Here's what you need: almond milk, vanilla extract, agave nectar, organic cacao powder, chia seeds, almond butter, sea salt, coconut flake, fresh raspberry

1 cup almond milk
1 teaspoon vanilla extract
1 tablespoon agave nectar
2 ½ tablespoons organic cacao powder
¼ cup chia seeds
2 tablespoons almond butter, 1 per serving
sea salt, to taste
coconut flake, to taste
fresh raspberry, to taste

Steps:

  • In a medium bowl, whisk together the almond milk, vanilla, agave, and cacao powder until well combined. Add the chia seeds and whisk to incorporate.
  • Cover the bowl and refrigerate for at least 3 hours, or up to overnight, until the chia seeds have absorbed the liquid and the mixture has a pudding-like consistency.
  • Divide the pudding between 2 small bowls and top each serving with 1 tablespoon of almond butter and sea salt, coconut flakes, and raspberries to taste.
  • Enjoy!

1 cup unsweetened almond milk, or more as needed
⅓ cup chia seeds
¼ cup cashews
5 tablespoons cacao nibs, divided
1 tablespoon maple syrup
1 teaspoon unsweetened cocoa powder
1 teaspoon pure vanilla extract
1 teaspoon instant espresso powder
¼ teaspoon sea salt
¼ teaspoon ground cinnamon

Steps:

  • Combine almond milk, chia seeds, cashews, 2 tablespoons cacao nibs, maple syrup, cocoa powder, vanilla extract, sea salt, and cinnamon, in a high-speed blender. Blend until well combined, 30 seconds to 1 minute. Stir in 1 tablespoon cacao nibs and pour into individual bowls. Cover and refrigerate for 1 hour or overnight. Mixture will thicken as it chills.
  • Sprinkle pudding with remaining cacao nibs before serving.
