Creamy Cheesy Cabbage Casserole with Ritz Crackers image

Cabbage casserole with a creamy sauce and cheesy cracker topping. This cabbage casserole recipe is perfect for any large get together and is a great side dish. Goes great with ham and turkey!

1 head cabbage, chopped into 1-inch squares or strips (See Recipe Note)
1 stick butter, halved, melted
1 onion, finely chopped (about 1 cup) (See Recipe Note)
1 10.5 oz can cream of mushroom soup
1/2 cup mayonnaise
1/4 tsp salt
1/2 tsp pepper
dash of cayenne, optional
1 cup shredded cheddar
1 sleeve ritz crackers, roughly crushed (not too fine, you want bits and pieces of crackers)

Steps:

  • Preheat oven to 350F.
  • Rinse head of cabbage under cool water first. Chop the cabbage into 1-inch squares or strips. Discard the hard core and end piece. READ RECIPE NOTES (A & B) BELOW.
  • Place cabbage and chopped onion into a large casserole dish (9 x 13). Pour half a stick of melted butter over the cabbage. Mix well.
  • Mix the soup, mayonnaise, salt, pepper, and cayenne in a bowl. A whisk works well for this.
  • Pour into the casserole dish and mix well with the cabbage.
  • Mix the crushed crackers and cheese and pour on top of the soup mixture.
  • Drizzle the remaining 1/2 stick melted butter on top of the cracker and cheese mixture. Bake at 350F for 30-40 minutes or until the cracker topping is crispy browned.

2 quarts chopped cabbage
1 (10 1/2 ounce) can cream of celery soup
1/4 cup milk
1 cup packed shredded American cheese or 1 Velveeta cheese
1/2 teaspoon salt, less if desired
1/8 teaspoon pepper
1 cup finely crushed butter flavored cracker
4 tablespoons melted butter, more if needed

Steps:

  • Cook cabbage 5-7 minutes in salted water, drain well.
  • Combine soup, milk, cheese, salt and pepper in large bowl.
  • Microwave til cheese melts and is creamy. Stir occasionally.
  • Fold in cabbage.
  • Pour into 1-1/2 quart casserole dish.
  • Mix cracker crumbs and melted butter.
  • Sprinkle evenly over top.
  • Bake in 350º over for 30-40 minutes til bubbly.

1 large head cabbage, shredded
10 tablespoons butter, softened, divided
1/4 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
4 cups whole milk
2 cups shredded cheddar cheese
1 cup soft bread crumbs

Steps:

  • In a large kettle or Dutch oven, cook cabbage in boiling salted water for 2-3 minutes or until crisp-tender; drain well. Add 2 tablespoons butter; set aside., In a small saucepan, melt 6 tablespoons butter; stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened., In a greased 3-qt. or 13x9-in. baking dish, place half of the cabbage. Pour half of the sauce over cabbage. Repeat layers. Sprinkle with cheese. Melt remaining butter; toss with bread crumbs. Sprinkle over cheese. Bake, uncovered, at 350° for 18-22 minutes or until cheese is melted.

With Wedges of cabbage or Brussel Sprouts, and this cheese sauce these vegies will have you eagerly asking for more. I came across this idea after making this for Broccoli and Califlour, and we loved it. So it ventured onto my Cabbage dish. Enjoy this Recipe with Your Summer Garden Vegies.

4-6 strips cooked bacon, (reserve drippings)
1 Med head green cabbage or brussel sprouts (your choice)
1/2 C shredded sharp cheddar cheese
salt and pepper to taste
WHITE SAUCE
3 TBS butter
1 TBS bacon drippings
1/4 C flour
2 C milk
salt and pepper to taste

Steps:

  • 1. First; Make the White Sauce. In the skillet used for the Bacon over "Med. Heat", Melt the Butter with bacon drippings NOTE:(use 1/4 C fat total, including bacon drippings) Stir in the Flour, Blend well to make a paste. Gradually pour in the milk Stirring constantly. Continue to cook and stir until sauce is thickened and smooth; add salt and pepper to taste. Set aside
  • 2. 2nd: Cut cabbage into wedges and cook covered in a small amount of salted water, until tender about 10 min. (or cook brussel sprouts in salted water till tender.)
  • 3. Add: over Med Heat, Cheese to the sauce mixtue, Heat until melted. Place drained cabbage or Brussel Sprouts in a serving bowl or platter; Cover with Cheese sauce, Then Sprinkle with crumbled bacon. Serves 4 ENJOY.

