CAJUN CRAB CAKES

32 ounces claw crabmeat
2 cups plain bread crumbs
2 tablespoons Dijon mustard
1 tablespoon hot sauce
1 tablespoon Cajun seasoning, recipe follows*
3 eggs
1 red onion, minced
Vegetable oil, for pan-frying
1 teaspoon salt
1 teaspoon paprika
1 teaspoon dry mustard
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1/4 teaspoon cayenne

Steps:

  • Preheat oven to 250 degrees F.
  • Flake the crabmeat into a large bowl and add the bread crumbs, mustard, hot sauce, Cajun seasoning, eggs and onion. Mix well but don't overwork or the cakes will be mealy. Divide the mixture into 16 balls and flatten slightly to form the cakes. (The recipe can be made to this point and the cakes can be refrigerated overnight or frozen for up to 1 week.)
  • Pour 1/2-inch of vegetable oil into a medium saucepan and heat over medium-high. When oil is hot, fry the cakes in batches until golden brown, about 3 minutes per side. Remove with a slotted spoon and drain on paper towels. Keep warm in a low oven until ready to serve.
  • Mix all ingredients together and store in an airtight container.

4 catfish fillets, about 6 ounces each
1 tablespoon plus 1 teaspoon Cajun seasoning
Kosher salt and freshly ground black pepper
1/2 cup canola oil
1 cup crackers, crushed
1 cup plus 2 tablespoons mayonnaise
2 tablespoons plus 1 teaspoon spicy brown mustard
1 large egg, beaten
2 teaspoons hot sauce
1 teaspoon lemon juice
1 teaspoon chopped garlic

Steps:

  • Preheat a grill pan over medium-high heat.
  • Season the catfish on both sides with 1 tablespoon Cajun seasoning, salt, and pepper. Brush the grill pan with some of the canola oil and grill the catfish until cooked through, 4 to 5 minutes on each side. Remove to a plate and let cool.
  • Into a large bowl, add the cracker crumbs, 2 tablespoons mayonnaise, mustard, and egg. Shred the fish with a fork and add to the bowl. Fold everything together. Form into 8 small cakes and set them aside.
  • In a large skillet over medium heat, add the remaining canola oil. When it is hot, add the catfish cakes and cook until browned on each side, 4 to 5 minutes total. Drain on brown paper.
  • While the cakes are cooking, make the remoulade: In a bowl, stir together the remaining 1 cup mayonnaise, 1 teaspoon Cajun seasoning, 1 teaspoon mustard, hot sauce, lemon juice, and garlic. (Reserve 1/2 cup remoulade for Round 2 Recipe Cajun Quesadillas.)
  • Serve the catfish cakes with the remoulade.

1 1/2 c sugar
2 egg
2 tsp baking soda
2 can(s) (small) crushed pineapple with juice (16 oz. total)
ICING
1/2 c can milk (evaporated)
1/4 lb butter, melted
3/4 c sugar
1 pkg coconut (14 oz.)
1/2 c chopped pecans

Steps:

  • 1. Mix all cake ingredients well.
  • 2. Spray a 9x13 inch pan with non-stick cooking spray (like Baker's Joy) and add cake batter.
  • 3. Bake for 30 min. at 350.
  • 4. In a saucepan cook milk, butter, and sugar.
  • 5. Cook until thick stirring often about 15 min.
  • 6. Add coconut and pecans.
  • 7. Spread over warm cake. Cut in squares.

1 stick butter (4 ounces)

3/4 cup evaporated milk
1 teaspoon vanilla
1 cup flaked coconut

Steps:

  • Heat the oven to 350 F.
  • Grease and flour a 9-by-13-by-2-inch baking pan.
  • In a mixing bowl with an electric mixer, beat the eggs with the pineapple until well blended.
  • In another bowl, combine the flour, sugar, salt, and baking soda. Whisk or stir the dry ingredients to blend thoroughly.
  • Stir the dry ingredients into the first mixture; blend well.
  • Spread the batter in the prepared pan and bake in the preheated oven for about 30 minutes, or until a wooden toothpick inserted in the center comes out clean.
  • Make topping (below) while the cake is baking. Topping
  • In a saucepan over medium heat, combine the butter, granulated sugar, and evaporated milk; bring to a boil. Reduce the heat to low and boil gently for 10 minutes.

2 cups all-purpose flour
1 (15 ounce) can crushed pineapple
1 ½ cups white sugar
2 eggs, beaten
1 ½ teaspoons baking soda
1 pinch salt
1 cup white sugar
¾ cup evaporated milk
½ cup margarine
1 cup chopped pecans
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease an 11x14-inch baking dish.
  • Mix flour, pineapple, 1 1/2 cups white sugar, eggs, baking soda, and salt together in a large bowl; pour into the prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, about 40 minutes.
  • Combine 1 cup sugar, evaporated milk, and margarine together in a saucepan; bring to a boil for 1 minute. Remove saucepan from heat and stir pecans and vanilla extract into sugar mixture.

CRISPY CAJUN CHICKPEA CAKES (VEGAN)

I thought this recipe was not only easy to make, it was fantastic. I made it for my lunch today. It is from the VeganDadblogspot.com. While the chickpea cakes were good on their own, I thought they were even better with Recipe #503808 (not vegan) dolloped on top. A remoulade sauce would also probably be very good. Vegan Dad said he made these mild in order to be kid friendly. I increased the cayenne (several pinches) and I used a couple teaspoons of hot sauce. Do what suits your tastes. He served for dinner along with a rice dish. Vegan Dad also says if you have trouble forming the patties (I didn't), add some more cornstarch to hold it all together. Mine held their shape throughout the frying. Prep time includes 30 minute chill time.

1/4 cup diced onion
1/4 cup diced green pepper
1 stalk celery, diced
1 (28 ounce) can chickpeas, rinsed and drained
1 teaspoon dried thyme
1 teaspoon paprika
1 pinch cayenne pepper (or more to taste)
1 teaspoon hot sauce (or more to taste)
2 tablespoons chopped fresh parsley
2 tablespoons flour
1 tablespoon cornstarch
salt and pepper
oil (for frying)

Steps:

  • Heat oil in a frying pan over medium heat. Saute onion, green pepper, and celery for 5-7 mins, until softened. Remove from heat.
  • Place chickpeas in a food processor along with the onion mixture. Pulse until chickpeas are no longer whole, but don't process them too much. Place chickpeas in a bowl and add spices, hot sauce, and parsley. Mix well. Add flour and cornstarch and mix well. Place in the fridge for 30 minutes.
  • Heat oil in a frying pan over med/med-hi heat (around 350 degrees). Shape chickpea mixture into 12 patties and fry in batches, about 2-3 mins per side, or until crispy and browned. Flip a few times if they are browning too quickly.

  • Beat eggs and sugar.
