The Best Relish I've Ever Had image

This is the relish recipe I remember from my childhood. Light green in color, and unbelievably good on hot dogs, you won't be disappointed. It's an easy recipe for beginners, even if you have never canned a thing in your life.

7 large English cucumbers
4 large sweet onions, peeled
¼ cup pickling salt
3 cups white sugar
½ cup all-purpose flour
1 teaspoon ground turmeric
1 teaspoon ground ginger
1 teaspoon celery seed
3 cups distilled white vinegar
1 cup water
4 (1 pint) canning jars with lids and rings

Steps:

  • Grate the cucumbers and onions into a large bowl using the large holes of a box grater. Sprinkle the pickling salt over the top. Cover tightly, and allow to rest at room temperature overnight.
  • Squeeze as much liquid as possible out of the cucumber mixture; set aside. Whisk together the sugar, flour, turmeric, ginger, and celery seed. Heat the vinegar and water in a large, heavy pot over medium-high heat. Whisk in the sugar mixture until smooth. Stir in the cucumber mixture. Bring to a boil and cook, stirring frequently, until thickened, about 15 minutes.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the relish into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process pint jars for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

500 g cabbage ((coarsely chopped. 4 cups / 1 pound))
600 g bell peppers ((mixed colours, finely chopped. 4 cups / 1 1/4 lbs))
250 g onion ((finely chopped. 2 cups / 9 oz / 2 medium))
4 tablespoons pickling salt
2 litres water ((lukewarm. 8 cups / 64 oz))
1 litre white vinegar ((5% acidity or higher. 4 cups / 32 oz))
200 g sugar ((white. 3/4 cup / 6 oz))
3 tablespoons mustard seed
2 tablespoons celery seed
1 tablespoon allspice ((whole))
1 tablespoon cloves ((whole))
1 stick cinnamon ((10 cm / 4 inch, broken into pieces))

Steps:

  • Prep the cabbage, onion and bell pepper (free free to use a food processor, but use the pulse button so you don't purée it.)
  • Put into a large bowl.
  • Dissolve salt into water.
  • Pour salt water over veg mixture. (If more water is needed to cover, add more.) Let stand for an hour on the counter or table, covered.
  • Drain, rinse and drain again, squeezing out excess liquid.
  • Put into a large pot with the vinegar down to and including the celery seed. Add spice bag, if using.
  • Cover the pot, bring to a boil, then lower to a simmer for 20 to 25 minutes, until thickened to your liking.
  • Discard spice bag, if used.
  • Pack hot into quarter-litre (1/2 US pint) jars or half-litre (US pint) jars.
  • Leave 2 cm (1/2 inch) headspace for either size jar.
  • Debubble, adjust headspace.
  • Wipe jar rims.
  • Put lids on.
  • Process in a water bath or steam canner.
  • Process either size jar for 15 minutes; increase time as needed for your altitude.
  • Best after at least a month of jar time.

2 teaspoons vegetable oil
1/2 small red onion, thinly sliced
1 large clove garlic, smashed
Kosher salt
1/4 head red cabbage, thinly sliced
1/2 cup apple cider
2 tablespoons apple cider vinegar
1 teaspoon sugar
Freshly ground pepper
1/4 small jicama, peeled and grated
2 tablespoons beet horseradish, drained
2 tablespoons chopped fresh dill

Steps:

  • Heat the oil in a medium saucepan over medium heat. Add the onion, garlic and 1 teaspoon salt and cook, stirring occasionally, until the onion is soft but not brown, about 5 minutes. Add the cabbage, cider, vinegar, sugar, and pepper to taste. Cover and simmer until the cabbage is tender, about 20 minutes.
  • Mix in the jicama, beet horseradish and dill; season with salt and pepper. Cool to room temperature. Serve with grilled sausage (left).

RED PEPPER AND CABBAGE PICKLE



Red Pepper and Cabbage Pickle image

My grandmother always made this to eat as a side salad with sandwiches or cold meat. I have seen similar recipes called Amish Pickled Coleslaw. It is a little extra work with the soaking but it is a nice change from other pickle or relish recipes. Add a jalapeno pepper to each jar if you like heat.

2 heads cabbage, finely shredded
3 tablespoons salt
4 cups water
4 cups vinegar
1 ½ cups white sugar
1 cup vegetable oil
1 tablespoon ground turmeric
1 tablespoon celery seed
1 tablespoon mustard seeds
10 onions, chopped
10 sweet red peppers, chopped

Steps:

  • Place cabbage in a large non-reactive bowl or plastic food-safe bucket. Sprinkle salt over cabbage and toss to combine. Cover with plastic wrap or a lid. Let soak in the refrigerator, 8 hours to overnight.
  • Squeeze out liquid from the cabbage; drain.
  • Combine water, vinegar, sugar, oil, turmeric, celery seed, and mustard seeds in a large pot; bring to a boil. Stir in drained cabbage, onions, and red pepper. Bring back up to a boil. Reduce heat and simmer until onions are very tender, about 45 minutes.
  • Sterilize 6 quart jars and lids in boiling water for 5 minutes. Pack cabbage mixture into hot, sterilized jars, filling to within 1 inch of the top. Run a clean knife around the insides of the jars to remove any air bubbles. Top with lids and screw on rings.
  • Place a rack in the bottom of a large pot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water if necessary to cover jars by 1 inch. Bring the water to a rolling boil, cover the pot, and process for 25 minutes.
  • Remove the jars from the pot and place onto a cloth-covered or wood surface, several inches apart, until cool. Press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

Make use of unripe green tomatoes from your garden at the end of the season. Eat this delightful relish fresh, or put it away and try it at your next barbecue.

