1 pound boneless skinless chicken breasts, cubed
1 teaspoon dried rosemary, crushed
1 tablespoon olive oil
1-3/4 cups all-purpose flour
1 cup whole wheat flour
4 teaspoons sugar
1 package (1/4 ounce) quick-rise yeast
3/4 teaspoon salt
1 teaspoon dried basil
1-1/4 cups warm water (120° to 130°)
3/4 cup reduced-fat Caesar vinaigrette
2 cups fresh baby spinach
1 small green pepper, chopped
1/2 cup chopped fresh mushrooms
1/3 cup finely chopped onion
1-3/4 cups shredded part-skim mozzarella cheese
4 plum tomatoes, chopped

Steps:

  • In a large skillet over medium heat, cook chicken and rosemary in oil until chicken is no longer pink; set aside., In a large bowl, combine 1-1/4 cups all-purpose flour, whole wheat flour, sugar, yeast, salt and basil. Add water; beat just until moistened. Stir in enough remaining all-purpose flour to form a soft dough (dough will be sticky). Turn onto a lightly floured surface; knead until smooth and elastic, about 5 minutes. Cover and rest for 10 minutes., Press dough onto the bottom and up the sides of a 15x10x1-in. baking pan coated with cooking spray. Bake at 400° for 7-9 minutes or until lightly browned., Spread vinaigrette over crust. Layer with spinach, green pepper, mushrooms, onion and chicken. Sprinkle with cheese and tomatoes. Bake for 20-25 minutes or until crust is golden brown and cheese is melted.

Salad gets a delicious makeover! Diced chicken and vegetables are tossed with Caesar salad dressing and served atop a crispy pizza crust.

1 package (10 ounces) refrigerated pizza crust
3 cups thinly sliced romaine lettuce
2 cups diced cooked chicken
1/2 cup diced red bell pepper
1/3 cup pitted ripe olives, drained and sliced
1/4 cup (1 ounce) grated fresh Parmesan cheese, divided
1/2 cup light creamy Caesar salad dressing
1 garlic clove, pressed

Steps:

  • Preheat oven to 425ºF. Lightly sprinkle Large Round Stone with Handles with flour using Flour Sugar/Shaker. Roll pizza crust on baking stone, shaping into a circle. Using Baker's Roller®, roll into a 12-inch circle. Bake 12-14 minutes or until crust is light golden brown. Meanwhile, using Chef's Knife, slice lettuce; dice chicken and bell pepper. Slice olives with Egg Slicer Plus®. Place lettuce, chicken, bell pepper and olives in large Bamboo Fiber Mixing Bowl.Grate Parmesan cheese using Rotary Grater. In Small Batter Bowl, combine salad dressing, half of the Parmesan cheese and garlic pressed with Garlic Press; mix well. Spread half of the dressing mixture evenly over crust. Add remaining salad dressing mixture to lettuce mixture; toss to coat. Top crust with salad mixture. Sprinkle with remaining Parmesan cheese. Cut into wedges and serve immediately.

1 tablespoon olive oil
1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
1-1/2 teaspoons minced garlic, divided
6 tablespoons creamy Caesar salad dressing, divided
2 cups shredded Monterey Jack cheese
1/2 cup grated Parmesan cheese
2 cups hearts of romaine salad mix
2 green onions, thinly sliced

Steps:

  • Preheat oven to 400°. Unroll pizza crust and press to fit into a greased 15x10x1-in. baking pan, pinching edges to form a rim. Bake 10 minutes or until edges are lightly browned., Meanwhile, in a large skillet, heat oil over medium-high heat. Add chicken and 1/2 teaspoon garlic; cook and stir until chicken is no longer pink. Remove from heat; stir in 2 tablespoons salad dressing. , Spread crust with 3 tablespoons salad dressing; sprinkle with remaining garlic. Top with half of the cheeses and all of the chicken. Sprinkle with remaining cheeses. Bake for 10-15 minutes or until crust is golden brown and cheese is melted., In a small bowl, toss salad mix and green onions with remaining dressing. 1 recipe pizza dough (I use Nonfat Pizza Dough (Bread Machine))
1/4-1/2 cup grated parmesan cheese (the real stuff)
8 ounces monterey jack cheese, grated
16 ounces creamy caesar salad dressing
8 ounces boneless chicken breasts
2 roma tomatoes, diced
3 garlic cloves, minced
4 green onions, sliced
2 heads romaine lettuce, torn into pieces

Steps:

  • Preheat oven to 500º.
  • Cut chicken into chunks and stir fry with 1-2 Tablespoons of dressing.
  • Add one clove garlic to pan and stir.
  • Prepare dough on pizza pan or stone.
  • Brush dough with olive oil.
  • Spread 1/2 cup salad dressing over crust.
  • Top with remaining clove garlic, spread evenly.
  • Sprinkle parmesan over crust to lightly cover.
  • Put 1/2 jack cheese on top.
  • Chop chicken into small pieces and place on top.
  • Top with remaining Jack cheese and more Parmesan, if desired.
  • Bake 10 minutes or until golden brown and bubbly.
  • Meanwhile, Toss tomatoes, lettuce and green onions in large bowl.
  • Mix with additional salad dressing.
  • Serve each pizza slice with a serving of caesar salad on top!
  • NOTE: you can use a Boboli pizza crust if you prefer, just bake according to package instructions.

