1 pound frozen purple hull peas
1 pound frozen baby lima beans
3/4 cup shoepeg corn kernels
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1 red onion, diced
1 small jalapeño, seeded and finely diced
1/3 cup loosely packed finely chopped fresh cilantro
Dressing, recipe follows
1/3 cup olive oil
2 tablespoons red wine vinegar
2 tablespoons lime juice
1 teaspoon sugar
1 teaspoon garlic salt
1 teaspoon dried oregano
Kosher salt and freshly ground black pepper

Steps:

  • Boil the purple hull peas in salted water until tender, then drain and cool. Meanwhile, boil the lima beans in salted water until tender, then drain and cool.
  • Combine the corn, purple hull peas, lima beans, red bell peppers, green bell peppers, red onion, jalapeño and cilantro in a large bowl. Add the Dressing and toss together. Taste and adjust the seasoning as necessary. If time allows, marinate the caviar in the fridge for an hour.
  • Whisk together the olive oil, red wine vinegar, lime juice, sugar, garlic salt, oregano, olive oil and salt and pepper to taste in a bowl.

2 purple-globe eggplants, (1 1/2 pounds each)
1/4 cup minced onion
2 plum tomatoes, seeded, finely chopped
1/4 cup roughly chopped fresh flat-leaf parsley
1/2 cup extra-virgin olive oil
1 1/2 teaspoons freshly squeezed lemon juice
Coarse salt and freshly ground pepper
Pita or rye bread, for serving

Steps:

  • Roast eggplants: Using a wooden skewer, pierce eggplants all over. Turn two gas burners or a gas grill to high flame; place one eggplant on each. Cook, turning with tongs as each side blackens and softens, until skins are completely black and flesh is falling-apart tender, about 10 minutes. Remove from flame; transfer to a nonreactive baking dish. Place one end of dish on a slant so that the juices can run from the eggplants. When cool enough to handle, peel away all blackened skin.
  • Place eggplant flesh in the bowl of a food processor; pulse until pureed. Transfer to a large bowl; stir in the onion, tomatoes, parsley, olive oil, lemon juice, salt, and pepper. Serve warm or at room temperature with pita or rye bread.

6 tablespoons red wine vinegar

Steps:

  • Mix all ingredients in a medium bowl; cover and refrigerate 2 hours or up to 2 days. Before serving, adjust seasonings to taste, adding extra vinegar, salt and pepper. Transfer to a serving bowl.

1 sprig fresh rosemary
2 quarts vegetable or chicken stock
1/3 cup unsalted butter, cubed
1 small yellow onion, peeled and ends trimmed
1 teaspoon kosher salt
1/3 cup extra-virgin olive oil
1 1/2 tablespoons white wine vinegar
1 tablespoon freshly squeezed lime juice
1 tablespoon plus 1 teaspoon Cajun seasoning, divided
2 bay leaves
6 black peppercorns
3/4 cup cooked Camellia Brand Green Baby Lima Beans
3/4 cup cooked Camellia Brand Crowder Peas
3/4 cup cooked Camellia Brand Lady Cream Peas
1 large tomato, seeded and diced (about 1 cup)
1 medium poblano, seeded and diced (about 2/3 cup)
1 cup fresh or thawed frozen yellow corn
1/2 cup diced red onion
1/4 cup chopped fresh cilantro
1 teaspoon minced fresh garlic
Tortilla chips

Steps:

  • Directions: Combine thyme, parsley, rosemary, garlic, bay leaves, and peppercorns on a large square of cheesecloth. Bring together ends of the cheesecloth and tie with a kitchen twine to secure contents. Rinse and sort beans and peas. In a Dutch oven, add beans and peas, stock, butter, onion, cheesecloth satchel, salt, and 1 teaspoon Cajun seasoning. Bring to a boil over medium-high heat. Reduce heat to a simmer on low to medium-low heat and cover, stirring occasionally, until tender, about 60 to 90 minutes. In a small bowl, whisk together oil, vinegar, lime juice, and remaining 1 tablespoon Cajun seasoning; set aside. In a large bowl, combine beans mixture, tomato, pepper, corn, onion, cilantro, and garlic. Add oil mixture to bean mixture, tossing to combine. Cover and chill for up to 2 hours. Serve with tortilla chips, if desired.

