I found this recipe years ago and substituted Cajun stewed tomatoes for a bolder taste. Now I prepare this dish for out-of-state guests who want to taste some Cajun food. Everyone who tries it gives it high marks. Plus, it's easy to prepare. -Sue Fontenot, Kinder, Louisiana

1 cup chopped onion
1 cup chopped green pepper
6 green onions, sliced
1/2 cup canola oil
1/2 cup all-purpose flour
3 cups water
2 packages (16 ounces each) frozen corn
1-1/2 pounds smoked sausage, cut into 1/4-inch pieces
3 cups cubed fully cooked ham
1 can (14-1/2 ounces) stewed tomatoes
2 cups chopped peeled tomatoes
1 can (6 ounces) tomato paste
1/8 teaspoon cayenne pepper or to taste
Salt to taste
Hot pepper sauce to taste

Steps:

  • In a Dutch oven, saute the onion, green pepper and green onions in oil for 5-6 minutes or until tender. Stir in flour and cook until bubbly. Gradually add water; bring to a boil. Add the corn, sausage, ham, tomatoes, tomato paste, cayenne, salt and pepper sauce., Reduce heat; simmer, uncovered, for 1 hour, stirring occasionally.

I used to work at an Old Country Buffet restaurant and this is my version of their Corn Chowder. The cheez whiz really is the secret ingredient. This recipe makes a lot of soup, but I have never been able to make less.

3 tablespoons butter
1 medium onion, chopped
3 tablespoons flour
1 -1 1/2 cup chicken broth
1 cup Cheez Whiz
4 -6 par cooked cubed potatoes (reserve 1 cup of potato water)
2 cups cubed cooked ham
1 (14 ounce) can canned corn niblets, with liquid
2 (14 ounce) cans creamed corn
4 cups milk
1/2 lb tubetti or 1/2 lb elbow macaroni
cajun spices

Steps:

  • Melt the butter in the bottom of at least a 12 quart stock pot.
  • Add onion and cook until translucent.
  • Add flour to make a roux and cook for 3 minutes.
  • Add chicken stock, mix until smooth.
  • Add cheez whiz, stir until smooth.
  • Add the potatoes, potato water, ham, both kinds of corn, the milk and the raw macaroni.
  • Be sure to stir so that the noodles don't stick to the bottom and burn.
  • When noodles are cooked and soup is nice and thick, (add more milk or chicken stock if it thickens too much) add cajun spices to your liking.

1 (16 ounce) package mixed frozen vegetables ( broccoli, corn, red pepper)
2 tablespoons butter
¾ cup chopped onion
1 clove garlic, minced
1 (4 ounce) package sliced fresh mushrooms
1 tablespoon Cajun seasoning
2 tablespoons all-purpose flour
1 ½ cups milk
1 pound scallops - rinsed, drained, and cut in half
1 teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Place the mixed vegetables in a pot with enough water to cover and bring to a boil until the vegetables are tender, about 5 minutes. Drain and set aside.
  • Melt the butter in a pot over medium-low heat; cook and stir the onion, garlic, mushrooms, and Cajun seasoning in the melted butter until the onion is tender, but not yet browned, about 5 minutes. Stir in the flour. Pour in the milk; cook and stir until thickened and beginning to bubble. Add the scallops, salt, and pepper; continue cooking until the scallops are opaque, 5 to 7 minutes. Fold the vegetables into the mixture and cook until the vegetables are reheated, 2 to 3 minutes. Serve immediately.

4 slices bacon (diced)
1/2 cup butter
1 medium red onion (diced)
3 large garlic cloves (minced)
1/2 cup flour
1 pint heavy cream
4 -6 cups milk
6 medium red potatoes (large dice, 1/2 inch cubes)
1 (13 ounce) package cajun style smoked andouille sausages (sliced thin)
2 (15 ounce) cans red beans
2 (14 ounce) cans diced tomatoes and green chilies
2 (15 ounce) cans sweet kernel corn
1 tablespoon salt (more TT)
1 teaspoon cajun seasoning
1/2 tablespoon granulated onion
1/2 teaspoon celery seed
1/4 cup shredded cheddar cheese, to garnish

Steps:

  • Brown bacon with butter in large stock pot, about 5 minutes on med high heat. Reduce heat to medium-low, add onion and garlic, saute 3-5 minutes. Add flour and cook roux for 5 minutes, stirring occasionally. Add heavy cream, milk, and potatoes, bring to a boil over medium high heat, stirring as needed to not scorch milk. Add the rest of ingredients and simmer on low heat for 30 minutes or until potatoes soften.
  • Garnish with cheese and serve.
