Coffee Gelato image

Italian-style coffee-flavored gelato. True gelato does not contain eggs and it will melt fairly quickly when removed from the cold. On the plus side, it's far lower in cholesterol than ice cream. It is recommended to eat when ready, but you can store for up to 3 days in an airtight container in the freezer.

1 ½ cups whole milk
1 ½ cups light cream
1 cup white sugar
2 tablespoons ground coffee
1 cup water

Steps:

  • Mix milk, cream, and sugar together in a large bowl. Refrigerate to let sugar dissolve.
  • Brew the coffee grounds with water in a coffee maker or French press. Refrigerate coffee until completely cooled, at least 30 minutes.
  • Beat milk mixture using an electric mixture until slightly thickened to the consistency of buttermilk. Stir coffee into milk mixture.
  • Transfer milk-coffee mixture to an ice cream maker and follow manufacturer's instructions for making ice cream.

Steps:

  • Heat milk in a saucepan set over medium-low heat. Whisk briskly with a wire whisk to create foam. Brew espresso and pour into 4 cups. Pour in milk, holding back the foam with a spoon. Spoon foam over the top.

5 large egg yolks
1 cup sugar
1 1/2 cups whole milk
1 tablespoon instant espresso powder dissolved in 1/2 cup hot water

Steps:

  • Whisk yolks and sugar in large bowl to blend. Bring milk to boil in heavy medium saucepan. Gradually whisk hot milk into egg mixture; then whisk in espresso mixture. Return mixture to saucepan. Stir over medium heat until custard thickens and leaves path on back of spoon when finger is drawn across, about 8 minutes (do not boil). Refrigerate until cold, about 3 hours.
  • Process custard in ice cream maker according to manufacturer's instructions. Freeze in covered container. (Can be prepared 3 days ahead. Keep frozen.)

5 cups milk
1/3 cup instant espresso powder
4 tablespoons cornstarch
1 1/2 cups sugar

Steps:

  • In a small bowl whisk 1/2 cup of the milk, scalded, into the espresso powder, whisking until the powder is dissolved. In another small bowl stir 1/2 cup of the remaining milk into the cornstarch, stirring until the cornstarch is dissolved. In a large heavy saucepan combine the remaining 4 cups milk and the sugar and bring the mixture just to a boil, stirring until the sugar is dissolved. Stir the cornstarch mixture, whisk it into the milk mixture, and simmer the mixture, whisking, for 2 minutes. Whisk in the espresso mixture. Let the mixture cool to room temperature, chill it, covered, until it is cold, and freeze it in an ice-cream freezer according to the manufacturer's instructions.

L'affogato al caffè, a dessert of gelato drowned in espresso, is "one of Italy's most delectable modern dishes," writes Anna Del Conte in her "Gastronomy of Italy." The ice cream can be fior di latte, vanilla or chocolate, or whatever you like. Dulce de leche, with its caramelized milkiness, would be wonderful, as would cherry amaretto. The magic of affogato is that you get two pleasures in one: a spoonable dessert sauced with coffee, and a cream-blushed drink to chase it. The sweet ice cream and bitter coffee should enhance, not overtake each other. Like the best partners, they should meet in the middle.

1 double shot (2 ounces) hot espresso
1 to 2 scoops (about 1/2 cup) very cold vanilla gelato or ice cream (see Tip)
Amaretto (optional)

Steps:

  • Make the espresso first so it can sit while you scoop the gelato. If you don't have a moka pot or an espresso machine, run to the nearest coffee shop.
  • Add the very cold gelato to a small shallow bowl or glass that's been chilled in the freezer until frosty and cold to the touch.
  • Slowly pour the hot espresso in a thin stream directly over the gelato, draping the entire surface of the scoop with an even layer of coffee. You can add a splash of amaretto here if you'd like (the almond flavor would be welcome), but the best affogato is a simple affogato. Just be sure to start eating it before the gelato completely melts: In each bite, you want solid spoonfuls of the gelato thinly draped in coffee.

How to Make a Cafe Latte image

This caffe latte is more of an American-style latte recipe, including espresso, foamed milk, and an optional flavored syrup.

