GRILLED CAJUN CORN
Sweet and juicy corn kernels pair well with spicy Cajun seasonings. Grilling adds a slight smoky flavor.

Steps:
- Heat coals or gas grill for direct heat. Mix butter, Cajun seasoning and pepper sauce. Reserve 1 tablespoon butter mixture.
- Carefully pull back husks of each ear of corn; remove silk. Generously brush butter mixture over corn. Pull husks back over ears; tie husks securely with thin piece of husk or string.
- Cover and grill corn 4 to 6 inches from medium heat 20 to 26 minutes, turning frequently, until tender. Remove husks. Brush corn with reserved 1 tablespoon butter.

CAJUN GRILLED CORN

Steps:
- Peel back husks form the corn, remove strings and leave just a few layers of husk on the corn.
- Spread butter or margarine over each ear of corn. Sprinkle Cajun seasoning lightly over each ear, or to taste. Fold corn husks back over the corn. Wrap in foil.
- Place on grill for 25 minutes, turning occasionally. Unwrap foil, peel back husks and enjoy.

FRESH GRILLED CORN ON THE COB
Steps:
- Gather the ingredients.
- Leaving the husks on, only remove the silk.
- Soak in water for at least 15 to 20 minutes.
- Mix the fresh herbs to the softened butter and reserve.
- Remove from water and pull down husks carefully without removing.
- Coat the corn with the herbal butter .
- Put the husks back up covering the corn and tie with a thin piece of husk at the top.
- Place on a heated grill for about 15 minutes, turning often. Once corn kernels are tender, remove from heat and serve.

- Cut off tops from the bell peppers and take out the seeds. Mince both red and orange bell peppers and add them to the mixing bowl. Mince red onion and parsley and add it to the bowl too. Add spices.
- To grill corn:
- Prepare your charcoal until it's ashed over. Move it to one half of the grill so that you have a cooler grill side and a hotter grill side. Make sure the grate is clean.
- Snip the silk whiskers sticking out of the top of the corn husk but leave the rest of the corn in a husk. Lay it on the grill, with the bottom of the husk towards the cooler side of the grill. Close the grill and cook for 13-15 minutes, turning it every 3-4 minutes.
- Take corn off the grill and carefully, using tongues, take off the husk and the silk. Brush corn with melted butter and place back on the grill. Close the grill and cook, turning it every 3-4 minutes, until lightly charred on all sides.
- Take corn off the grill and cut the corn kernel off the cobs. Add corn kernel to the mixing bowl with prepared veggies.
- Mix well.
- Add grapeseed oil and mix everything until evenly incorporated.
- (**I recommend using grapeseed oil because of its smooth, mild flavor. It's beautiful in salads.)

- Place cut potatoes in a large bowl and drizzle with oil, cajun season, creole seasoning and pepper. Gently toss with your hands or two spatulas to evenly coat. Spread on a baking sheet in one layer. Roast for 25-30 minutes, then flip and roast for 25-30 minutes more. This may take longer depending on how thick you cut your potatoes. You want the potatoes to be deeply golden and crispy on the outside!
