1 pound catfish fillets
1 medium onion, chopped
1 teaspoon prepared yellow mustard
1 tablespoon creamy salad dressing (e.g. Miracle Whip)
½ teaspoon Old Bay Seasoning TM, or to taste
2 ½ cups coarsely crushed buttery round crackers
1 egg
1 cup vegetable oil (for frying)

Steps:

  • Place catfish in a saucepan with enough water to cover. Bring to a boil, and cook until fish flakes easily with a fork. Drain off water, and mash up the fish. Stir in the onion, mustard, salad dressing, Old Bay™, cracker crumbs and egg. Mix until evenly blended.
  • Heat oil in a large heavy skillet over medium-high heat. Form the fish mixture into patties, and fry in the hot oil. Drain on paper towels, and serve hot.

1-1/2 pounds catfish fillets
2 large eggs, lightly beaten
1 large potato, peeled, cooked and mashed
1 large onion, finely chopped
1 to 2 tablespoons minced fresh parsley
2 to 3 drops hot pepper sauce
1 garlic clove, minced
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried basil
2 cups finely crushed butter-flavored crackers
Canola oil
Tartar sauce, optional

Steps:

  • Poach or bake catfish fillets until fish flakes easily with a fork. Drain and refrigerate. Flake cooled fish into a large bowl. Add the eggs, potato, onion, parsley, pepper sauce, garlic, salt, pepper and basil and mix well. Shape into eight patties. , Place cracker crumbs in a shallow bowl. Coat patties in cracker crumbs. In a large skillet over medium heat, cook catfish cakes in oil in batches on each side or until golden brown. Serve with tartar sauce if desired.

2 tablespoons yellow cornmeal
2 teaspoons Cajun or blackened seasoning
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1/4 teaspoon garlic powder
1/4 teaspoon lemon-pepper seasoning
2 catfish or tilapia fillets (6 ounces each)
1/4 teaspoon paprika

Steps:

  • Preheat oven to 400°. In a shallow bowl, mix the first 6 ingredients., Dip fillets in cornmeal mixture to coat both sides. Place on a baking sheet coated with cooking spray. Sprinkle with paprika., Bake until fish begins to flake easily with fork, 20-25 minutes.

This recipe will give you 8 catfish cakes but can be easily doubled and cod fish may be used in place of the catfish or use a mixture of each. You can bake the fish fillets up to a day in advance and refrigerate until ready to use for this recipe, also you can prepare and shape the catfish cakes (omitting the flour) cover and chill up to a day in advance, coat in flour before frying. Prep time does not include cooking the fish firstly. These are just as delicious cold!

1 lb catfish fillet (cooked and cooled)
1 green onion, finely chopped
1/4 teaspoon garlic powder
2 teaspoons prepared yellow mustard
2 tablespoons Miracle Whip
1 teaspoon cajun seasoning (can use more)
2 1/2 cups crushed Ritz crackers (or use similar buttery crackers)
1 egg, slightly beaten
black pepper (optional)
2 tablespoons fresh minced parsley (optional)
flour, for coating
oil (for frying)

Steps:

  • In a large bowl mash the cooked catfish fillets.
  • Add in all remaining ingredients except flour; mix to combine (adding in more Cajun seasoning if desired and salt and pepper to taste).
  • Shape into 8 patties.
  • Place flour onto a plate then dredge the cakes into the flour to coat on both sides.
  • Heat oil in a skillet over medium-high heat, then fry four cakes at a time in hot oil turning once until golden brown (about 3 minutes on each side).
  • Place onto paper towels.

God, these are GOOD!!! You can serve them w/ a plethora of sauces or alone. Either way, they're unbelievable.

1 lb fresh catfish fillets
3 Tbsp butter
1/3 c flour
1-1/4 c fat-free milk
1 tsp old bay seaoning
1/2 tsp each salt & pepper
1/2 tsp dry mustard
1/4 tsp garlic powder
1-1/2 c bread crumbs
1 c finely chopped green bell pepper.
1/2 c finely chopped green onion
1 Tbsp lemon juice
1/2 tsp hot pepper sauce
oil for frying

Steps:

  • 1. Place catfish in single layer in lg dutch oven. Add water to cover. Bring to a simmer over low heat. Cook 3-4 mins. Remove from heat, let cool completely. In lg saucepan, melt butter over med-high heat. Whisk in flour. Gradually add milk, whisk until smooth. Cook until thickened, about 8 min. Stir in old Bay seasoning, salt, pepper to taste, mustard, and garlic powder. In lg bowl, flake cooled catfish. Add cream sauce, bread crumbs, bell pepper, green onion, lemon juice and hot peppper sauce. Shape mix into cakes, coat w/ additional bread crumbs. In lg skillet, heat 1 tbsp oil and 1 tbsp butter over medium heat until butter melts. Cook catfish cakes 5-7 min per side, or until golden.

This is a recipe that I obtained from a very good Cajun friend who is a native of Lafayette, Louisiana. His family adopted me (friendly) many years ago and we have swapped Cajun and Creole recipes through the years.

1 teaspoon ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon dried parsley
1 teaspoon ground cayenne pepper
1 teaspoon kosher salt
½ teaspoon dried oregano
½ teaspoon dried thyme
4 (4 ounce) catfish fillets, skinned
¾ cup unsalted butter

Steps:

  • In a shallow bowl, mix together the black pepper, garlic powder, onion powder, paprika, parsley, cayenne pepper, kosher salt, oregano, and thyme until thoroughly combined. Press the catfish fillets into the spice mixture to thoroughly coat.
  • Arrange a portable heat source outdoors, such as a butane burner or side burner of a gas grill. Melt butter in a glass or metal bowl. Light the burner, and place a large cast-iron skillet onto the burner over high heat. Pour about 1/4 cup of melted butter into the skillet; set remaining 1/2 cup of butter aside.
  • When the butter in the skillet is smoking hot, lay the catfish fillets into the skillet. Cook until the spices are burned onto the fillets and the catfish is opaque and flaky inside, about 3 minutes per side. Don't breathe smoke from burning spices. To serve, pour remaining 1/2 cup of butter over the catfish.
