2 Tbsp Nutritional Yeast
1/2 cup Vegan Mayonnaise
1 tsp Crushed Garlic
2 tsp Capers
2 Tbsp Lemon Juice
1 Tbsp Soy Sauce*
1 Tbsp Maple Syrup
1 Tbsp Olive Oil (Extra Virgin)
1/4 tsp Distilled White Vinegar

Steps:

  • Add all the ingredients to a measuring jug and blend up with an immersion blender.
  • Alternatively add all ingredients to blender jug and blend until smooth.
  • Serve as a dressing for a vegan caesar salad or any salad, or as a dip.

1 Cucumber, sliced in half-moons
4 Lettuce, hearts of romaine lettuce, chopped
Parmesan Cheese, one small wedge, and vegetable peeler for shaving
1 tbsp Mustard, dijon mustard
1 tsp Soy Sauce, gluten free tamari
2 Garlic, cloves
6 tbsp Olive Oil
2 tbsp Lemon
1 tbsp Capers
4 tbsp Parmesan Cheese, grated
1/4 Cup Butter Milk, unsalted, low fat
1/4 tsp Black Pepper

Steps:

  • Caesar Salad Dressing: In a food processor, add lemon juice, mustard, parmesan cheese, soy sauce, capers, olive oil, and buttermilk and garlic cloves. Pulse to make smooth puree. Mix in fresh cracked black pepper. Set aside.
  • To assemble salad, wash and spin-dry romaine lettuce. Slice big leaf into half. Shave parmesan wedge using vegetable peeler. In a large salad bowl, add romaine lettuce, cucumber, and half of the caesar dressing. Toss gently to combine. Top the salad with shaved parmesan. Serve remaining dressing on the side. Enjoy!

Juice from ½ large lemon (about 2-3 tablespoons fresh lemon juice)
1 clove garlic, grated or finely minced
1 teaspoon very finely diced capers
2 teaspoons caper brine (from the jar of capers)
1 teaspoon dijon mustard (we love a grainy dijon!)
1-3 tablespoons warm water, to thin out dressing a bit to your liking
Freshly ground salt and black pepper, to taste.

Steps:

  • Mix the dressing ingredients together in a small bowl until smooth: tahini, fresh lemon juice, garlic, diced capers, caper brine, dijon mustard, warm water and freshly ground black pepper. Taste and add a pinch of salt, if necessary.

1 tablespoon water

Steps:

  • In a liquid measuring cup or bowl, combine the mayonnaise, garlic, lemon juice, Dijon, and Worcestershire sauce, and salt. Stir to combine.
  • Stir in the Parmesan, followed by the water. Season generously with black pepper, to taste. I usually think the dressing tastes just right, but if you'd prefer a more bold dressing, add another 1/4 teaspoon Worcestershire sauce, or for more zippy dressing, add up to 1 teaspoon additional lemon juice. Serve as desired.

  • To make the homemade Caesar dressing, add the small clove of garlic to a mini food processor, and add a few capers and the finely grated parmesan. Blitz until finely chopped. Add the Greek yogurt, extra virgin olive oil, white wine vinegar, dijon mustard, and plenty of black pepper, and blitz again until well combined. Taste, and adjust quantities as desired (remember it will taste overly strong and tangy straight from the bowl).
  • Cut the slice of bread into 1 inch pieces, and toss in a little olive oil, along with the asparagus and edamame (I cooked mine straight from frozen, but fresh would work too). Lay everything out in a single layer on a baking tray, and season with salt and pepper. Roast at 190°C (Gas Mark 5 / 375°F) for around 20-25 minutes, tossing halfway, until the croutons are crispy and the vegetables are soft.
  • Cook the eggs in boiling water for around 8-9 minutes, or until cooked to your liking. Drain, rinse with cold water, and set aside to cool, then peel and cut in half.
  • To assemble the vegetarian Caesar salad, fill two large dinner bowls with mixed lettuce leaves. Top with the halved cherry tomatoes, croutons, roasted edamame and asparagus, and a few shavings of parmesan. Finish with the boiled eggs and Caesar dressing, and serve immediately.
