I had this drink in Tucson and talked the bartender into sharing the recipe with me.

coarse salt as needed
2 fluid ounces tequila
2 fluid ounces sweet and sour mix
1 fluid ounce triple sec
1 fluid ounce lime juice
1 fluid ounce prickly pear syrup

Steps:

  • Pour salt into a small plate. Wet the rim of a margarita glass and dip rim into salt.
  • Fill a cocktail shaker with ice; pour tequila, sweet and sour mix, triple sec, lime juice, and pear syrup over ice. Cover shaker and shake drink; strain into prepared margarita glass.

9 ounces white tequila
4 ounces orange-flavored liqueur (recommended: Cointreau)
4 ounces cactus pear juice, plus more for the rim
2 ounces fresh lime juice
1 1/2 cups crushed ice
Coarse salt, optional
Lime wedges, for garnish

Steps:

  • Place tequila, orange liqueur, cactus pear juice, lime juice, and ice in a blender and blend until smooth. Carefully pour a few ounces of cactus pear juice onto a plate and a few ounces of salt onto another plate. Dip the rim of each margarita glass into the juice and then into the salt. Pour margaritas into each glass and garnish with a lime wedge.

Mango nectar or thawed cranberry juice concentrate can be substituted for the cactus pear juice, but if you can find it, the margarita will be magical.

1 c. ice cubes
Lime wedges

  • Place the tequila, Cointreau, cactus pear and lime juices, and ice in a blender and pulse until smooth.
  • If using salt for garnish, rub a lime wedge around the rims of the glasses and dip the rims into a saucer of coarse salt.
  • Divide the mixture among 4 margarita glasses; garnish each with a lime wedge.
