  • Cut cabbage into 8 wedges; place on a double thickness of heavy-duty foil (about 24x12 in.). Spread cut sides with butter. Sprinkle with onion, garlic salt and pepper. , Fold foil around cabbage and seal tightly. Grill, covered, over medium heat until tender, about 20 minutes. Open foil carefully to allow steam to escape.

This is an easy side dish that we can't seem to get enough of once the grill starts firing in the summer. We use one large metal baking dish just for cabbage, that way none of the others get ruined on the grill.

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil grate.
  • Arrange the cabbage wedges into the bottom of a large metal baking dish. Pour the water into the dish. Place a teaspoon of butter on each cabbage wedge. Season liberally with garlic powder, seasoned salt, and pepper. Cover the dish with aluminum foil.

Steps:

  • Preheat an outdoor grill for medium-high heat.

1 head of green or red cabbage (green is a little less bitter)
Extra virgin olive oil (EVOO)
Sea salt and pepper
Dried herbs: choose from thyme, rosemary, or caraway seeds
1 cup balsamic vinegar
2 TBS raw honey
1 TBS tamari or soy sauce
1 tsp ground ginger

Steps:

  • Heat the grill to high.
  • Slice the cabbage into one inch thick rounds or steaks. You can cut the head in half down through the core first and then slice. Coat both sides with EVOO, salt & pepper, and the dried herb of choice.
  • Place the cabbage slices on the grill and close the top. Cook for 10 minutes until edges are crispy and inner leaves are tender. Depending on the size of your grill, you will likely have to do this in batches. Keep cooked slices warm in a low oven.
  • You can serve as is or rough chop the cabbage and top with an Asian inspired glaze drizzled over the it. See the glaze recipe below.
  • Start this approximately 8 minutes before grilling the cabbage.
  • In a small saucepan, mix the vinegar, honey, tamari, and ginger. Bring to a boil and then turn down to a slow simmer. Cook until reduced to the point where the glaze coats the back of a spoon, stirring occasionally. This will take approximately 18 minutes.
  • Drizzle the warm glaze over the chopped, grilled cabbage and serve.
  • This cabbage side dish pairs nicely with thinly sliced and grilled pork and grilled fruit, such as peaches or figs. The glaze can go over all components. This is a lovely summer dinner to enjoy outdoors with a glass of prosecco.

Roasted Cabbage Steaks are an easy, flavorful side you can eat with so many things. Just slice a head of cabbage then bake or grill it to crispy perfection!

1 small head green cabbage (any dark, loose leaves removed)
1/4 cup extra virgin olive oil
2 cloves garlic (minced)
1 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/3 cup raw pecan halves or walnut halves (optional)
1 small lemon (halved (optional but very good))
For serving: grated Parmesan (highly recommended) (chopped fresh herbs, such as thyme or parsley (optional))

Steps:

  • Preheat oven to 400 degrees F. Generously coat a rimmed baking sheet with nonstick spray and set aside.
  • Cut off the bottom (root) end of the cabbage and place it on a cutting board sitting up so that the flat end is on the cutting board. Cut top to bottom into 3/4- to 1-inch thick slices. Place on the prepared baking sheet. If you have more slices than fit on your baking sheet without touching, divide them between two baking sheets.
  • In a small bowl, whisk together the olive oil, garlic, salt, and pepper. Brush over one side of the cabbage, then flip the cabbage over and brush the other side. Roast the cabbage for 26 to 28 minutes, or until crispy at the edges and tender in the center. (If you are using one pan, roast it on the center rack; if two, use the the upper and lower-third racks.) Halfway through the baking time, rotate the pan(s) 180 degrees; if you are using two pans, switch their positions on the upper and lower racks at this point too. No need to flip the cabbage over. Don't worry about any extra crispy, dark leaves around the very outsides; they'll taste incredible.
  • While the cabbage bakes, toast the pecans in the oven at the same time: spread the pecans onto a small, ungreased baking sheet. Toast them in the oven with the cabbage until fragrant and the center of a pecan is light tan when broken in half, about 8 minutes, tossing them once halfway through. DO NOT WALK AWAY during the last several minutes of baking. Nuts love to burn the second you do. Remove the pecans from the oven and transfer immediately to a cutting board (if you leave them on the hot pan and they are super toasted already, they may burn). Let cool, then roughly chop.
  • Sprinkle the roasted cabbage with Parmesan and fresh herbs. Squeeze the lemon over the top, then finish with the chopped pecans. Serve hot.

Steps:

  • Place the slices of bacon onto a large, cold pan. Place on the stove and turn to medium-low heat. Fry the bacon for 8-10 minutes, until crispy, flipping as needed.
  • Meanwhile, cut the cabbage into 3/4-in (2 cm) thick slices.
  • In a large resealable plastic bag, combine the olive oil, lemon juice, sea salt, and black pepper.
  • Remove the bacon from the pan and set aside to drain, leaving behind the bacon fat in the pan. Add the minced garlic and saute for about a minute, until fragrant.
  • Let the pan with bacon fat cool for 5-10 minutes. When the bacon fat has cooled enough to not melt the plastic, pour the bacon fat (along with the sauteed garlic) into the plastic bag. Scoop any remaining garlic with a spatula and add it in. Seal and mix well to form the marinade.
  • Add the sliced cabbage steaks to the marinade bag. Coat well. Refrigerate for at least 30 minutes.
  • Preheat the grill at medium heat.
  • Grill cabbage steaks for about 4-8 minutes on each side, until tender and crispy on the edges.
  • To serve, top with cooked bacon and parsley for garnish (optional).
  • Preheat the oven to 425 degrees F (218 degrees C).
  • Grease a large baking sheet well. (You can line with foil or parchment paper if you prefer. Arrange the cabbage steaks in a single layer.
  • Roast cabbage steaks in the oven for about 30-35 minutes, until tender and crispy on the edges.

I solve all three with this recipe. The grilled cabbage turns out sweet every time. It's easy to make, and it's a cool new way to prepare cabbage beyond cole slaw. I hope you get a chance to try it!

1 green cabbage
2 tablespoons extra virgin olive oil
1 clove garlic, minced
Kosher salt
Freshly ground black pepper
¼ small red or yellow onion, peeled and thinly sliced
1 teaspoon chopped fresh rosemary or thyme, optional

Steps:

  • Preheat the grill to medium heat.
  • Place the cabbage on a cutting board and carefully cut in half. Keep the core and stem intact. Cut each cabbage half into 4 wedges for a total of 8 wedges.
  • Place 4 of the wedges on a large piece of aluminum foil (large enough to wrap around the wedges). Place the remaining 4 wedges on another large piece of foil.
  • Meanwhile, combine the olive oil and garlic in a small bowl. Stir to combine. Use a pastry brush to coat all sides of each wedge with the oil mixture. (Don't be afraid to get your hands a bit messy here.) Sprinkle each wedge with kosher salt and pepper, and top with the onion slivers and rosemary, as desired.
  • Seal each packet with the foil. Cut two more large pieces of aluminum foil and wrap each packet with a second layer of foil.
  • Place on the grill and close the lid. Grill until the bottoms caramelize and the cabbage is fork tender, 25 to 28 minutes. (Open carefully.)
