3/4 cup unsalted butter, softened
2/3 cup dark brown sugar
2/3 cup sugar
2 tablespoons light corn syrup
1 tablespoon cider vinegar or 1 tablespoon white vinegar
2 large eggs
1 tablespoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
2 cups unbleached all-purpose flour
1 cup granola cereal
1 1/2 cups butterscotch chips

Steps:

  • Preheat oven to 375°F; lightly grease two baking sheets.
  • In a mixing bowl, cream the butter, sugars, corn syrup, and vinegar together; then beat in the eggs.
  • Beat in the vanilla, salt, baking powder, and baking soda.
  • Stir in the flour, granola, and butterscotch chips.
  • Drop the dough by the tablespoonful onto the prepared baking sheets.
  • Bake for 10 minutes, until they are just set; the centers may still look a bit underdone.
  • Remove them from the oven; transfer to a rack to cool.

I had made a no-bake bar similar to the base of this recipe and decided to try the baked version. Very tasty and easy. I did not do the cream cheese topping but plan to do it a later date. The recipe is from Chipits and was in a collection of recipe cards they distributed a few years ago.

1 cup butterscotch chips
1/4 cup milk
1 egg
2 1/2 cups granola cereal
1/4 cup sunflower seeds
1/2 teaspoon cinnamon
1 cup butterscotch chips
4 ounces cream cheese, softened
1/2 cup icing sugar

Steps:

  • Melt 1 cup butterscotch chips with milk over warm water until smooth. Remove from heat.
  • Stir in egg, then cereal, sunflower seeds, and cinnamon.
  • Press firmly and evenly into greased 9-inch square pan.
  • Bake at 350 degrees F. for 15 to 20 minutes or until golden.
  • Cool on rack.
  • Melt 1 cup butterscotch chips over hot water. Cool.
  • Beat cream cheese until creamy. Blend in icing sugar and melted butterscotch chips; beat until smooth.
  • Spread evenly over base.
  • Chill until firm.
  • Cut into bars. Store in airtight container in refrigerator.

3 cups quick-cooking oats
1 (14 ounce) can sweetened condensed milk
2 tablespoons butter, melted
1 cup flaked coconut
1 cup sliced almonds
1 cup miniature butterscotch chips
1 teaspoon butterscotch extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
  • In a large bowl, mix together the oats, sweetened condensed milk, butter, coconut, almonds, butterscotch extract and butterscotch chips with your hands until well blended. Press flat into the prepared pan.
  • Bake for 20 to 25 minutes in the preheated oven, depending on how crunchy you want them. Lightly browned just around the edges will give you moist, chewy bars. Let cool for 5 minutes, cut into squares then let cool completely before serving.

It always seems like if you plant even one zucchini plant, you have enough zucchini the neighbors. So, what to do with all of that zucchini? It always amazes me that zucchini can taste so good in baked goods.

1 cup(s) butter softened
2 cup(s) packed brown sugar
2 - eggs
2 tablespoon(s) pure vanilla extract
1 - orange rind grated
3 cup(s) finely grated zucchini (unpeeled)
4 cup(s) flour
1 1/2 teaspoon(s) baking soda
1 1/2 cup(s) butterscotch chips
3 cup(s) granola cereal

Steps:

  • In a large bowl, mix together the butter and sugar. Mix in the egg, vanilla, orange rind, and zucchini. Add in the flour and baking soda. Mix in the granola cereal. Then mix in the butterscotch chips. Grease a cookie sheet and put teaspoonfuls of the dough onto the sheet. Bake in a 350 degree oven for 12 to 15 minutes.
