Steps:
- Bring a large pot of generously salted water to a boil over high heat. Once boiling, add the pasta and cook, stirring occasionally, until just tender and al dente, 1 to 3 minutes (or according to package directions). Drain well and set aside.
- Meanwhile, bring 6 cups water to a boil in a large saucepan.
- Using a small paring knife, remove the vein along the back of each shrimp and rinse under running water. Add the garlic to the boiling water and cook for 2 minutes. Add the shrimp to the water with the garlic and cook for 2 to 3 minutes. Drain the shrimp and garlic. Peel and finely chop the garlic.
- Heat the oil in a large skillet over medium heat. Add the garlic and cook for 1 minute. Add the heavy cream and bring to a simmer. Cook, stirring occasionally, until the cream begins to thicken. Stir in the Parmesan, parsley and shrimp. Season with salt and pepper.
- Pour the sauce over the linguine in a large bowl and toss to coat. Garnish with more Parmesan and parsley.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 4 minutes or until al dente; drain.
- Melt butter in a large heavy skillet over medium heat. Saute shrimp for 1 minute on each side. Stir in garlic, and cook for 1 minute. Remove shrimp with a slotted spoon; set aside. - Cook the penne pasta in a pot of salted water until al dente according to package instructions. Drain the water and cover the pasta to keep warm.
- Coat the shrimp with 1 Tbsp of the cajun seasoning. In a deep skillet, heat 1 Tbsp oil over medium heat. Once hot, add the seasoned shrimp in a single layer and saute for about 1-2 minutes per side, or until the shrimp is no longer translucent, remove from skillet and cover to keep warm.
- In the same skillet, melt 2 Tbsp butter with the minced garlic and cook 30 seconds until fragrant. Add in the diced tomatoes and saute for about 2-3 minutes.
- Pour in the heavy whipping cream, remaining 1 Tbsp cajun seasoning and grated parmesan cheese. Bring to a simmer then reduce to medium/low heat and continue 2-3 minutes or until the sauce thickens.
- Add the shrimp and pasta back into the skillet and stir until noodles are coated in sauce and everything is heated through. Garnish with chopped parsley if desired and serve.

This one is pretty easy to make, and tastes wonderful, over just about any type of pasta. I don't have any images of this, so you'll have to settle for my artistic interpretations. Oh, by the way, this sauce would also be great spooned over some cod, or haddock. So, you ready... Let's get into the kitchen.

Steps:
- 1. Chop the shrimp into small pieces
- 2. Lightly cook the shrimp, over medium heat. They should still be pink. Remove from heat, place into a bowl, and reserve.
- 3. Melt the butter in a small saucepan, over medium heat.
- 4. When foaming subsides, add the cream, and the Creole seasoning, the salt, and the pepper.
- 5. Chef's Tip: Depending on the type of Creole seasoning you use (and how much), this dish might be salty enough. Remember: Taste, and then season... Taste, and then season.
- 6. Allow the sauce to slowly simmer, until thickened, about 6 to 8 minutes.
- 7. Chef's Note: Stovetop timings are based on the heat of your burner, so 6 to 8 minutes is just an average.
- 8. Stir in the shrimp and simmer for an additional 5 minutes. Remove from heat, and stir in the lemon juice.
- 9. Cook the pasta according to package directions to the al dente stage.
- 10. Chef's Tip: Time the cooking of the pasta, so that it will be ready when the sauce is ready.
- 11. Divide the pasta onto 4 plates, and ladle the warm shrimp sauce over the pasta. Enjoy.

PASTA WITH CREAMY CAJUN SAUCE
I found this recipe on steamykitchen.com. It has a lot of cream, but it is so worth it! This recipe has two different reductions, which makes the sauce have more concentrated flavors and evaporates the liquid. It was very good, and definitely a comfort food! (The preparation and cooking time is probably off a little because I made it a while ago and can't really remember how long it took.)

