½ cup shortening
1 cup peanut butter
2 eggs
1 ½ cups milk
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking soda
2 teaspoons cream of tartar
1 pinch salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a cupcake pan with paper liners, or grease and flour cups.
  • In a large bowl, mix together the brown sugar, shortening and peanut butter until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, cream of tartar, baking soda and salt; stir into the batter alternately with the milk. Spoon into the prepared muffin cups.
  • Bake for 15 to 20 minutes in the preheated oven, until the top of the cupcakes spring back when lightly pressed. Cool in the pan for at least 10 minutes before removing to a wire rack to cool completely.

1 1/4 cups (163g) all-purpose flour
1 1/4 tsp baking powder
1/4 tsp salt
6 tbsp (84g) unsalted butter, room temperature
3/4 cup (155g) sugar
2 tbsp (30ml) vegetable oil
1 1/2 tsp vanilla extract
2 large eggs
1/2 cup plus 2 tbsp (150ml) milk
1 cup (224g) unsalted butter, room temperature
4 cups (460g) powdered sugar
1 ½ tsp vanilla extract
2-3 tbsp (30-45ml) water or milk
Pinch or two of salt

Steps:

  • Preheat oven to 350°F (176°C) and prepare a cupcake pan with cupcake liners.
  • Combine the flour, baking powder and salt in a medium sized bowl and set aside.
  • Add the butter, sugar, oil and vanilla extract to a large mixer bowl and beat together until light in color and fluffy, about 2-3 minutes. Do not skimp on the creaming time.
  • Now it's time to add the eggs. Add the eggs one at a time, mixing until mostly combined after each. Scrape down the sides of the bowl as needed to be sure all ingredients are well incorporated.
  • Add half of the dry ingredients to the batter and mix until mostly combined.
  • Slowly add the milk and mix until well combined. The batter will look curdled, but that's ok.
  • Add the remaining dry ingredients and mix until well combined and smooth. Scrape down the sides of the bowl as needed to be sure all ingredients are well incorporated. Do not over mix the batter.
  • Fill the cupcake liners about 3/4 full and bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.
  • Remove cupcakes from the oven and place on a cooling rack to cool.
  • Add the butter to a large mixer bowl and beat until smooth.
  • Carefully pour in about half of the powdered sugar and mix until smooth and well combined.
  • Add the vanilla extract and 1-2 tablespoons of the water or milk and the salt to the frosting and mix until well combined.
  • Add the remaining powdered sugar and mix until smooth. Add additional milk or water as needed to get the right consistency.
  • Pipe the frosting onto the cupcakes. I used Ateco tip 844.
  • Cupcakes are best when stored well covered for 2-3 days.

FOR CUPCAKES:
1 box yellow cake mix
3 eggs
1/2 cup oil
1 cup vanilla creme soda
1/4 cup brown sugar
1 (3.4 oz pkg) dry instant butterscotch pudding mix
FOR FROSTING:
½ cup (1 stick) butter (at room temperature)
2 Tbsp butterscotch sundae sauce
1/4 cup brown sugar
1/2 tsp butter extract
1 tsp vanilla extract
3½-4 cups powdered sugar
1/4 cup heavy cream or milk (if needed should frosting be too thick)
Additional butterscotch sauce or caramel sauce for drizzling

Steps:

  • Preheat oven to 350 degrees F. Line 2 muffin pans with about 18 paper liners; set aside.
  • In a large bowl, combine the cake mix, eggs, oil, vanilla creme soda, brown sugar and dry pudding mix. Beat with an electric mixer for about 2 minutes or until combined. Portion the batter evenly among the muffin cups, filling about 3/4 full.
  • Bake the cupcakes for approx. 15-17 minutes or until a toothpick inserted near the center comes out clean or with moist, not wet, crumbs. Cool completely.
  • In the bowl of a stand mixer, combine the butter, butterscotch sauce, brown sugar, butter and vanilla extracts with the paddle attachment until creamy, about 30 seconds. Add in the powdered sugar, one cup at a time, until frosting is light and fluffy, streaming in the heavy cream if needed (if frosting is too thick).
  • Pipe the frosting onto the cooled cupcakes. If piping the frosting as high as in my photos, you may want to double the recipe. Drizzle with caramel or butterscotch sauce.

