Steps:
- Hold a teaspoon over the coffee cup and place the sugar and brandy in the spoon. Light the brandy; when the flames begin to die down, pour into coffee. Sugar may be omitted.
CAFE ROYALE
When in New Orleans, you must try their Café Royale. I purchased some Café Royale spoons that grab the rim of a cup so you can ignite easily. Wonderful after dinner drink.

Steps:
- 1. Place lump / cube of sugar in a Café Royale spoon. You can use a regular spoon, also.
- 2. Put the cube of sugar and pour cognac so the sugar cube soaks of the brandy.
- 3. Ignite. When flame burns out, pour contents into black coffee.
