PAN FRIED CABBAGE WITH BACON AND ONIONS RECIPE
Fried cabbage with bacon and onions - salty, sweet, buttery, hearty, and so delicious - this Irish inspired recipe is a huge hit for the whole family!

Steps:
- Cut bacon into thick chunks, pan fry until crunchy. Remove from pan and set aside.
- Drain off most of the bacon fat - leave a little if desired for taste, but too much will give an oily texture.
- Heat butter in large pan on medium-high heat until melted and foamy.
- Add diced onions to pan, cook until soft and transparent, about 4 minutes. Stir to prevent sticking or burning.
- Add garlic and cabbage to the pan, tossing evenly to coat in butter.
- Generously season with salt and pepper.
- Let cabbage reduce by half, about 8 minutes, stirring occasionally as it cooks down to prevent burning and allow it to cook evenly. Add bacon back to pan.
- When cabbage has lost much of it's volume and started to turn shiny, slightly translucent, and has lovely browned bits, it is ready to serve.
- Serve immediately.
- Leftovers can be stored in an airtight container in the refrigerator for up to four days, three months in the freezer.

- Cut the cabbage into quarters. Remove any wilted or discolored outer leaves. Cut out the core from the cabbge quarters. Cut into large 1-inch dice.
- Cook the bacon and onion in a 4-quart pan over medium heat until bacon is crisp, and the onion is wilted.
- Remove the bacon and onion to paper towels to drain. There should be about 1/2 cup of bacon drippings in the pan.
- Add the cabbage to these drippings and cook without stirring until it begins to brown, about 3 minutes.
- Add the water, sugar, salt and pepper and cook until the cabbage is tender, about 20 minutes.
- Crumble the cooked bacon into the cabbage and serve hot.

By Low Carb Layla: Fried cabbage is basic staple item in the low carb world. Surprisingly I've never tried it until I made it tonight. It was so good! I feel like I've been missing out on something by not trying it sooner. My kids didn't care much for it but my carb-etarian Hubs thought it was excellent! I looked up a few recipes to get a feel for how to prepare and wound up cooking it in a very similar way I cook my Bacon and Onion Green Beans which are heaven on a plate (this cabbage ranks right up there). I think you can cook anything with bacon, onions, salt and pepper and it will come out fabulous! I served this with the Laughing Cow Steak and thought they were a nice combo on my plate. - In a large pan cook the chopped bacon over medium to medium-high heat. Once the fat renders off and there's plenty of bacon grease in the pan, add the chopped onion. Right when the bacon has just started to crisp, add the chopped cabbage, salt, pepper and Worcestershire sauce (optional but I like the tiny bit of smokey tang that it gives some foods). - Parboil perogies in a 6 to 8 quart pot of boiling salted water, uncovered, stirring occasionally, 1 minute less than package instructions indicate (perogies will not be completely cooked) Transfer with a slotted spoon to a colander to drain. Pat dry.
- Heat 1 TBS oil in a 12 inch heavy skillet and saute half of the perogies, turning over once, until golden, about 4 minutes per batch. Transfer to a large platter and cover loosely with foil. Keep warm. Add 1 TBS oil to skillet and cook remaining perogies in same manner.
- Cook bacon in same skillet over moderately high heat stirring occasionally until crisp and golden, 6 to 8 minutes, then transfer to paper towels to drain. Pour off all but 1 TBS of fat from skillet, then add remaining oil and saute onion, stirring until golden, about 8 minutes.
- Reduce heat to moderate, then stir in garlic, cabbage, water and salt. Cook, covered, stirring occasionally until cabbage is tender, 5 to 7 minutes. Transfer to platter with perogies and sprinkle with bacon and dill.
- Serve hot with sour cream if desired.