1/2 cup vegetable oil (or canola)
1 cup light brown sugar*
2 large eggs*
2 tsp vanilla extract
1/2 cup peanut butter* (do not use natural, homemade or whipped)
1 1/3 cup all purpose flour (AKA plain flour)
1/2 tsp baking soda
1/4 tsp salt
1/2 cup milk*
1/4 cup sour cream*
1 cup unsalted butter (softened)
3/4 cup peanut butter*
3 cups powdered sugar (sifted)
1 teaspoon vanilla extract
2-3 tablespoon cream or milk
peanut butter candies (for decoration)

Steps:

  • Preheat the oven to 350F degrees.
  • Line 2 muffin tins with muffin papers (you'll end up with about 16-18 cupcakes total).
  • In a large bowl beat together the oil, sugar, eggs, and vanilla. Or whisk by hand
  • Beat (or whisk) in the peanut butter, ensuring that there are no lumps of brown sugar.
  • In a separate bowl, whisk together the flour, baking soda and salt.
  • In a liquid measuring cup, gently whisk together the sour cream and milk with a fork.
  • Carefully whisk about 1/2 of the flour mixture into the peanut butter mixture, followed by about 1/2 of the sour cream and milk mixture. Repeat the process until everything is mixed together. Its important to do this step by hand to avoid over mixing the batter.
  • Spoon into the prepared cupcake liners filling each about 2/3 to 3/4 full. You should end up with about 16 cupcakes total. If you only make 12 cupakes, then you've filled the liners too full.
  • Bake for 20-24 minutes, or until an inserted toothpick comes out clean.
  • In a large bowl beat the butter until fluffy.
  • Then beat in the peanut butter until smooth.
  • Add in the vanilla extract and 2 cups powdered sugar. Beat together on low speed until combined.
  • Beat in the rest of the powdered sugar about 1/2 cup at a time, alternating with 1 tablespoon of cream until the desired sweetness and consistency is reached.
  • Frost with a knife or piping bag (I used a piping bag and 1M tip) and decorate with peanut butter candies.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 12 cup muffin tin with paper bake cups. Sift together the flour, baking powder, salt, and 1 teaspoon cinnamon.
  • In a large bowl, cream together 1/3 cup butter and white sugar until light and fluffy. Add the egg and vanilla and mix well. Pour in the flour mixture alternately with 3/4 cup milk; beat well. Fill the prepared muffin cups evenly, about half full.

¾ cup unsalted butter (room temperature)
3-4 cups confectioners sugar ((powdered sugar))
2 teaspoons pure vanilla extract

Steps:

  • Preheat oven to 350 degrees F. Line a cupcake pan with 12 liners.
  • In a medium-sized bowl, whisk together flour, baking powder and salt.
  • In a large mixing bowl whisk the sugar and melted butter until smooth (mixture will be gritty). Whisk in eggs, then sour cream, milk and vanilla extract until combined.
  • Slowly add in dry ingredients and stir until completely incorporated. Batter will be thick.

  • Add confectioners sugar, vanilla and milk. Turn mixer up to high speed and beat for 3 minutes. If mixture is too thick, add more milk, a teaspoon at a time. If too thin, add more confectioners sugar, a little at a time.
  • Frost cooled cupcakes using a spreader or a piping bag. Depending on how much frosting you use on each cupcake, there may be some leftover.

  • Preheat the oven to 350°F (177°C). Line a 12-cup muffin pan with cupcake liners. Line a second pan with 2 liners – this recipe makes about 14 cupcakes. Set aside.
  • Using a handheld or stand mixer fitted with a paddle attachment, beat the butter and sugar together on high speed until smooth and creamy, about 2 minutes. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. Add the eggs and vanilla extract. Beat on medium-high speed until combined, then beat in the sour cream. Scrape down the sides and up the bottom of the bowl as needed. With the mixer on low speed, add the dry ingredients until just incorporated. With the mixer still running on low, slowly pour in the milk until combined. Do not over-mix. The batter will be slightly thick.
  • Pour/spoon the batter into the liners. Fill only 2/3 full to avoid spilling over the sides. Bake for 19-22 minutes, or until a toothpick inserted in the center comes out clean. For around 30 mini cupcakes, bake for about 11-13 minutes, same oven temperature. Allow the cupcakes to cool completely before frosting.
