BUTTERY BAKED RED POTATOES



Buttery Baked Red Potatoes image

It's amazing how the simplest recipes can be some of the tastiest. My MIL fixed this for dinner one night and I was hooked! I hope you will be too.

Number Of Ingredients 5

1 large sweet onion (I use yellow or vidalia)
3 -4 tablespoons butter
6 -8 medium red potatoes
kosher salt
ground black pepper

Steps:

  • Preheat oven to 350.
  • Melt butter in large skillet.
  • Chop onion, and add to melted butter; saute until caramelized (There may still be butter pooled at the bottom of the pan- that's okay!).
  • Meanwhile, chop potatoes into thirds; cook in boiling water until just tender.
  • Drain cooked potatoes and place in greased 13x9 casserole.
  • Top evenly with caramelized onions and butter.
  • Sprinkle with kosher salt and fresh ground black pepper to taste.
  • Bake at 350 for 15-20 minutes.

16 medium red potatoes (about 4 pounds), quartered
1 cup butter, cubed
6 to 8 garlic cloves, minced
2 teaspoons salt
1 teaspoon pepper

Steps:

  • Place potatoes in a 6-qt. stockpot; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 15-20 minutes or until tender. Drain; return to pot., Meanwhile, in a small heavy saucepan, melt butter over medium heat. Heat 5-7 minutes or until light golden brown, stirring constantly. Stir in garlic; cook 30 seconds longer or until butter is golden brown. Add to potatoes; sprinkle with salt and pepper. Toss gently to combine.

2 lb red potatoes, small
1 stick butter
4 Tbsp fresh chives
dash(es) salt and pepper

Steps:

  • 1. Bring a medium sized pot to a boil !
  • 2. Wash and cut potatoes in half, place in boiling water, boil for 15mins, Drain.
  • 3. While potatoes are in the strainer, place the butter into the hot pan, and melt, replace potatoes back into their original pan, add chives and salt and pepper.
  • 4. Replace lid and hold firmly on the pot, flipping the pot back and forth in the pan, so the butter and seasonings cover and coat every last potato. Place potatoes in a serving dish ( or simply leave in the pot, less dishes anyways) and Serve immediately,I hope this side dish makes its way to your table very soon! Enjoy!! Tip** can change this side dish up some what, can add Bacon,*lets face it, what could go wrong with bacon!* and or minced garlic(add to the water while boiling potatoes, or add garlic powder to the finished product (1/2 tsp)

2 lbs small Red Bliss potatoes
2 tablespoons butter, melted
1 tablespoon chopped fresh marjoram
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Use a vegetable peeler and remove the band of skin around the center of each potato, either in a straight line or squiggly line. Tip: I find it [much] easier to use a sharp paring knife to remove the peel.
  • Place the potatoes in a large pot and add enough water to cover. Add some salt to the pot and bring the water to a boil.
  • Reduce heat and simmer the potatoes for 20 minutes or until the potatoes are fork tender but not mushy.
  • Drain.
  • In serving bowl, toss the potatoes with the melted butter, marjoram, salt and pepper.
