A jazzy way to spice up the boring basic burger that will tantalize your taste buds! Cajun spiced mayonnaise is the perfect complement to these spicy beef burgers.

Steps:
- Preheat grill for medium-high heat. In a small bowl, mix together the mayonnaise and 1 teaspoon of Cajun seasoning. Set aside.
- In a large bowl, mix together the ground sirloin, jalapeno pepper, onion, garlic, 1 tablespoon Cajun seasoning, and Worcestershire sauce using your hands. Divide into 4 balls, and flatten into patties.
- Lightly oil the grilling surface, and place the patties on the grill. Cook for about 5 minutes per side, or until well done. During the last 2 minutes, lay a slice of cheese on top of each patty. Spread the seasoned mayonnaise onto the insides of the buns. Put burgers in the buns, and top with lettuce and tomato to serve.

CAJUN PORK BURGERS WITH SPICY REMOULADE SAUCE
Steps:
- For the Remoulade Sauce: Prepare sauce by combining all sauce ingredients in a small bowl. Refrigerate covered for 1 hour while flavors meld.
- For the burgers: In a large mixing bowl, combine ground pork, Cajun seasoning, scallions, hot sauce, and salt and pepper, to taste. Wet your hands to prevent sticking and shape into 4 patties slightly larger than the size of the buns. Cover with plastic wrap and set aside in refrigerator if not cooking immediately.
- Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking. Place burgers on hot oiled grill and cook 5 to 6 minutes per side or until desired doneness. Serve hot on toasted buns with lettuce, tomato, onions, and a dollop of the Remoulade Sauce.
- INDOOR: Prepare burgers as directed. Heat 2 tablespoons of oil in a large skillet or frying pan over medium-high heat. When oil is hot add burgers and cook 6 to 8 minutes per side or until done.

- In a large bowl, mix the ground turkey with 1 tablespoon of the Cajun seasoning, Chicken Base, onion, Worcestershire, green onions and garlic. Form into 4-ounce patties and set aside.
- Heat the grill to 400 degree. Place the burgers directly onto the grill and grill until cooked through, 3-4 minutes per side. Carefully remove the burgers from the grill using a long-handled spatula to a serving plate.
- In a small bowl, combine the mayonnaise and remaining teaspoon of Cajun seasoning. Divide the mayonnaise evenly between the buns, and top each with a turkey burger.
CAJUN BURGER RECIPE
Steps:
- Gather the ingredients.
- In a small bowl, combine the paprika, garlic powder, oregano, onion powder, kosher salt, thyme, and the black and cayenne peppers. Stir to combine. Transfer the mixture to a jar with a lid.
- In another small bowl, combine the mayonnaise with the finely chopped green onion, Dijon mustard, hot sauce, and dill relish. Add 3/4 teaspoon of the Cajun seasoning (or to taste). Cover and refrigerate the remoulade until serving time.
- In a large bowl, combine the ground beef, minced onion, pressed garlic, and 1 1/2 teaspoons of the Cajun seasoning mixture. Mix to blend thoroughly.
- With your hands of a burger press, shape the meat mixture into four burgers. Each burger will weigh approximately 6 ounces. With your thumb, make an indentation in the center of each burger. Refrigerate the burgers until it is time to cook. Store the remaining Cajun seasoning in a cool, dark place.
- Heat the grill to medium-high heat. When the grill is hot, brush the grate with olive oil or canola oil. Place the burgers on the grill, indentation side up and grill for about 5 minutes. Carefully flip the burgers and continue grilling for about 4 to 5 minutes longer, or until the burgers register 160 F, the minimum safe temperature recommended by the USDA.
- Transfer the burgers to a plate or rack and tent with foil. Let them rest for 5 minutes.
- Assemble the burgers on buns with your choice of toppings, along with a generous amount of remoulade sauce.