For the Espresso:
1 ounce water
1 tablespoon ground coffee (dark espresso or French roast)
Optional: 1 1/2 fluid ounces (or 1 shot) flavored simple syrup
For the Foamed Milk:
3 ounces milk (or more)

Steps:

  • Gather the ingredients.
  • Place the water into the boiler of your espresso machine.
  • Put the coffee into the portafilter.
  • Tamp (press) the coffee down using a tamper. Do this 2 to 3 times to make sure the grounds are packed tightly.
  • Place the portafilter into your espresso machine's group head and lock it in place by turning it to the right.
  • Place a latte cup (or the glass carafe that came with your espresso machine) under the group head and pull the shot for 25 to 30 seconds. (Typically, there is a lever, switch, or button to start this process.)
  • Once the shot is pulled , add the flavored syrup, if using.
  • Place the milk into either a glass measuring cup or a small metal pitcher.
  • Insert the steam wand into the container with the milk, just under the surface.
  • Engage the steam wand on your espresso machine. (You may need to read your espresso machine's manual for this, as each espresso maker is a little different.)
  • Make sure to keep the tip of the wand toward the side of the container. This will create a vortex with the milk.
  • Move the container higher, lower, closer, then further so that the steam wand can incorporate the air into the milk, making the foam. The bubbles should get smaller and smaller as you do this.
  • Once the milk has foamed to double its size, turn off the steam wand.
  • Use a spoon to retain the microbubbles on top of the steamed milk and pour the bottom 2/3 of the steamed milk into the latte cup.
  • Top the latte with the remaining bubbles by pouring or spooning them onto the drink.
  • Serve and enjoy.

2 cups whole milk
1/2 cup coffee beans, finely ground
2/3 cup sugar
5 egg yolks
1 cup heavy cream
whipped cream (to garnish) (optional)
chocolate-covered coffee beans (to garnish) (optional)

Steps:

  • Combine milk and ground coffee in a medium saucepan and bring to a low simmer.
  • Cook for 20 minutes.
  • After 20 minutes, remove the milk from the heat and let stand for 30 minutes (you can also refrigerate it overnight).
  • Strain the milk through a fine-meshed strainer.
  • Heat until bubbling, then cover to keep hot and remove from heat.
  • Blend sugar and egg yolks in a blender or food processor until thick and smooth.
  • Gradually add the hot milk until the mixture is combined.
  • Pour the mixture into a saucepan and cook over medium heat until the mixture thickens and will coat the back of a spoon (about 6-8 minutes; be sure to stir constantly).
  • Remove the pan from heat and place in a bowl of ice water; stir until mixture is cool (about 2 minutes).
  • Cover and refrigerate until the mixture is completely cool (probably at least 2 hours).
  • Whip the cream until soft peaks form and fold into cooled custard mixture.
  • Freeze in an ice-cream maker; for a silky texture, you should use less salt and a slower churning speed (fast, cold churning can make a gelato coarse).
  • Serve with whipped cream and chocolate-covered coffee beans for garnish.

  • Whip the egg yolks with the sugar at maximum speed for about 5 minutes, until you have a soft fluffy cream.
  • Meanwhile, pour the milk in a saucepan and bring it almost to a boil. Cook for about 5 minutes. Don't boil the milk. Check that the temperature remains at about 85°C (185 F) with a kitchen thermometer.
  • Transfer the egg and sugar fluffy cream to a saucepan. Pour the hot milk slowly. Keep mixing while you do it. If you want to flavor your gelato, this is the time to add either grated lemon zest or two drops of vanilla extract or vanilla bean. Now put it back on the heat and cook for another 5 minutes without boiling and always stirring. Then turn off the heat and add the cold heavy cream. Mix really well.
  • If you have an ice cream maker, pour the mixture into the machine and start it. It will take about 40 minutes, depending on the model. After the necessary time, your gelato is ready! Fresh, creamy and nutritious.

  • Pour the mixture into a 2.5 quart (2.36 liter) saucepan, using a spatula scrape the sides of the bowl. Place the saucepan on medium-high heat and cook, whisking continuously to prevent any burning or clumping. Whisk slowly in the beginning and increase speed as the mixture gets warmer and begins to steam and thicken. If the mixture needs to be used right away, submerge most of the bowl in an ice bath and let it sit 30 to 40 minutes, refreshing the ice as necessary.
  • Enjoy the fresh gelato as soon as possible. If using after 1 day, allow 7 to 10 minutes for the gelato to soften outside of the freezer before eating.