3 cans black-eyed peas, drained and rinsed
2 large onions, diced
1 red bell pepper, seeded and diced
2 diced jalapeno peppers
1 bunch fresh cilantro, leaves chopped
1/2 cup fresh squeezed lime juice
1 1/2 cups salad oil
1-ounce minced garlic
2 ounces honey
1 tablespoon salt
2 tablespoons ground cumin
1 French baguette loaf, cut into croustades

Steps:

  • Combine the black-eyed peas, onions, peppers and 1/2 of the cilantro in a large serving bowl.
  • Add the lime juice, oil, garlic, honey, salt and cumin to blender and blend until emulsified. Add the dressing to the pea mixture and toss gently. Refrigerate overnight.
  • Garnish the salad with the remaining cilantro and serve, cold, with croustades on the side.

1 cup butter
1/2 lb small shrimp, peeled
1/2 lb crayfish tail, peeled (available in the freezer section here in Texas)
1 cup onion, diced
1 cup celery, diced
1 cup bell pepper, diced
1 1/2 tablespoons creole seasoning
1 tablespoon garlic, minced
1 1/2 tablespoons dried basil
1 1/2 tablespoons dried thyme
1 1/2 tablespoons Worcestershire sauce
2 tablespoons flour
1 1/2 tablespoons tomato sauce
salt
hot sauce
1 cup green onion, diced with green tops

Steps:

  • In a heavy skillet, heat 1 stick butter to sizzling.
  • Saute' shrimp and crawfish on high heat for 4 minutes, then remove with slotted spoon, draining juices back into pan.
  • Finely chop, but do not puree, seafood in food processor and set aside.
  • Mince onions, celery and green pepper in food processor, then place in sieve to drain off excess liquid.
  • Preheat skillet, adding the remaining stick of butter.
  • Add creole seasoning and vegetables and saute' on high heat for 5 minutes.
  • Reduce heat and stir in basil, thyme,garlic and cook for 5 minutes longer.
  • Add seafood, Worcestershire, flour and tomato paste to the vegetable mixture. Cook and stir for 5 minutes.
  • Add the green onions, salt, and hot sauce to taste and cook for 5 more minutes.
  • Serve warm, spread on crusty French bread slices. Garlic bread slices are also good too!

5 cups water
1 green onion, chopped
3 teaspoons chicken bouillon granules
3 teaspoons Cajun seasoning
1 teaspoon garlic powder
1 teaspoon dried parsley flakes
1 teaspoon chili powder
1 teaspoon coarsely ground pepper

Steps:

  • Sort peas and rinse with cold water. Place in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 to 4 hours or until softened. Drain and rinse peas, discarding liquid., Return peas to the pan; add the water, onion, bouillon and seasonings. Bring to a boil. Reduce heat; cover and simmer for 40-45 minutes or until peas are tender.

1/2 cup bell pepper, chopped (I use a mixture of red and yellow peppers)

1 garlic clove, minced (large)
1/3 cup pickled jalapeno pepper, chopped
1 teaspoon cumin
2 tablespoons fresh cilantro, chopped
1 tablespoon wine vinegar
2 tablespoons olive oil

  • Combine all ingredients and mix well.
  • Cover and refrigerate for at least 2 hours, but overnight is best.

But what to pair with that final batch of ultra-rich and creamy eggs? Most people don't think caviar when searching for a midnight snack, but why not?

1/4 teaspoon kosher salt
1 tablespoon unsalted butter
1 tablespoon heavy cream
1-2 ounces caviar (see note)
1/4 cup sour cream

Steps:

  • Whisk together eggs and salt in medium bowl. Melt butter in 8-inch non-stick skillet over medium heat. Add eggs and cook, stirring continuously until they begin to set around the edges, about 1 minute. Reduce heat to medium low and continue to cook, gently stirring and scraping constantly until eggs are thick enough that the spatula leaves a trail in the bottom, about 1 minute longer. Continue to cook, stirring more vigorously to prevent eggs from forming large curds until eggs are just barely set and no liquid remains. Add heavy cream, stir to combine, and transfer eggs to serving plate.
  • Serve eggs immediately with toast, passing caviar, sour cream, and red onions at the table.

Carve the brisket into 1/3 inch thick slices and using a large spatula, carefully return the brisket to the cooker. Turn off the cooker and let the brisket rest in the sauce for at least 15 minutes or up to 1 hour before serving.
