EASY CABBAGE ROLL CASSEROLE
Forget trying to roll the cabbage rolls. I tried this once and realized that I didn't need to spend all that time making the rolls because they ended up looking the same on the plate anyways.

EASY CABBAGE CASSEROLE - TASTES LIKE CABBAGE ROLLS
This is a great recession meal. Very inexpensive yet HEALTHY and filling! You just do not find that very often. So many recipes that are quick and easy... one pan wonders... etc.. are high in fat and calories and lack much nutrition. I like to hide more veggies in here too! Think carrots, celery, etc,, grated, diced, chopped whatever. If you like spicy foods try Hot & Spicy V8 here and you can even add some cayenne if you like. There is just something we like about spicy mixed with sweet- so the hint of sweetness in the sauce is fantastic. At my house, whoever finds the bay leaf is the lucky one! Just do not eat it Hope you enjoy this comforting casserole!

Steps:
- Saute onion and garlic in a large skillet for about a minute. Add meat and cook, stirring often, until meat is no longer pink. Drain well and let cool to room temperature. When meat has cooled add egg, milk and rice.
- Meanwhile, remove tough outer leaves from cabbage & remove core. Shred cabbage if not using a bag of shredded cabbage. Saute the cabbage in the same skillet used before.
- In a large bowl mix all the sauce ingredients together. Place some of this mixture in the bottom of a sprayed 10x13 casserole dish so you have a nice layer of sauce. Try not to use more than half though.
- Layer half the cabbage on top of the sauce. Layer all the meat on top of the cabbage. Top with remaining cabbage and then finish by pouring all the remaining sauce on top.
- Bake at 350 degrees F for 30 minutes or until everything is hot and bubbly.
- Garnish with a dollop of sour cream if desired. Remember- whoever finds the bay leaf is the lucky one! Just do not eat it!

CABBAGE ROLL CASSEROLE
A friend gave me the original recipe for this and I added a few spices to give it a little more flavor. I've made it "my way" ever since and everyone who has it seems to enjoy it very much. One other way I did this was to eliminate the tomato sauce (didn't have any that day) and use a can of Rotel diced tomatoes with chiles. Because they have juice I lowered the amount of water a bit. It turned out delicious that way too! I have also put the sauce together earlier in the day and let it sit to make sure the flavors went through really well.

Steps:
- Brown the ground beef and onion. Drain. Mix the rice into that. Set aside. Chop the cabbage and spread over the bottom of a 13x9 pan. Spread the meat/onion mixture over that. In a saucepan combine the rest of the ingredients and bring them to a light boil. Pour this over the meat and cabbage. Cover tightly with foil and bake at 350 degrees for 1 1/4-1 1/2 hours. NOTE: Recently I have reversed the way I layer the ingredients in the baking dish. I put the meat/rice mix in first and top with the cabbage. I then pour the liquid over that. I find it works better as far as not ending up with hard bits of uncooked or dried up rice.
- I like to sometimes sprinkle my serving with parmesan cheese just for a little extra flavor, too.
- Note: If you don't have marjoram use extra oregano -- or -- if you have no oregano use extra marjoram -- they are very similar. I notice people saying they used garlic. Why didn't I think of that?! Love using garlic. I will be adding some next time I make this myself!

CABBAGE ROLL CASSEROLE
This casserole has all the elements of cabbage rolls-ground beef, onion and rice cooked in tomato sauce-and skips the fuss of rolling. The cabbage is chopped instead and layered with the saucy filling, then topped with cheese, for a satisfying and easy casserole. Feel free to substitute other ground meats, such as turkey, for the ground beef-this recipe would also be great with a vegetarian meat substitute.

- Heat oven to 400°. Start by prepping the beef filling. Coarsely chop 1 large bunch dill (you should get about ¾ cup), then crush and finely chop 3 large garlic cloves. Transfer a third of dill and a third of garlic to a large bowl. Add 1½ lb. ground beef or plant-based meat, 1½ tsp. Diamond Crystal or ¾ kosher salt, and ½ tsp. freshly ground black pepper and mix with your hands to incorporate. Set remaining dill and garlic aside separately.
- Heat 1 Tbsp. extra-virgin olive oil in a large Dutch oven or other heavy pot over medium-high until shimmering. Add half of beef mixture, dropping into pot in small clumps. Cook, undisturbed, until deeply browned underneath, about 5 minutes (or about 3 minutes if using plant-based meat). Stir and continue to cook 1 minute (it’s okay if the meat is not fully cooked through, it’ll finish cooking in the sauce). Using a slotted spoon, transfer beef to a plate. Repeat with remaining beef mixture. Wipe out pot.
- Heat 2 Tbsp. extra-virgin olive oil in same pot over medium. Add onion and remaining 1½ tsp. Diamond Crystal or ¾ tsp. Morton kosher salt. Cook onion, stirring often with a wooden spoon, until softened and starting to turn golden, 6–8 minutes. Add ½ tsp. crushed red pepper flakes, ¼ tsp. ground cinnamon, and reserved garlic, and cook, stirring, 30 seconds.
