Stir in broth, increase heat, and bring to a boil. Reduce to a simmer, cover, and cook until rice is tender, 20 minutes. Serve.

Mulate's restaurant in New, Orleans takes a novel approach with jambalaya, utilizing catfish as the main ingredient. The recipe is quite easy. Try this out for your next Mardi Gras party, and you will surely get praise for being unique and creative. This recipe came from Sam's Club, October, 2008, courtesy of Mulate's Restaurant. You can also use the blackened salmon filets from Sam's Club in place of the catfish. Edited 6-5-09: The original recipe does call for 1/2 pound (2 sticks) of butter, but that is WAY too much IMO. I have cut the amount in half to 1/2 cup (1 stick).