Steps:

  • Place a pizza stone on the middle rack of the oven and preheat the oven to 500 degrees F.
  • On a lightly floured surface, stretch or roll out each of the balls of dough into an 8-inch circle. Brush each of the circles with the chili oil and start to layer, dividing the ingredients among the 4 pizzas. Start with the tomatoes, then the mozzarella and Fontina cheeses, the herbs, chicken, and Parmesan. Bake until the pizza crusts are nicely browned, 10 to 12 minutes.
  • Toss the lettuce with the vinaigrette and season lightly with salt and pepper. Remove the pizzas from the oven, arrange the lettuce on each of the pizzas, and top with some of the shaved Parmesan. Cut into slices and serve immediately.
  • Dissolve the yeast in the warm water. Add the honey and let sit for 5 minutes, until foamy. Put the flour in a food processor. Mix the 1 cup cool water with the olive oil and salt. With the motor running, pour the olive oil mixture and the yeast slowly in through the feed tube. Process until the dough forms a ball on the blade. Transfer the dough to an oiled bowl, cover and let rise until double in bulk. Punch down the dough and knead it on a lightly floured surface for 1 minute. Divide the dough into 4 equal portions and roll them into tight balls. Place on a tray, cover with a damp towel and let rest for several hours or overnight in the refrigerator.
  • Roll or stretch each bowl of dough into a 7 to 8-inch circle. Place the circles, 1 at a time, on a wooden peel or on a baking sheet and build the pizza as desired.
  • Preheat the oven to 250 degrees F.
  • In a pot of boiling water, blanch tomatoes. Drain and refresh in ice water. Drain. Peel, core, cut into quarters, and remove seeds.
  • Line a baking tray with parchment paper and arrange the tomato quarters on the tray, cut side down. Drizzle generously with olive oil. Sprinkle with thyme and garlic. In a small bowl, combine salt, pepper and sugar, and sprinkle evenly over the tomatoes.
  • Bake until the tomatoes begin to shrivel, about 1 hour. When the tomatoes are cool enough to handle, transfer to a container. Pour olive oil over and cover the container. Refrigerate and use as needed.
  • Arrange the cubed chicken in a shallow medium bowl and toss with 1/2 cup olive oil, lime juice, jalapenos, garlic, and cilantro. Season with salt and let marinate for 1 hour, refrigerated.
  • In a skillet or saute pan large enough to hold the chicken in 1 layer, heat the remaining tablespoon of oil. Remove the chicken from the marinade with a slotted spoon. Saute the chicken just to brown on all sides. Do not overcook. Remove from the skillet with a slotted spoon and set aside.
  • In a medium bowl, whisk together the egg, lemon juice, garlic, Worcestershire sauce, red pepper flakes, mustard, and anchovies. Slowly whisk in the oils to emulsify. Stir in the cheese and season with salt and pepper. Refrigerate, in a covered container. When ready to use, whisk again.

  • Preheat your grill to 450°. Toss the chicken with a few tablespoons of caesar dressing and sprinkle both sides of each breast with lemon pepper.
  • Place the chicken breasts onto the hot grill grates and grill for 6 minutes on the first side. Turn and continue to grill for 4 to 5 more minutes or until the chicken is fully cooked and no longer pink. Transfer to a cutting board, cover with foil and let rest for 5 minutes before slicing.
  • Meanwhile, reduce the heat of your grill to 350° and brush both sides of the naan with olive oil. Grill for 1 to 2 minutes, turn and top each with 1/4 cup of mozzarella and sprinkle with a tablespoon of Parmesan. Close the lid for 1 minute or until cheese is melted.

  • DRESSING: If making a homemade dressing, start here! Add all the dressing ingredients to a blender jar. Blend until smooth. Taste and adjust any flavors to personal preference and then place (covered) in the fridge to chill and for flavors to meld and intensify.

  • CHEESE/VEGGIES: While naan is baking, thinly slice the mozzarella and grate the Parmesan cheese.Remove the naan breads from the oven after 2 minutes and evenly spread the mozzarella cheese across the top (1.5 ounces (1/3 cup) per naan bread).   • To make the crust, add yeast and sugar to warm water and allow to proof for 5 minutes. While the yeast is proofing, combine the salt, olive oil, and flour in the bowl of a stand mixer with the dough hook attached. When your yeast mixture is nice and bubbly, add it to the bowl of the stand mixer, turn it on, and let it go for about 5 minutes. It should mix the dough and then start to knead it. The dough should be soft but not sticky; add more flour if necessary. Remove the dough from the bowl and form it into a nice ball. Pour a little more olive oil into the bottom of the bowl and put the dough back in, turning it once to coat with olive oil. Cover the bowl with plastic wrap, set it in a warm spot, and allow to rise for 30 minutes.
  • When the dough has risen, punch it down, remove it from the bowl, and place it on a clean, well-floured counter. At this point, I always divide the dough into 3 equal portions so that my pizzas are a manageable size. Roll each portion out to a thickness of 1/8-1/4".
  • With your grill set to medium heat, brush olive oil on one side of each prepared pizza crust, and place crusts oil-side-down on the grill. Cook--with the cover up--until the bottom of the crust has nice grill marks on it and it is stiff enough to be flipped. Brush more olive oil on the top of the crust and flip it over. Sprinkle minced garlic and chicken evenly over crusts, drizzle with pesto, and top with shredded mozzarella. Close cover and cook until cheese is completely melted. Place cooked pizzas on a large cutting board or cookie sheet and allow to cool slightly.
  • Preheat your oven to 500°F. Sprinkle corn meal evenly over as many cookie sheets as you need to accommodate all of your crusts, and place crusts on cookie sheets. I'm assuming that if you have a pizza stone and a pizza paddle, you know how to use them, so I'm not going to get into that methodology! Brush olive oil on the top of each crust. Sprinkle minced garlic and chicken evenly over crusts, drizzle with pesto, and top with shredded mozzarella. Bake until crusts are golden and cheese is melted, 5- 10 minutes. Remove from oven and set aside to cool.
