2 chicken breasts
6 tablespoons unsalted butter
2 tsp sweet paprika
2 tsp spicy paprika
2 tsp ground thyme
2 tsp cumin
2 tsp garlic powder
2 tsp onion powder
1 tsp salt
Juice of 1 lime
1 tbsp fresh cilantro (chopped)
3 tbsp sour cream (optional)

Steps:

  • Melt 4 tablespoons of the butter in a small saucepan on very low heat or in the microwave, at 10 second intervals
  • Mix the melted butter with all the spices and salt
  • Coat the chicken breasts with the spice & butter mixture
  • Let the coated chicken marinate for 20 minutes
  • Melt the remaining 2 tablespoons of butter in a cast iron skillet on medium-high heat
  • Add the chicken and cook for 7-8 minutes on each side until cooked and charred
  • Remove from heat and let it rest for 5 minutes
  • Slice the chicken and squeeze lime
  • Garnish with cilantro and serve with sour cream on the side

¼ teaspoon cayenne pepper

2 skinless, boneless chicken breast halves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet. Heat a cast iron skillet over high heat for 5 minutes until it is smoking hot.
  • Mix together the paprika, salt, cayenne, cumin, thyme, white pepper, and onion powder. Oil the chicken breasts with cooking spray on both sides, then coat the chicken breasts evenly with the spice mixture.
  • Place the chicken in the hot pan, and cook for 1 minute. Turn, and cook 1 minute on other side. Place the breasts on the prepared baking sheet.
  • Bake in the preheated oven until no longer pink in the center and the juices run clear, about 5 minutes.

1 Tbsp. olive oil
1 lb. boneless skinless chicken breasts, cut into thin strips
1 Tbsp. Cajun seasoning, divided
1 cup each red and yellow pepper strips
1 pkg. (5 oz.) baby spinach leaves
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, cubed
3/4 cup milk
2 green onions, sliced
1/2 cup KRAFT Shredded Parmesan Cheese

Steps:

  • Cook pasta in boiling water in large skillet 2 min. Drain pasta in colander; set aside.
  • Heat oil in same skillet over medium heat. Add chicken; sprinkle evenly with 1 tsp. Cajun seasoning. Cook 5 min. or until chicken is done, stirring frequently. Spoon chicken into bowl; cover to keep warm.
  • Add peppers to skillet; sprinkle with 1 tsp. of the remaining Cajun seasoning. Cook and stir 5 min. or until peppers are crisp-tender. Return chicken to skillet. Add spinach; cook and stir 2 to 3 min. or just until spinach is wilted.
  • Add cream cheese, milk and remaining Cajun seasoning to chicken mixture; cook and stir 2 to 3 min. or until cream cheese is completely melted and sauce is well blended. Add pasta; cook 3 to 5 min. or until heated through, stirring frequently. Remove skillet from heat.
  • Top chicken mixture with onions and Parmesan.

  • Combine the oregano, spices (do not add thyme, that is for the end), and oil in a bowl, then rub over the chicken breasts to coat.

Steps:

  • Preheat the oven to 425 degrees F. Cut the potatoes into long wedges about 1-inch thick. Toss the potatoes with the olive oil and Cajun seasoning. Heat an ovenproof large nonstick skillet over medium-high heat and add the potatoes in a single layer. Cook, turning, until browned on all sides, about 15 minutes. Slowly add 1/4 cup water to the skillet and transfer the entire skillet to the oven.