- In large stockpot, boil water for pasta.
- In a large sauté pan, heat 2 tablespoons olive oil over medium heat. When shimmering, add onions. Fry for 2 minutes. Add garlic, fry additional 1 minute until fragrant. Add the white wine and chicken base (stir chicken base in the wine first & mix well before adding to pan.).
- Using your spatula, scrape any brown bits off the bottom of the pan. Let the wine reduce to half - about 3 minutes. In the meantime, boil your pasta, ending one minute shy of done.
- Add cajun seasoning, salt, pepper, paprika and tomato paste. Stir.
- Add heavy cream. When the cream mixture is almost bubbling, turn heat to low. Let the crème mixture reduce to half - about 5 minutes. Drain the pasta well - add pasta to the crème sauce. Toss with freshly chopped parsley and some cheese.
CAJUN SHRIMP AND ANDOUILLE IN CREAM SAUCE
This is a wonderful recipe that I came across on another recipe site. I've modified it slightly to fit my tastes. This sauce is great served over pasta or dirty rice. - Heat large skillet to med-high heat.
- Add butter, melt.
- Add onion, green pepper, celery, garlic and basil.
- Saute until onions are transparent but not browned.
- Add sausage and saute until browned.

- Add beer and water and boil until reduced by 1/3 to 1/2.
- Add heavy cream, salt and Cajun seasonings.

- Add olive oil to a plate or shallow bowl and cajun seasoning to a plate or solid bowl. Dip chicken breast into oil followed by cajun seasoning and transfer to a cast iron skillet over medium heat.
- Blacken chicken 3 minutes and flip. Cook chicken 3 minutes or until done. Set aside.
- Meanwhile, bring a large pot of water to a boil.
- Cook your pasta according to package directions (I like to save a little of the pasta water just in case the sauce needs thinned).

- Remove from heat and immediately add parmesan cheese. Toss until coated.

- Season shrimp with cajun seasoning, salt and freshly ground black pepper until well coated. Then, slice sausage, cut onions, mince garlic and set aside. Then heat a large pot of water, add pasta to boiling water and cook pasta according to package instructions or until al dente.
- Heat a large skillet or sauté pan over medium high heat and drizzle with 1 tbsp of olive oil. Add shrimp and cook for 2-4 minutes, flipping at the halfway point. Transfer to a plate and set aside. Add sausage (add a little more olive oil if needed) and brown sausage until caramelized on both sides, around 4 to 5 minutes. Transfer to a plate and set aside.
- If needed add another drizzle of olive oil to the pan, and sauté onions, garlic, and thyme until fragrant and softened. Add chicken broth, cream, crushed tomatoes, worcestershire sauce. Stir until combined and bring to a simmer scraping up any brown bits from the bottom of the pan.
- Continue to allow sauce to simmer, and season with cajun seasoning, granulated white sugar, garlic powder, onion powder, dried oregano, dried parsley flakes, cayenne pepper (optional), smoked paprika, salt, and freshly ground black pepper. Stir until well combined and allow to simmer on medium heat for 5 minutes.
- Add in parmesan cheese, and continue to stir occasionally for another 5 minutes. Then add in cooked pasta and sausage stirring to combine and heated through around 2 - 3 minutes. Then add shrimp, stir and remove from heat. Garnish with fresh parsley, fresh cracked black pepper and more parmesan cheese if desired.

CREAMY CAJUN SHRIMP PASTA
Steps:
- Place a large pot of salted water over medium heat. Bring to the boil then season generously with salt.
- Once boiling, add the pasta and cook according to package instructions until al dente. Reserve 1 cup of water then drain and set aside.
- Place the peeled and deveined shrimp in a large bowl then add the olive oil, crushed garlic, half of the seasonings and a generous pinch of salt.
- Stir to coat the shrimp in the spices.
- Heat a large skillet or pan over medium-high heat. Sear the shrimp for a minute per side until they are golden brown and just cooked.
- Remove and set aside.
- In the same pan, melt the butter and add the garlic. Cook for 30 seconds then add the remaining spices.
- Cook for another 30 seconds then pour in the white wine. Allow the pan to deglaze and the wine to reduce by half.
- Pour in the cream and season with salt and pepper. Allow the cream to simmer for 5 minutes or until the sauce coats the back of a spoon.
- Taste and adjust seasoning if necessary.
- Add the shrimp back to the pan with a squeeze of fresh lemon. Allow the shrimp to heat through.
- Toss the creamy sauce and shrimp with cooked pasta of your choice and a splash of the reserved pasta water and serve scattered with fresh parsley and oregano (optional).

- Set a large skillet over medium heat and add the butter and onion. Cook 4 minutes. Add the garlic, cook 1 more minute.
- Add 1 Tbsp of the Cajun seasoning, worcestershire sauce, chicken broth, and the heavy cream. Bring to a boil and reduce the heat to simmer for 9 to 10 minutes.
