1/2 cup sugar
1 cup brown sugar
1/2 cup shortening
1 egg
1 teaspoon baking soda
1 teaspoon vanilla
1 cup sour milk (or Buttermilk)
2 cups flour
2 cups rhubarb, chopped
cinnamon-sugar mixture, to sprinkle top of cake

Steps:

  • Preheat oven to 350 degrees; grease 9x13 inch pan.
  • Cream together both sugars and shortening.
  • Add egg and mix together.
  • Mix in ALL remaining ingredients and pour into prepared pan.
  • Sprinkle with a little cinnamon and sugar.
  • Bake for 35 minutes or until toothpic comes out clean.

This is a superb cake that I make for brunches, or whenever I have fresh rhubarb on hand. Makes a lovely presentation, too!

¼ teaspoon ground cinnamon
2 teaspoons white sugar
1 cup milk
1 tablespoon lemon juice
½ cup shortening
1 ½ cups white sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
2 cups chopped fresh rhubarb
⅓ cup brown sugar
⅓ cup white sugar
1 teaspoon ground cinnamon
1 cup chopped walnuts
2 teaspoons white sugar, or to taste
¼ teaspoon ground cinnamon, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch fluted tube cake pan.
  • Mix 1/4 teaspoon cinnamon with 2 teaspoons sugar in a small bowl. Pour mixture into greased cake pan and tilt the pan, tapping to coat inside of pan with cinnamon sugar. Pour out any loose cinnamon sugar.
  • Mix lemon juice into milk in a large measuring cup and let stand about 5 minutes to sour. Mix shortening and 1 1/2 cups sugar together in a large bowl until smooth; beat in egg and vanilla extract. Whisk flour, baking soda, and salt in a separate bowl. Gradually add dry ingredients to moist ingredients, alternating with sour milk, to make a smooth batter.
  • Stir rhubarb into batter. Pour half the batter into prepared cake pan. Stir brown sugar, 1/3 cup white sugar, 1 teaspoon cinnamon, and walnuts together in a bowl; sprinkle nut mixture over batter. Pour remaining batter over nut mixture.
  • Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, 45 minutes to 1 hour. Cool in pan for 10 minutes before removing to a serving platter. Stir 2 teaspoons white sugar with 1/4 teaspoon cinnamon and sprinkle sugar mixture on top of cake.

2 cups brown sugar (packed)
1/2 cup butter
2 eggs
1 cup buttermilk
1 teaspoon baking soda
2 cups flour
2 cups of raw chopped rhubarb
1/2 cup brown sugar (packed)
1 teaspoon cinnamon
0.5 (11 ounce) package butterscotch chips

Steps:

  • Cream sugar and butter. Add eggs, buttermilk, soda, flour and rhubarb, mix as you add each ingredient.
  • Pour into a sprayed 9X13 pan.
  • Combine all ingredients for topping and sprinkle over cake batter.
  • Bake 40-45 minutes at 350 degrees.
  • Serve with a dollop of cool whip!

  • Place butter in a small pot over a medium heat and melt stirring occasionally. Continue cooking, stirring often, until the milk solids separate and sink to the bottom (they will look like dark flecks) and the butter foams, turns a golden brown and smells nutty (5-7 minutes). Watch this process very carefully as the butter can burn.
  • Remove from the heat and stir in the vanilla (it will bubble up) then scrape the butter, solids and all, into a small dish. Place in the freezer until about half of it is solid (15-20 minutes).
  • Preheat oven to 170 °c and grease and line two 20 cm round tins. If you only have one 20cm tin then make (and bake) a half batch of the cake mixture at a time. (NB: Weigh the browned butter and use half per batch as it no longer weighs the same as when it was in its original un-browned state).
  • Cream the chilled brown butter and sugar until light and fluffy then beat in the eggs one at time.
