2 tablespoons vegetable oil
2 pork chops
½ large head cabbage, quartered
2 onions, cut into 8 wedges
2 tart apples, cored and chopped
2 cups water
2 cloves garlic, crushed
2 teaspoons Worcestershire sauce
1 ½ teaspoons salt
½ teaspoon black pepper
½ cup water
2 tablespoons flour

Steps:

  • Heat the oil in a large skillet over medium-high heat. Cook the pork chops in the hot oil until well-browned on each side, about 10 minutes per side.
  • Add the cabbage, onion, apple, 2 cups of water, garlic, Worcestershire sauce, salt, and pepper to the skillet; bring to a boil, reduce heat to medium-low, and place a cover on the skillet. Cook at a simmer until the pork chops are completely tender, 45 minutes to 1 hour.
  • Remove the pork and vegetable mixture from the skillet, leaving as much of the liquid in the skillet as possible. Whisk the water and flour together in a small bowl. Raise the heat under the skillet to medium-high. Pour the flour mixture into the remaining liquid in the skillet. Cook, stirring constantly, until the gravy thickens and begins to boil. Reduce heat to low and continue to simmer an additional 5 minutes. Pour the gravy over the pork and vegetable mixture.

1/2 medium head cabbage, shredded
1 medium onion, thinly sliced

2 bay leaves
2 tablespoons butter

1/2 teaspoon pepper

Steps:

  • In a large skillet, cook and stir the pork in oil over medium heat until no longer pink; remove the keep warm. In the same skillet, saute the cabbage, onion, garlic and bay leaves in butter until vegetables are tender. Discard bay leaves. Stir in pork, salt and pepper.

1/2 medium Yukon Gold potato, peeled and diced medium
1 tablespoon extra-virgin olive oil
1/2 small yellow onion, diced small
1 garlic clove, minced
1/2 pound ground pork
2 teaspoons fresh thyme leaves, plus small sprigs for topping
1 1/2 teaspoons chopped fresh sage
2 teaspoons all-purpose flour, plus more for working
2 tablespoons golden raisins (optional)
2 tablespoons toasted pine nuts (optional)
1 tablespoon sherry vinegar
Coarse salt and ground pepper
Dough for Pork Empanadas with Thyme
1 large egg

Steps:

  • Set a steamer basket in a pot with 2 inches boiling water. Add potato, cover, and cook until tender, 10 to 15 minutes. In a large skillet, heat oil over medium. Add onion and garlic; cook, stirring occasionally, until onion softens, 5 to 7 minutes. Raise heat to high and add pork, thyme, and sage; cook, breaking up meat with a spoon, until pork is no longer pink, about 4 minutes. Add flour; cook, stirring, until blended, about 30 seconds. Add raisins (if using) and 2 tablespoons water; cook until thickened, about 1 minute. Remove from heat and stir in potato, pine nuts (if using), and vinegar. Season filling with salt and pepper and let cool.
  • Preheat oven to 400, with racks in upper and lower thirds. On a floured surface, divide dough in half and roll each piece to an 1/8-inch thickness. Using a 6-inch cookie cutter or plate as a guide, cut out 8 circles. Place 1/4 cup filling on half of each circle, leaving a 1/2-inch border. Brush edge of dough with water; fold top half over filling. Press edges to seal, then crimp firmly with a fork.
  • Transfer empanadas to two baking sheets lined with parchment. In a bowl, beat egg with 1 tablespoon water. Brush empanadas with egg wash and top with thyme sprigs. Bake until golden brown, 30 to 40 minutes, rotating sheets halfway through.

CHILI PORK EMPANADAS WITH AVOCADO DIPPING SAUCE



Chili Pork Empanadas with Avocado Dipping Sauce image

2 tablespoons grapeseed oil
1/4 pound pork tenderloin, cut into small cubes
1 tablespoon chili powder
Salt and freshly cracked black pepper
3 scallions, sliced
1/4 cup chopped cilantro leaves
2 chipotles, diced
1 cup crumbled queso fresco
2 (9-inch) pie rounds
2 eggs, beaten
2 tablespoons butter
6 shallots, sliced
1 ripe avocado, halved, pitted and flesh chopped
1/4 cup olive oil
1/4 cup red wine vinegar
1/2 cup sour cream
Salt and freshly cracked black pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • Add the oil to a large saute pan over medium-high heat. Season the pork with chili powder, salt and pepper, to taste, and quickly sear for 2 minutes. Remove from the pan to a bowl and cool slightly. Add the scallions, cilantro, chipotles and queso fresco and mix well.
  • Roll out the pie rounds on a lightly floured surface and using a 3-inch biscuit cutter, punch out rounds of dough. Put about 2 tablespoons of the filling, off-center, on each dough round. Brush the edges of the dough with beaten egg. Fold the dough over the filling and crimp the edges with a fork. Arrange them on a half sheet tray lined with parchment paper and brush the tops with remaining beaten egg. Bake until nicely browned, about 13 to 15 minutes. Remove the empanadas from the oven and arrange them on a platter. Serve with the dipping sauce.
  • Dipping Sauce:
  • In the same pan the pork was cooked in, add the butter. Turn the heat to high and add the shallots. Cook the shallots until nicely caramelized, about 4 to 5 minutes. Add the shallots, avocado, olive oil, red wine vinegar and sour cream to a blender. Season with salt and pepper, to taste, and puree until smooth and velvety. Transfer to a serving bowl and serve with the empanadas.

350g plain flour
1 egg
50g butter
3 tbsp sunflower oil
juice 1 orange
milk , for brushing
1 tbsp olive oil
1 shallot , finely chopped
150g lean minced pork
150g curly kale , roughly chopped
2 tsp smoked paprika
50g raisin
50g toasted pine nuts
2 tbsp clear honey
100g flavoursome cheese such as mature Gruyère, diced

Steps:

  • For the filling, heat the oil in a large pan and cook the shallot for a few mins until beginning to soften. Add the pork and stir-fry for 3-4 mins then add the kale and paprika, cover tightly and simmer gently for 20 mins until the pork and cabbage are both tender. Stir in the raisins, pine nuts and honey, season and leave to cool.
  • Meanwhile, place the flour, egg, butter, sunflower oil and some salt in a food processor. Add the juice and whizz together to make a smooth, soft dough. Wrap in cling film and chill.
  • Heat the oven to 190C/170C fan/ gas 5. Shape the dough into 12 balls then roll each one out to make a 12cm round. Stir the cheese into the cold filling then divide it between the rounds. Fold each in half to enclose the mixture then, using your fingertips, crimp or twist the edges to neatly seal. Can be chilled for up to 12 hrs.
  • Transfer the empanadas to a non-stick baking sheet, brush with a little milk and bake for 20-25 mins until golden.