1 cup milk
2 tablespoons all-purpose flour
2 tablespoons butter
¼ teaspoon salt
1 dash ground black pepper
1 medium head cabbage, shredded
1 cup grated Romano cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium saucepan over medium heat, blend milk, flour, butter, salt and pepper. Stir constantly until a thick white sauce has formed.
  • In a separate medium saucepan over boiling water, steam cabbage until tender but firm.
  • In a small baking dish, alternate layers of sauce, cabbage and Romano cheese.
  • Bake approximately 30 minutes, until sauce and cheese are bubbly.

We celebrate St Patrick's Day with a big meal each year and cabbage usually plays some part in the feast. One year, a guest brought this cabbage dish to share and it was a big hit. She originally found the recipe in an issue of Taste of Home magazine. The chili sauce called for in this recipe is not particularly spicy (although hot versions are also sold) and is usually sold in a bottle in the ketchup aisle in US supermarkets. The brand I most often have used is Heinz.

1 head green cabbage (3 pounds)
1/2 cup green bell pepper, chopped
1/4 cup onion, chopped
1/4 cup butter or 1/4 cup margarine
1/4 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
2 cups milk
3/4 cup cheddar cheese, shredded
1/2 cup mayonnaise or 1/2 cup Miracle Whip
3 tablespoons bottled chili sauce

Steps:

  • Cut cabbage into 8 wedges, leaving a bit of the core on each to help hold eachpiece together.
  • Bring a pot of water to boil and steam cabbage wedges, covered, until crisp-tender, approximately 10-15 minutes.
  • Drain and remove the core, then set wedges in a greased 9x13" casserole.
  • For the sauce, in a medium pot, saute green pepper and onion in butter until tender.
  • Add flour, salt and pepper, stirring quickly, and cook until it gets bubbly.
  • Add milk slowly, whisking, then cook and stir until sauce thickens.
  • Pour over cabbage.
  • Bake, uncovered, at 375 F for 15 minutes.
  • Meanwhile, mix together cheese,mayo, and chili sauce; ladle over the cabbage wedges and return to oven for 5 more minutes.

1 (4) pound cabbage, washed and split into 10-12 pieces each with a bit of core
2 TBSP olive oil
1 tsp salt
1/4 cup butter
1/4 cup flour
2 cups milk
2 cups grated cheese, cheddar medium or sharp works well
salt, to taste
pepper, taste

Steps:

  • heat the oven to 375˚
  • lay cabbage slice on baking sheets, drizzle with 2 TBSP olive oil, sprinkle on the teaspoon of salt, roast 30-40 minutes or until it's cooked and browned
  • remove, cool slightly, and chop with kitchen scissors to bite-sized pieces, removing the core if you desire, set aside while making cheese sauce
  • in a small sauce over medium heat melt the butter
  • when it's melted add the flour and cook stirring constantly for 2 minutes
  • slowly add the milk, whisking constantly
  • cook for 2-3 minutes more, stirring constantly
  • when the white sauce/bechamel sauce is thickened add the cheese
  • stirring until all the cheese is melted
  • remove from heat
  • taste and add salt and pepper as desired
  • lightly butter a 2 qt baking dish
  • add the cabbage and 3/4 of the cheese sauce, toss together
  • pour remaining sauce over the cabbage
  • cover and bake at least 10-15 minutes but you can continue baking for at least another 20, it's very forgiving
