1 pound ground beef
3 tablespoons dry bread crumbs
1 egg
3 green onions, chopped
1 tablespoon Cajun seasoning
1 tablespoon prepared mustard
¼ cup barbeque sauce
1 teaspoon Cajun seasoning
4 slices Cheddar cheese

Steps:

  • Preheat grill for high heat.
  • In a medium bowl, mix the ground beef, bread crumbs, egg, green onions, 1 tablespoon Cajun seasoning, and mustard. Form into 4 patties.
  • In a small bowl, blend the barbeque sauce and 1 teaspoon Cajun seasoning.
  • Lightly oil the grill grate, and cook the patties 5 minutes per side, or until well done. Place a slice of cheese on each burger, and allow to melt. Serve with seasoned barbeque sauce.

CAJUN SEASONING BLEND:
3 tablespoons ground cumin
3 tablespoons dried oregano
1 tablespoon garlic powder
1 tablespoon paprika
2 teaspoons salt
1 teaspoon cayenne pepper
BURGERS:
1 pound ground beef
1/4 cup finely chopped onion
1 teaspoon salt
1 teaspoon Cajun Seasoning Blend (recipe above)
1/2 to 1 teaspoon hot pepper sauce
1/2 teaspoon dried thyme
1/4 teaspoon dried basil
1 garlic clove, minced
4 hamburger buns
Sauteed onions, optional

Steps:

  • Combine all seasoning blend ingredients in a small bowl or resealable plastic bag; mix well. , In a bowl, combine the first eight burger ingredients; shape into four patties. Cook in a skillet or grill over medium-hot heat for 4-5 minutes per side or until burgers reach desired doneness. , Serve on buns; top with sauteed onions if desired. Store remaining seasoning blend in an airtight container.

4 skinless chicken breasts
2 tbsp olive oil
4 rashers smoked bacon
2 avocados
4 ciabatta rolls, split
4 thin slices of your favourite cheese
4 small handfuls baby spinach leaves
mayonnaise , to serve (optional)
1 tbsp ground cumin
1 tbsp ground coriander
1 tbsp paprika

Steps:

  • Mix the seasoning ingredients together with a good grinding of black pepper and a sprinkling of salt, then set aside in a large dish. Heat grill to high. On a board, flatten out the chicken slightly, then drizzle half the oil over and toss in the seasoning until completely coated. Heat the remaining oil in a large frying pan, sizzle the chicken for 5 mins on each side until firm, push to one side of the pan, then fry the bacon for a few mins until cooked.
  • While the chicken is cooking, halve, stone, peel and slice the avocados, and toast the cut sides of the buns. Cover the tops of the buns with cheese, then grill until melted.
  • To assemble the burgers, spread the buns with mayonnaise if you want, top with a handful of spinach, then a rasher of bacon. To keep the avocado in place, slice the chicken, then alternate between a slice of chicken and avocado. Top with the bun, press down lightly and serve.

500 g chicken breast (halved)
1 tbsp Ground cumin
1 tbsp Smoked paprika
1 tbsp Ground coriander
1 tsp cayenne
1 pinch sea salt and black pepper
1 Large carrot, (shredded)
0.25 Small red cabbage, (shredded)
1 Head of little gem lettuce, (shredded)
3 tbsp Greek yoghurt
1 Garlic clove, (crushed)
1 pinch sea salt and black pepper
1 Lime ((juice and zest))
4 Ciabatta rolls to serve.

Steps:

  • Pound the chicken breasts so they are an even thickness.
  • Mix the spices and salt and pepper together and roll the chicken in it so each piece is evenly coated.
  • With a paper towel, oil the grill of the BBQ and place the chicken on it. Cook for 4 minutes each side, making sure the chicken gets to 75 Celsius (165 Fahrenheit)
  • Meanwhile, put all of the coleslaw ingredients in to a bowl and mix well.
  • Put the burgers into the ciabatta rolls and top with the coleslaw.

These delicious burgers make a nice change from the more conventional beef burger. So simple to prepare and really tasty too! Obviously you don't need to use the bacon, cheese, avocado etc, but it is rather nice with them all included!

4 skinless chicken breasts
2 tablespoons olive oil

Steps:

  • Mix the Cajun seasoning ingredients together with a good grinding of black pepper and a sprinkling of salt. Set aside in a large dish.
  • Gently flatten out the chicken (bash it gently with a rolling pin between two pieces of cling film), then drizzle with half of the oil and toss into the seasoning until completely coated.
  • Heat the remaining oil in a large frying pan. Sizzle the chicken for 5 minutes on each side, until firm. Push to one side of the pan, then fry the bacon for a few minutes until cooked (of course you could always grill it!).
  • While the chicken is cooking, halve, stone, peel and slice the avocados. Cut the ciabattas in half and toast the cut side of the buns. Cover the tops of the buns with cheese and grill until melted.
  • Spread the bottom half of the bun with mayo (if using). Top with a handful of spinach, then a rasher of bacon. To keep the avocado in place, slice the chicken then alternate between a slice of avocado and chicken (I just cut almost through the chicken and push a slice of avocado into it).
  • Top with the bun with melted cheese,press down lightly and serve with your favourite fries and salad!

1 large carrot, peeled and grated
¼ of a small head of red cabbage, shredded
1 head of baby gem lettuce, shredded
3 TBS plain Greek yogurt
1 clove garlic, peeled and crushed
Sea salt and black pepper to taste
The juice and zest of one lime
4 fresh ciabatta rolls to serve
4 TBS garlic butter
2 large boneless, skinless chicken breast fillets
1 TBS ground cumin
1 TBS smoked paprika
1 TBS ground coriander
1 tsp cayenne pepper (or to taste)
Pinch each of fine sea salt and black pepper

Steps:

  • Cut each chicken breast in half to give you two pieces. Pound the chicken breast halves between two pieces of cling film or wax paper until they are an even thickness. Mix together all of the spices and then roll each piece of chicken in them until they are evenly coated. Set aside. Put the carrot, cabbage and lettuce into a bowl. Whisk together the yogurt, garlic, salt, pepper, and juice and zest of the lime. Add this dressing to the vegetables and toss together to coat the vegetables thoroughly. Set aside. Heat a grill pan over medium-high heat. Brush lightly with oil. Add the chicken breasts. Grill on both sides until golden brown and cooked through. (Inside temperature of the chicken should measure 165*F) Remove from the grill pan and allow to sit for a few minutes so that the juices settle. While the chicken is resting, cut your ciabatta buns in half and spread the cut sides with some garlic butter. Heat the broiler of your oven to high. Pop the buns onto a baking tray, buttered sides up. Pop under the heated broiler. Grill until just golden brown. Remove. Place one cooked chicken breast onto each ciabatta bun bottom, toasted side up. Top each chicken breast with a portion of slaw and then place the top bun on top, toasted side down. Serve immediately with your favorite sides.
