FRIED CABBAGE AND KIELBASA
This recipe works well for many occasions. This is also the type of recipe that you can add to or build on to make your own. If you aren't too crazy about the taste of cabbage, keep in mind that the onion, bacon drippings, and kielbasa seems to tone down that cabbage-y taste a bit, and you can also add other things or spices to tone it down.

Stir bacon, salt, and pepper into cabbage mixture; cook until cabbage is wilted, 3 to 5 minutes more. Stir kielbasa into cabbage mixture, reduce heat to low, cover the skillet, and simmer until cabbage is lightly golden and tender, about 1 hour.

Steps:
- Prepare the vinaigrette by adding the olive oil, vinegar, mustard, garlic powder, salt, and some freshly cracked pepper to a bowl or jar. Whisk or shake the jar until the ingredients are combined, then set the vinaigrette aside.
- Slice the kielbasa into medallions or half-rounds and add them to a large skillet (12" or larger) or a large, wide-bottomed pot, along with the olive oil. Sauté the sausage over medium heat until the pieces are well browned.
- While the sausage is browning, finely dice the onion. Once the sausage has fully browned, add the onions and continue to sauté until the onions are soft and transparent.
- While the onions are sautéing, chop the head of cabbage into 2-inch by 1/2-inch wide strips. Add the cabbage to the skillet or pot along with a pinch of salt and pepper. Continue to sauté until the cabbage is tender (check the thickest white pieces for tenderness). To help the cabbage soften, add a few tablespoons of water to create steam within the pot or skillet. Let the water evaporate as you sauté the cabbage.
- Once tender, drizzle the mustard vinaigrette over the skillet, starting with just half of the prepared amount. Stir to coat the kielbasa and cabbage in the vinaigrette, taste, and add more if needed. Serve warm.

- Using your largest skillet or pot, fry bacon until almost cooked, 5-7 minutes. Chop your bacon to create big enough pieces that can be easily pierced with a fork. Remove some of the bacon fat from the pan, leaving a few tablespoons behind, if desired.
- If I am only using a half a pound of bacon I usually do not remove any excess grease. If I use a pound of bacon I do. I take a few pieces of paper towel, scrunch them up into a ball and soak up some of the grease and discard the paper towel.
- Add chopped kielbasa. Stir until cooked. By cooking the bacon first, and then your kielbasa, you will have the tastiest cabbage on earth, I believe.
- Remove some fat if necessary, leaving a few tablespoons to cook your cabbage. I remove the excess bacon grease with a few pieces of paper towel scrunched up in a ball. I used to just pour the excess grease into a jar I kept handy by the stove, just like my grandmother taught me to!

- Wash the cabbage under running water. Even though the inside is usually clean (the outer leaves protect the inside), you might want to clean it anyway. Remove the tough outer leaves and discard them. Separate the inner leaves and wash them under running water.
- Peel an onion and dice it finely. Finely chop the garlic with a knife. Cut kiełbasa sausage into chunks (rounds or cubes). Chop the bacon into pieces.
- Add bacon and kiełbasa pieces to the deep frying pan (or a cooking pot with a thick bottom). Cook over a low heat for a few minutes. There should be enough fat rendering, so there is no need to add any more. If you feel that it’s too dry, add a little bit of lard or oil.

- Peel and chop the potatoes, rinse the potatoes and place them in a medium-size glass bowl. Sprinkle the potatoes with ½ teaspoon salt and ¼ teaspoon black pepper, stir or toss with your hands. Microwave the potatoes for 4 minutes, stir and microwave an additional 2-4 minutes until fork tender.
- While the potatoes are cooking, warm a large skillet over medium-high heat. Add the oil and as soon as it's shimmering, add the onions. Saute for a few minutes, until the onion is barely tender and lightly browned. Add the garlic and the kielbasa. Cook while stirring frequently, for about 3 minutes. When the potatoes are tender, add them to the skillet. Toss to coat, adding a small additional drizzle of oil only if needed. Spread the potatoes across the pan and allow them to cook for 2-3 minutes, stir and continue cooking until lightly browned.
- Add the cabbage and sprinkle with 1/4 teaspoon salt and the remaining 1/4 teaspoon pepper. Toss to combine, add 2 tablespoons water to the skillet and reduce heat to medium-low. Cover with lid. Cook for about 2 minutes, until the cabbage is bright green and barely wilted. Taste and add additional salt, only if needed. Enjoy!
