KIELBASA. CABBAGE, POTATO & CARROT 1 POT MEAL
Well, since we all know how the Corona virus has effected food shopping, I couldn't find corned beef and so found the Polish kielbasa and it worked just fine. It is more like a soup but that's perfect for these still cool days. The splash of cider vinegar gives it a nice "kick."

Steps:
- 1. In a large pot, over med-high heat, pour in the olive oil, onions and garlic. Saute for 2 mins. Add Kielbasa. Saute 3 mins. Add potatoes and carrots. Add broth. Cover and bring to a boil.
- 2. Lower heat to med-low and add the cabbage, celery salt, black pepper and thyme. Bring to a simmer for 30-40 mins or until veggies are softened.
- 3. Splash in the cider vinegar and let cook another 10 mins.

Steps:
- Slice the potatoes into approximately 1-2 inch pieces.
- Put these in a large pot and cover in water with about an inch over the potatoes.
- Let the potatoes cook alone for 20-25 minutes at medium heat it will stay on that for the entire cooking process.
- Slice cabbage into eighth and add to the pot with the potatoes.
- Let these two cook together for 10 minutes.
- Cut kielbasa into about inch thick slices and again -- add to the pot.
- Let the three cook for another 20 minutes.
- Tada! It is done, turn off the heat and let it sit for about five minutes as it will be hot.

- Swirl a small amount of olive oil into a large skillet.
- Slice or dice kielbasa into bite size pieces.
- Add kielbasa, onion, garlic and carrots to oil.