CAJUN BURGER WITH SPICY SOUTHWEST SAUCE
This is the best homemade burger I have ever eaten. We are not fans of garlic but we love Worcestershire sauce and we prefer flavor over health consciousness. By following this recipe you will get just a hint of garlic, mild spice, and a lot of Worcestershire flavor. If you like to really taste your garlic then you will need to add more. If you like spicy leave more seeds or increase the number of peppers and last but not least, if you are not a fan of Worcestershire sauce then cut back to 1 tbsp. If you want to be health conscious then use a lower fat meat but really watch your cooking time or it will be dry and lose a lot of flavor. In fact, if you go with sirloin or round I would suggest adding two pieces of white bread (crust removed) soaked in milk to your mix to retain moisture. My kids are VERY picky eaters and they love these burgers. (Take that McDonalds!)

- Cajun Mayo:.
- Prepare the Cajun mayo by combining the mayo, Cajun seasoning, and BBQ sauce and stir. Taste and adjust (like your grandma always told you), then set aside.
- Pre-Heat Grill on High.
- Burgers:.
- Heat a small pan over medium high heat.
- Add the pat of butter to the pan and melt.
- Add the onions and sauté 2-3 minutes stir often.
- Add the peppers and continue to sauté 1-2 minutes.
- Add the garlic and sauté until fragrant.
- Remove the onion, pepper, garlic mixture from heat allow to cool (Stick it in the freezer if your stomach is growling!).
- Put the onion mixture into a large non-reactive bowl.
- Tear the hamburger into small pieces and place in the same bowl.
- Add the Worcestershire sauce.
- Sprinkle 1/2 of the tbsp of Cajun seasoning over the meat and mix gently but thoroughly with your hands. (No pockets of seasoning please!).
- Sprinkle the remaining Cajun seasoning and remix careful to not over work the meat.
- Form into patties slightly larger than your buns.
- Grilling:.
- Place the burgers on the grill and listen to it sear the meat.
- Reduce the heat to medium / medium high and continue cooking with the lid closed until the burgers are done to your liking flipping once.
- Add the cheese shortly after the flip to get a really good melt (Important for thick slices of cheese).
- Remember meat tastes better if not over cooked and the temperature will rise another 3-5 degrees after pulling the burgers from the grill. Cooking by temperature is the only way to get consistent results. I like to pull my burgers at 145-150 degrees.

SPICY SOUTHWEST TURKEY BURGERS WITH GARLIC AIOLI
This is a very zesty, garlicky, and spicy turkey burger that even my husband who normally does not like turkey burgers, well he raves about them. I like to put these on toasted buns and top the burger with pepper jack cheese. To kick up the spiciness to the next level add 1/2 teaspoon cayenne. If you can find it, I highly recommend using smoked salt. It adds an awesome smoky flavor to these, I always use it.

Steps:
- Chop your garlic and veggies.
- Sauté garlic and onion in olive oil on low heat for 7-10 minutes until soft and very light golden brown.
- Then combine turkey meat, garlic, onion, oil that you cooked garlic and onion in (very important), thyme, chipotle powder (or you could use one chipotle in adobo diced), roasted pepper, Worcestershire sauce, cumin, hot pepper sauce, or salt and pepper. Be careful not to overmix!
- Divide mixture into 4 equal mounds then form meat into patties. Drizzle patties with a little olive oil to coat. Cook in skillet over medium high heat for 5 to 6 minutes on each side. Place sliced cheese over the patties in the last 2 minutes of cooking, use 1 or 2 slices for each patty, as you like. slather buns with Garlic Aioli.
- If you want to decrease the heat use plain old chili powder instead of chipotle and cut it back to 1/2 teaspoon.
- For Garlic Aioli.
- Mince garlic very fine, I like to sprinkle mine with salt and mash it but totally optional. Mix all ingredients together in small bowl, this will taste even better if it sits a while and will keep in the fridge for almost a week.
- Pile cooked cheeseburgers into buns. Serve and enjoy!

Combine until the mixture is evenly mixed. Divide the mixture into 6 patties. Place 2 tablespoons panko on a plate and place the patties on top. Sprinkle with another tablespoon of panko and press the patties gently.
- Heat a small amount (about 1-2 tablespoons) of oil in a skillet over medium-high heat. Fry the salmon patties 3 at a time (or 1-2 depending on the size of your skillet), flipping once after 3-5 minutes. The patties should be golden and crispy on the outside and cooked to preference on the inside. Feel for firmness if you prefer a fully cooked patty.
