1 1/3 cups flour
1/4 cup sugar
1/2 cup butter, softened
3/4 cup sugar
2 eggs
2 tablespoons flour
1/4 teaspoon baking powder
3 tablespoons lemon juice
powdered sugar, for sprinkling optional

Steps:

  • For crust, combine 1 1/3 cups flour, 1/4 cup sugar, and 1/2 cup butter. Beat at low speed, 2 to 3 minutes.
  • Press on bottom of ungreased 8 inch square baking pan.
  • Bake at 350 degrees for 15 to 20 minutes.
  • For filling, combine 3/4 cup sugar, eggs, 2 tbsps. flour, baking powder and lemon juice. Beat at low speed 1 to 2 minutes.
  • Pour over hot crust.
  • Continue baking for 18 to 20 minutes or until filling is set.
  • Sprinkle with powdered sugar; cool.
  • Cut into bars.

It's tough to top a classic lemon bar, but we've done it! We kept the tender, buttery crust and bright filling of the original, and made a few improvements. For our luscious lemon layer, we employed a unique double-cooking method. Simmering first on the stovetop like lemon curd allows us to add butter, which balances the tart and sweet elements and adds a richer, smoother texture.

Nonstick cooking spray
1 3/4 cup all-purpose flour (see Cook's Note)
1/4 cup cornstarch
1/4 cup confectioners' sugar
1/2 teaspoon kosher salt
2 sticks (1 cup) cold unsalted butter, cut into small pieces
4 large eggs
2 large egg yolks
1 3/4 cup sugar
1/3 cup all-purpose flour
1/4 teaspoon kosher salt
1 cup fresh lemon juice (from 6 to 8 lemons)
1 teaspoon finely grated lemon zest
1 stick (8 tablespoons) cold unsalted butter, cut into small pieces
1 tablespoon confectioners' sugar, for dusting

Steps:

  • Preheat the oven to 350 degrees F. Line a 9-by-13-inch baking pan with foil, leaving an overhang on 2 sides; spray lightly with nonstick cooking spray. Set aside.
  • For the crust: Add the flour, cornstarch, confectioners' sugar and salt to the bowl of a food processor and pulse 10 times until combined. Add the cold butter and pulse until the mixture looks like coarse sand, about 30 times. (The dough will not come together in one mass.) Sprinkle the mixture evenly in the prepared pan and lightly pat it down. Bake, rotating the pan halfway through, until golden brown around the edges, 20 to 25 minutes.
  • For the filling: Combine the eggs, yolks, sugar, flour, salt and lemon juice in a medium saucepan. Whisk continuously over medium heat, occasionally scraping down the sides and edges of the pan with a rubber spatula, until simmering and thickened, 4 to 5 minutes. Remove from the heat and whisk in the lemon zest and butter until combined.
  • Lower the oven temperature to 300 degrees F. Pour the filling over the crust and bake until just set, 12 to 15 minutes.
  • Place on a wire rack to cool to room temperature, then refrigerate until cold, about 2 hours.
  • Use the foil overhang to lift the bars from the pan. Remove the foil and slice into squares. Dust with confectioners' sugar just before serving.

1/2 cup butter
2 eggs, beaten
1 cup sugar
1/2 cup coconut
1 teaspoon vanilla
2 cups graham wafer crumbs
1/2 cup chopped walnuts (or pecans)
1 1/2 cups mini marshmallows (white is preferred)
1/4 cup butter
2 cups icing sugar (confectioners)
2 tablespoons lemon juice
1 tablespoon milk or 1 tablespoon cream

Steps:

  • For Base:.
  • Melt butter over low heat in medium saucepan.
  • Add beaten eggs, sugar and coconut.
  • Cook over very low heat, stirring frequently, until thickened, about 10 minutes.
  • Remove from heat and stir in vanilla.
  • Add graham crumbs and nuts and stir to combine.
  • Fold in marshmallows.
  • Spread in a buttered 9 inch square pan.
  • Chill until firm, about 45 minutes, then frost with Icing.
  • Lemon Buttercream Icing:.
  • In medium bowl, beat butter until soft and fluffy with hand mixer.
  • Alternately blend in sugar and lemon juice gradually.
  • Add milk or cream and continue beating until icing is white and creamy.
  • You may need to add a little more lemon juice to get the right consistency. You want a fairly thick, but spreadable, creamy icing.
  • Spread icing on cooled base.
  • Refrigerate another 30 minutes until icing is set, and cut into 1 inch squares.

1 c all purpose flour
1/4 c powdered sugar
1/2 c butter, softened
2 eggs
3/4 c granulated sugar
3 Tbsp lemon juice
2 Tbsp all purpose flour
1/4 tsp baking powder
additional powdered sugar for dusting

Steps:

  • 1. Stir together flour and powdered sugar; cut in butter until mixture clings together. Pat into 8-inch square pan. Bake for 10-12 minutes until just golden brown.
  • 2. Beat eggs; add sugar and lemon juice. Beat until thick and smooth. Add 2 Tbsp. flour and baking powder. Pour over baked layer. Bake at 350° for 20-25 minutes. Sift powdered sugar over.
  • 3. Cool, cut into bars. Makes 16 (2x2") squares.

I love this recipe! I've made them for friends, neighbors, parties and everyone loves them. They turn out great every time, and the flavor is light, sweet, slightly tart...and super delicious! Its' a really recipe to double and use a 13x9" pan. I also will make these and cut them into smaller squares to add to my Christmas cookie trays. It's a "win-win" any time of the year.

CRUST:
1/2 cup(s) butter
1 1/3 cup(s) flour
1/4 cup(s) sugar
FILLING:
2 - eggs
3/4 cup(s) sugar
2 tablespoon(s) flour
1/4 teaspoon(s) baking powder
3 tablespoon(s) lemon juice

Steps:

  • Preheat oven to 350'F.
  • In mixing bowl, combine all crust ingredients. Mix on low speed until blended, and will stick together when pressed.
  • Pat crust into a greased (I use Pam) 8" square pan. Build up the sides about 1/2" around pan. Bake near the center of the oven for 12-14 minutes or until edges turn lightly browned.
  • Meanwhile, prepare filling by whisking all filling ingredients together. When crust is ready, pour the filling over it while still hot, and return to the oven for about 20 minutes or until set. I run a sharp knife all around the edges before it cools off, it loosens it up.
  • Dust with confectioner's sugar, and let cool completely. Cut into squares. You may want to dust them again...I do!
