APPLE BUTTER BREAD RECIPE
Steps:
- Preheat oven to 350 degrees F. Prepare a 9 X 5 loaf pan with baking spray.
- Cream together the butter and sugar.
- Add the eggs and half of the buttermilk. Beat until smooth.
- In another bowl whisk together the flour, salt, baking soda, cinnamon, cloves, and nutmeg.
- Add half of the flour mixture to the wet ingredients in the bowl. Beat, and then add the rest of the buttermilk. Beat again, and then add the rest of the flour mixture. Beat until just combined.
- Stir in the apple butter until the batter is an even color.
- Pour the batter into the prepared pan.
- Bake 55-65 minutes, checking the center with a toothpick that comes out clean.
- Let the cake cool and turn it out of the pan before glazing.

- In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in buttermilk and vanilla. Combine the flour, baking powder, salt and baking soda; gradually add to creamed mixture. Fold in apples and walnuts. Pour into a greased 9x5-in. loaf pan., For topping, combine the sugar, flour and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle over batter. , Bake at 350° for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

- Heat oven to 350°F Coat a 9 x 5 x 3-in. loaf pan with nonstick spray.
- Streusel: Stir ingredients in a medium bowl with a fork until crumbly. Set aside.
- Cake: Stir flour, sugar, baking powder and salt in a large bowl until blended.
- Beat eggs in a medium bowl with a fork just to blend. Stir in butter and milk to combine. Add to flour mixture and fold with a rubber spatula just until dry ingredients are moistened. Spoon half the batter into prepared pan; spread to cover bottom. Sprinkle with 1/2 the apples and 1/2 the streusel. Spoon on remaining batter, spreading to cover. Sprinkle with 1/2 the streusel, the remaining apples and then the remaining streusel.
- Bake 1 hour 10 minutes to 1 hour 20 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes. Run a knife around sides; invert cake onto rack. Turn streusel side up and let cool completely.

- Make the cake: Preheat oven to 325. Coat an 8-inch springform pan with cooking spray; dust with flour, tapping out excess. Place on a rimmed baking sheet. Spread apples in pan; set aside.
- Whisk together flour, sugar, baking powder, salt, milk, oil, and eggs in a medium bowl until smooth. Pour over apples. Bake until set and pale golden brown, about 40 minutes.

- Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x5-inch loaf pan with cooking spray.
- Combine apples, 2 tablespoons sugar, and 1 teaspoon cinnamon together in a bowl; mix until coated. Mix brown sugar and remaining cinnamon in a second bowl. Whisk flour and baking powder together in a third bowl. Set aside.
- Mix remaining white sugar and butter together in a medium bowl with an electric mixer until smooth and creamy. Beat in eggs, 1 at a time, until blended in. Add vanilla extract. Stir in flour mixture until smooth. Add milk and mix until smooth.
- Pour about 1/2 of the batter mixture into the prepared loaf pan. Add 1/2 half of the apple mixture, and lightly press the apples into the batter. Sprinkle 1/2 of the brown sugar mixture onto the apples. Pour the remaining batter into the pan, add the remaining apples, and brown sugar mix. Press the apples lightly into the top batter.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour and 15 minutes. Remove from the oven and let cool for 20 minutes.
- While loaf cools, pour confectioners' sugar into a bowl and slowly add in milk. Stir until completely mixed, adding more milk if you want your glaze thinner. Drizzle onto the cooled loaf.

BUTTERY APPLE LOAF
I walked in my kitchen while this was baking and I thought I would melt and run down in my shoes. It smelled SOOO good in there...the apples..the cinnamon...HEAVEN! I cannot take credit for this, however. I got it from an e-zine I get in the email. I immediately got in my car and bought the ingredients, came home, and whipped this up. Since I'm diabetic, I'll be sending it off to Pop's for the shop monkey's (the shop mechanics/my taste-testers) approval. If they like it, it's a keeper!

- Preheat oven to 350°. Spray the largest loaf pan you have. (original recipe calls for a 9 x 5, but I used a 12" and it was almost too small!).
- Stir together the strudel topping; set aside.
- Beat the eggs lightly with a fork to blend. Stir in butter and milk. Add flour and sugar, stir with a spatula until moist (batter will be lumpy).
- Layer 1/2 the batter, apples and strudel: repeat layers. Bake until a toothpick comes out clean, about an hour. Cool ten minutes in the pan; remove and let cool completely. Serve with ice cream.

- Beat the 2 eggs and 200 grams of caster sugar together in a large mixing bowl with an electric whisk or free standing mixer for a couple of minutes until pale and slightly thick. If you are mixing by hand then mix/beat until slightly thick and pale too. It may take you longer than a couple of minutes.
- Add in the 150 grams of stewed apples and mix again for 30 seconds or so. Tip in 200 grams of plain flour, 1 tsp of ground cinnamon,1 tsp baking powder, ½ tsp of bicarbonate of soda and mix together thoroughly.
- Now pour in the melted butter and slowly mix together at first to avoid splashing the butter and then mix again faster to ensure the butter is well incorporated.
