CRAWFISH BURGERS



Crawfish Burgers image

If you have never had Crawfish Burgers you don't know what you're missing. These New Orleans favorites are every bit as delicious as shrimp burgers.

Number Of Ingredients 23

1 tablespoon butter
1/2 cup chopped onion
1/4 cup chopped celery
1/4 cup chopped red bell pepper
2 garlic cloves, (minced)
2 1/2 tablespoons mayonnaise
2 teaspoons Creole mustard
2 teaspoons Worcestershire sauce
1/2 teaspoon Creole seasoning
1 large egg, (lightly beaten)
30 Saltine crackers, (crushed)
1 pound crawfish tails, (coarsley chopped)
2 tablespoons butter
2 tablespoons vegetable oil
6 hamburger buns or slider buns
green lettuce leaves
tomato slices
1/2 cup mayonnaise
1 tablespoon chopped fresh dill
1 tablespoon dill pickle relish
1 tablespoon lemon juice
1 teaspoon Creole mustard
1/4 teaspoon Creole seasoning

Steps:

  • Melt 1 tablespoon butter in a medium skillet over medium-high heat. Add onion, celery, and red bell pepper. Cook, stirring occasionally for 4 minutes.
  • Add garlic and cook 1 more minute. Let mixture cool and transfer to a large bowl.
  • Add mayonnaise, mustard, Worcestershire sauce, Creole seasoning, egg, Saltine crackers, and crawfish tails. Stir to combine. Cover with plastic wrap and refrigerate 4 to 24 hours.
  • Make dill sauce. Combine all ingredients in a small bowl. Cover and refrigerate until needed.
  • Shape mixture into 6 patties or 10 smaller ones if making sliders.
  • Heat 1 tablespoon butter and 1 tablespoon oil in a nonstick skillet over medium heat. Add half the patties and cook for 4 to 5 minutes per side or 3 to 4 minutes for slider-sized patties.
  • Repeat with another tablespoon of butter and oil and remaining patties.
  • Layer lettuce, tomato slices, and a crawfish patty on each bun. Spread top of bun with dill sauce.

1 package (8-1/2 ounces) cornbread/muffin mix
1 large egg
1/3 cup 2% milk
3 cups fresh baby spinach, thinly sliced
12 ounces frozen cooked crawfish tail meat, thawed and shredded
1 cup reduced-fat chipotle mayonnaise
48 pickled jalapeno slices

Steps:

  • In a large bowl, combine the cornbread mix, egg and milk. Spread into a greased 13x9-in. baking pan. Bake at 400° for 9-11 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., Cut cornbread into 1-1/2-in. squares. Top each with spinach, crawfish, mayonnaise and a jalapeno slice.

I decided to turn my most requested crawfish patties recipe I used for Crawfish Cakes into incredible Cajun Crawfish Burgers. OMG is this fantastic and I am the biggest burger fan! Remember wherever you live, only buy Louisiana crawfish tails.

Yield 8 burgers

Number Of Ingredients 12

1 cup saltine cracker crumbs
1 tablespoon dijon mustard
2 tablespoons light mayonnaise
1 teaspoon hot sauce
1 bunch green onions (chopped)
1/3 cup chopped fresh parsley
1/3 cup shredded (reduced-fat sharp cheddar cheese)
1 pound crawfish tails (rinsed and drained)
salt and pepper to taste
1 tablespoon olive oil
flour
horseradish sauce (recipe follows)

Steps:

  • In a medium bowl, carefully combine all ingredients except oil and flour.
  • Cover and chill 30 minutes, if time permits. Shape into 8 patties.
  • In large nonstick skillet, heat oil. Lightly dust patties with flour, and cook over medium heat for 3-5 minutes on each side, or until browned.
  • Serve with Horseradish Sauce, if desired.