6 medium (about 2 pounds) green tomatoes, cored and cut up (about 4 cups chopped)
0.5 pound cabbage, cored and cut up (about 3 cups chopped)
3 medium green sweet peppers, seeded and cut up (about 2-1/4 cups chopped)
2 medium red sweet peppers, seeded and cut up (about 1-1/2 cups chopped)
1 large onion, cut up (about 1 cup chopped)
2 tablespoon pickling salt
1.25 cup sugar
2 teaspoon mustard seed
1 teaspoon celery seed
0.5 teaspoon ground turmeric
1.25 cup cider vinegar
0.5 cup water

Steps:

  • Use a food processor to finely chop green tomatoes, cabbage, green and red sweet peppers, and onion, processing a portion at a time, using several on/off turns of the processor. (Or, finely chop by hand.) Place vegetables in a large bowl. Sprinkle with the 2 tablespoons pickling salt; stir well. Cover and chill overnight. Rinse well in colander under running water; drain.
  • In a large pot stir together sugar, mustard seed, celery seed, and turmeric. Stir in vinegar and water. Bring to boiling, stirring to dissolve sugar. Stir in vegetables. Return mixture to boiling, stirring frequently. Remove from heat. Ladle hot relish into hot, sterilized half-pint or pint canning jars, leaving a 1/2-inch head-space. Wipe jar rims and adjust lids. Process in boiling water canner for 5 minutes for half-pints or 10 minutes for pints (start timing when water begins to boil). Store sealed jars up to 3 months. Makes 6 to 7 half-pints or 3 to 4 pints (eighty-four 1-tablespoon servings).

1 PC. Large head Red Cabbage
1/8 cup Kosher salt
1/2 cup brown sugar
1/8 cup mustard seeds
4 cups white vinegar
1 T. whole cloves
1 T. whole allspice
1 T. peppercorns
1 T. celery seed
1 PC. stick cinnamon - broken in half

Steps:

  • Cut cabbage in half, remove the core and then shred the red cabbage using a knife or mandolin.
  • Layer the cabbage in a bowl covering each layer with a bit of the salt.
  • Let stand 24 hours covered.
  • Rinse the cabbage and then drain the cabbage to get most of the water out on a paper towel or colander. This might take a few hours.
  • Prepare 4 pints and one 1/2 pint jars by sterilizing them and then raw pack each jar with the now as dry as possible red cabbage.
  • Pack them leaving 1 inch headspace. Prepare your lids and rings.

1 small white cabbage (about 1 1/2 pounds), cored and finely shredded (about 7 cups)
2 medium red peppers, seeded and cut into 1/4-inch dice
2 medium yellow onions, peeled and cut into 1/4-inch dice
2 tablespoons coarse salt
1 1/2 teaspoons whole black peppercorns
1 teaspoon whole allspice
1 bay leaf
1 one-inch cinnamon stick
1/2 teaspoon whole cardamom pods
1/4 star anise
1 1/4 cups apple-cider vinegar
1 cup light-brown sugar, firmly packed

Steps:

  • In a nonreactive container, combine cabbage, peppers, and onions. Sprinkle with salt, and toss to combine. Cover, and refrigerate overnight.
  • Remove cabbage mixture from refrigerator, and drain, discarding liquid. Rinse cabbage mixture with cold water, and drain again. Transfer cabbage to a large saucepan. Place spices (allspice, bay leaf, cinnamon stick, cardamom pods, and star anise) in a square of cheesecloth, and tie with kitchen twine. Add sachet to cabbage mixture. Combine vinegar and sugar in a liquid-measuring cup. Pour over cabbage mixture, and stir to combine. Bring to a boil. Reduce heat to simmer, and cook, stirring occasionally, for 20 minutes. Remove and discard sachet.
  • Ladle relish into jars. Cool on a wire rack to room temperature. Cover, and refrigerate for up to 2 weeks.

MOTHER'S CABBAGE RELISH

This is one of my mother's favorite recipes. It could be served with any type of meal, but we like to have it with pork and barbecue. The use of a food processor will make preparation easy in shredding the cabbage.

1 1/2 teaspoon(s) prepared horseradish

Steps:

  • Cut cabbage in half and core. Shredded cabbage, carrots and bell pepper to size of grain of rice. Best thing to do this with is food processor.
  • Mix Cabbage, carrots, bell pepper & horseradish with mayonnaise.
  • Add vinegar and continue to stir until blended.
  • Add salt, black pepper, & sugar. stir until blended. Seal in lidded containers...quart jars with lid is ideal for this. Refrigerate till well chilled. Stir before serving. This is good on grilled hamburgers and hot dogs.
