1 tbsp. olive oil
2 skinless chicken drumsticks
2 Skinless Chicken Thighs
1 large onion
1 large Pepper
4 oz. andouille or other smoked sausage
1 stalk celery
1 c. long-grain white rice
1/4 tsp. Cajun seasoning
1/4 tsp. dried thyme
kosher salt
8 oz. raw large peeled shrimp
1 c. frozen cut okra

Steps:

  • Heat the oil in a dutch oven or large saucepan over medium heat. Add the chicken and cook, until browned, 5 minutes per side. Add the onion, peppers, sausage and celery and cook, stirring occasionally, for 3 minutes.
  • Add the rice, Cajun seasoning, thyme, 1/4 tsp salt and 2 cups water and bring to a boil. Reduce heat and simmer, covered, until the rice is nearly tender, 15 minutes. Stir in the shrimp and okra and cook covered, until the shrimp are opaque throughout, 3 to 5 minutes.

I have not tried this recipe, but am posting here for safe keeping and in the hopes someone on Zaar will try it and enjoy it. This was in a recent issue of Woman's Day magazine. My plan is to use red bell pepper and maybe add some red pepper flakes for some kick. I listed the chicken parts separately, but ideally the chicken should just equal 1 1/4 lb. If you try it, I hope you enjoy it!

2 chicken drumsticks
2 chicken thighs
1 onion, large
1 pepper, large, cut into thin strips
4 ounces sausage, andouille or 4 ounces other smoked sausage, slice 1/4 inch thick
1/2 cup celery, sliced
2 cups water
1 cup rice, uncooked
1/4 teaspoon cajun seasoning
1/4 teaspoon thyme, dried
1/4 teaspoon salt
8 ounces shrimp, large, raw, peeled
1 cup okra, frozen

Steps:

  • Use a large non-stick skillet, spray with nonstick spray.
  • Heat over medium-high heat.
  • Add chicken and cook 5 minutes or until browned, turning once.
  • Add sausage, onion, pepper and celery, saute for 3 minutes or until sausage is browned.
  • Stir in water, rice and seasonings, bring to a boil.
  • Cover and simmer 15 minutes, until chicken and rice are almost tender.
  • Stir in shrimp and okra, cover and cook for 5 minutes, stirring 1-2 times, until rice and okra are tender.
  • Serve with your favorite hot sauce.

  • Take the cream cheese out of the fridge 30+ minutes prior to starting the recipe (or microwave it for 20-30 seconds).
  • If the shrimp are frozen, thaw them under cool running water. Peel them (leave tails on if you want). Pat shrimp dry. Cut the chicken into 1" pieces. Sprinkle the shrimp and chicken with the garlic powder and 1/2 tablespoon of Cajun seasoning.
  • Add the oil to a deep skillet over medium-high heat, and once the pan is hot, cook the shrimp for about 3 minutes (flip once), then transfer them to a plate.

  • In a large skillet over medium high heat, add the oil. Then add the chicken and cooked completely. Turn occasionally to cook all sides. Cook until the water starts to dissolve. Once the water has almost dissolve add 1 tbsp. of Cajun seasoning. Add the shrimp. Continue cooking until shrimp is cooked completely.
  • Remove the shrimp and chicken from the pan and set aside. Add the onions, add the minced garlic cloves, garlic, and peppers
  • Reduce the heat to low temperature. Add creamer, water, parsley flakes. Bring to boil. While whisking or stirring, add 1 tbsp. flour. Add the pasta, Toss to combine. Add in the remaining 1 tbsp. cajun seasoning, meat and shrimp. Toss to combine. Then add 1 tsp. kosher salt. Toss again and cover and bring to simmer for 5 minutes on low heat until pasta is completely cook. Top with Parmesan Cheese and serve immediately. Enjoy!
