1 teaspoon paprika
1/8 teaspoon cayenne (or to taste)
1/8 teaspoon black pepper
1/4 teaspoon sugar
1/4 teaspoon cumin
1/2 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon Tabasco sauce
1 tablespoon vegetable oil

Steps:

  • Preheat oven to 400 degrees F.
  • In a small bowl, combine oregano, thyme, paprika, cayenne, black pepper, sugar, cumin, salt, garlic powder, onion powder, Tabasco sauce, and oil; mix well into a paste.
  • Line a large baking sheet with aluminum foil; pour a small amount of oil onto foil and spread with a paper towel.
  • Peel potatoes and slice into french fry shapes.
  • Place fries in a plastic bag with paste and work paste onto fries; alternatively you can do this in a bowl, but the bag method is easier.
  • Place fries on lined baking sheet, trying not to let edges touch.
  • Bake in preheated oven for approximately 30-35 minutes (your time may vary with the size fry you cut); turn once during cooking to brown underside.

3 to 4 tablespoons extra-virgin olive oil
2 tablespoons cayenne pepper sauce
1 teaspoon (1/3 handful) ground thyme or poultry seasoning
1 teaspoon (1/3 handful) sweet paprika
1 teaspoon (1/3 handful) ground cumin
Coarse salt and black pepper

Steps:

  • Preheat oven to 450 degrees F.
  • Cut potatoes into wedges. In a large bowl, combine oil, hot sauce, thyme, paprika, and cumin. Toss potatoes in dressing and spread out in a single layer on a nonstick cookie sheet. Season wedges with salt and pepper and roast for 20 minutes, turning once.

This baked Cajun fries recipe makes the best crispy fries straight out of the oven. They have just the right amount of spice and make the best side dish.

4 large potatoes
3 tablespoons olive oil
3-4 tablespoons Cajun seasoning blend
Salt and pepper to taste

Steps:

  • Wash and scrub the potatoes, then slice them into ¼ inch slices lengthwise. Think "French fry" size. You can leave the skins on, if desired. I left mine on.
  • Cover the potatoes in a bowl with cold water and let them soak for at least 10 minutes. 60 minutes is better.
  • Drain and pat the potatoes as dry as you can get them.
  • Preheat oven to 350 degrees F.
  • Toss the potatoes with olive oil, Cajun seasoning blend and a bit of salt and pepper. Be sure to get them nicely coated.
  • Spread the fries out onto baking sheets and bake them for 20 minutes, tossing them a bit about half way through.
  • Increase the heat to 450 degrees and bake for another 20-25 minutes, or until the baked Cajun fries and nice and crispy.

Nonstick cooking spray
1/2 cup all-purpose flour
1 tablespoon Cajun seasoning
Kosher salt
2 large eggs, beaten
1 1/2 cups stone-ground cornmeal
1 cup panko breadcrumbs (see Cook's Note)
1 pound zucchini (2 to 3 small to medium zucchini) cut into 3-inch-by-1/4-inch sticks
1/4 cup mayonnaise
1 tablespoon Creole or whole-grain mustard
1/2 small dill pickle spear, finely chopped
1/2 to 1 teaspoon Louisiana-style hot sauce, such as Tabasco

Steps:

  • Adjust two oven racks to the top and bottom third of an oven and preheat oven to 425 F. Put the wire racks in the baking sheets and coat each generously with cooking spray.
  • Combine the flour and Cajun seasoning in a large re-sealable plastic bag. Combine the eggs and 1/2 teaspoon salt in another large plastic bag; combine the cornmeal, breadcrumbs and 1/2 teaspoon salt in a third large plastic bag.
  • Add about half of the zucchini sticks to the bag with the flour and use a combination of your hands and shaking the bag to coat the zucchini. Remove the zucchini and shake off any excess flour. Transfer to the egg wash and repeat until coated. (It's less messy if you use only one hand for the dry ingredients and the other for the wet.) Let any excess egg drip off before transferring to the breadcrumbs and repeat until fully coated (you'll still see some green and white of the zucchini peeking through the breading). Transfer to the prepared baking sheets and coat the breaded zucchini generously with cooking spray (there's no need to turn them). Repeat with the remaining zucchini.
  • Bake, rotating the baking sheets from top to bottom about halfway through, until golden brown and tender, 25 to 30 minutes.
  • Meanwhile, stir together the mayonnaise, mustard, pickle and hot sauce in a small bowl. Serve with the zucchini fries.

4 Tablespoons canola or olive oil (divided)
1 teaspoon chili powder
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon sugar

1/2 teaspoon cayenne
1/2 teaspoon paprika
dash of turmeric
onion powder (optional)

Steps:

  • Preheat oven to 475
  • Wash potatoes
  • Slice potatoes into strips.
  • Cover with hot water and let sit for 20 minutes.
  • Prepare the cajun blend by combining all spices in a bowl, set aside.
  • Drain potatoes and dry them off thoroughly.
  • Brush a baking pan with 3 tablespoons of oil and sprinkle pan with 1/3 of the cajun seasoning.
  • Toss the potatoes with 1 tablespoon of oil and sprinkle lightly with seasoning.
  • Place the potatoes on the pan in a single layer.
  • Cover with foil and bake 5 minutes.
  • Remove foil and continue baking for another 15-20 minutes until golden brown on the bottom.
  • Flip potatoes and continue baking until crisp and golden, about 10-15 minutes. Keep an eye on them.
  • Remove from oven and sprinkle with the rest of the cajun seasoning.
  • Drain on paper towels.
  • Serve hot.

1 cup corn flour
2 tablespoons cornmeal
2 tablespoons Cajun seasoning
1 quart oil for deep frying

Steps:

  • Place cut potatoes into a large bowl of cold water. Soak for 10 minutes. In a large resealable plastic bag, combine the corn flour, corn meal, and Cajun seasoning. Shake the bag to blend. Drain the potatoes, but leave them wet. Place the fries in the plastic bag with the seasoning, and shake to coat.
  • Heat the oil in a deep-fryer to 375 degrees F (190 degrees C).
  • Cook fries in hot oil for 7 to 10 minutes, or until golden brown. Remove from the fryer to paper towels to drain. Season with a small amount of salt.

1 teaspoon chili powder

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
