1 pound ground beef
1-1/2 cups finely shredded cabbage
1 medium onion, chopped
1 celery rib, chopped
1/4 cup chopped green pepper
1 cup ketchup
3 tablespoons brown sugar
2 tablespoons lemon juice
1 tablespoon white vinegar
1 tablespoon Worcestershire sauce
1 tablespoon prepared mustard
1 teaspoon salt
Dash pepper
8 sandwich rolls, split

Steps:

  • In a large skillet, cook the beef, cabbage, onion, celery and green pepper over medium heat until meat is no longer pink; drain. Stir in the ketchup, brown sugar, lemon juice, vinegar, Worcestershire sauce, mustard, salt and pepper. Cover and simmer for 10 minutes or until cabbage is tender. Spoon 1/2 cup onto each roll.

These Lentil and Cauliflower Vegan Sloppy Joes are my lightened up version of traditional Sloppy Joes and I'm confident they're just as good as what you remember from childhood.

1 small head of cauliflower
2 cups cooked French green lentils (about ¾ cup dry lentils)
2 teaspoons olive oil
½ yellow onion, finely chopped
4 garlic cloves, minced
2 tablespoons tomato paste
1 15-oz. can tomato sauce
3 tablespoons maple syrup
3 tablespoons brown sugar
2 teaspoons dijon mustard
2 teaspoons apple cider vinegar
1 teaspoon soy sauce
½ teaspoon chili powder
½ teaspoon paprika
1½ teaspoons salt
Few twists of black pepper
Pinch of cayenne (optional)
Vegan hamburger buns, for serving
Shredded cabbage, for serving (optional)

Steps:

  • Begin cooking the lentils if you aren't using pre-cooked lentils.
  • Chop the cauliflower into florets and add them to the bowl of a food processor. Pulse a few times to break up the chunks. You want the pieces to be slightly larger than you'd make them for cauliflower rice.
  • Drizzle the olive oil into a large, deep skillet and warm over medium-low heat. Add the onion and garlic. Sauté until the onion is soft, about 3 minutes. Add the cauliflower and cook 2 minutes more.
  • Add the cooked lentils, tomato paste, tomato sauce, maple syrup, brown sugar, dijon mustard, apple cider vinegar, soy sauce, and spices to the skillet and stir to combine. Simmer for 15 to 20 minutes, until the mixture has thickened. Adjust flavors to taste.
  • Preheat a dry pan (I used a cast iron skillet) over medium-low heat. Toast the tops and bottoms of the hamburger buns, about a minute on each side.
  • Spoon some of the vegan sloppy Joe filling onto each bottom bun. Garnish with sliced cabbage and place the top buns on top. Enjoy warm.

Adapted from an allrecipes.com recipe. My version is a bit healthier, using ground turkey, unsweetened ketchup and sugar substitute. You can certainly substitute beef and real sugar and it would be just as tasty. We like a sweeter sloppy so I usually add more sweetener for us. Enjoy in good health!

1 1/4 lbs extra- lean ground turkey
1/4 cup green pepper, chopped (2 oz)
2 cups green cabbage, finely shredded
1 medium onion, chopped (3 oz)
1 celery rib, chopped
1 1/2 cups unsweetened ketchup
2 tablespoons brown sugar substitute
2 1/2 tablespoons lemon juice
1 tablespoon white wine vinegar
1 tablespoon Worcestershire sauce
1 tablespoon yellow mustard
1 teaspoon salt
hamburger bun

Steps:

  • Spray treat a large non-stick skillet. Add turkey and vegetables. Cook over medium heat until meat is cooked through and vegetables are starting to tender.
  • In a small bowl, stir together the remaining ingredients. Stir into the turkey and vegetables, mixing well. Cover and simmer for about 10 minutes.

1 pound ground pork
3 scallions, trimmed and thinly sliced
1 (1 inch) piece minced fresh ginger root
1 stalk lemongrass, tough outer stalks removed, inner stalks thinly sliced
1 teaspoon garlic powder
¼ cup reduced-sodium soy sauce
3 tablespoons ketchup
salt and ground black pepper to taste
1 (10 ounce) package shredded cabbage
2 tablespoons wasabi-flavored mayonnaise (such as Trader Joe's®)
1 tablespoon rice vinegar
1 tablespoon lime juice
4 whole-wheat hamburger buns

Steps:

  • Heat sesame oil in a large skillet over medium heat. Add pork; cook and stir until pork is no longer pink, about 5 to 7 minutes. Add scallions, ginger, lemongrass, and garlic powder; cook and stir until fragrant, 2 to 3 minutes.
  • Reduce heat to low. Stir in soy sauce and ketchup. Cook until flavors combine and mixture thickens slightly, 3 to 5 minutes. Season with salt and pepper.
  • Combine cabbage, wasabi mayonnaise, rice vinegar, and lime juice in a large bowl; toss to mix slaw.
  • Split each bread roll and fill with pork mixture. Top with slaw before serving.
