BUTTERSCOTCH BIRD NESTS
Part candy, part cookie, these candy nests are easy to make and the crunchy, salty pretzels are delicious with the sweet butterscotch coating. Kids can help by breaking the pretzels, scooping the nests and arranging the eggs in them.

Steps:
- Heat a large, dry saute pan over medium heat. Add the almond slivers and toast, shaking the pan every minute, until they are fragrant and begin to darken in areas, 3 to 5 minutes.
- Line two baking sheets with parchment paper. Melt the almond bark in a microwave-safe bowl according to package instructions. Stir in the butterscotch chips. Microwave another 30 seconds, and then stir until smooth.
- Stir in the almonds, pretzels and coconut, coating evenly. Drop the mixture, 1 tablespoon at a time, onto the prepared baking sheets. Nestle in 1 or 2 of the mini eggs. If the mixture starts to cool and become too firm to work with, microwave for 30 seconds and stir gently. Let the nests cool at room temperature until solid.
EASTER NESTS / HAYSTACKS
I'm always trying to make recipes just a little healthier for my family. These Haystacks are made with Fiber One Bran Cereal instead of chow mien noodles. These are super easy, so cute, and if you don't tell your friends and family they won't even know you gave them their daily dose of fiber in this yummy treat ;o)

Steps:
- Cover a cookie sheet with waxed paper. Melt butterscotch or chocolate chips and oil in a double boiler, saucepan or in the microwave. Stir until smooth. Remove from heat. With a spatula stir in cereal until coated. Drop by spoonfuls of the mixture onto the waxed paper to make a tiny haystack. Top with robin eggs. Refrigerate for 15 minutes. Makes about 24 depending on how big or small you make the stacks.

CHOCOLATE BUTTERSCOTCH CANDY (BIRD'S NESTS)
These are a childhood favorite. These cookies/candies were always on my Mema's Holiday Cookie List. The mixture of butterscotch chips, chocolate and chow mein noodles is so satisfying. A perfect dessert to introduce kids to the kitchen with.

Steps:
- 1. Heat chocolate and butterscotch chips in a double boiler or in the microwave about 4 minutes or until the chips are smooth.
- 2. Stir in chow mein noodles until they are thoroughly coated.
- 3. Use a tablespoon to place spoonfuls of the mixture on a waxed paper lined baking dish
- 4. Allow the candy to cool until the chocolate/butterscotch has hardened
- 5. These are also known as bird nests. A fun suggestion is to place the mixture on a waxed paper making a small indentation in the center of the candy to serve as a "nest". Place colorful jelly beans or robin's eggs candy into the indentation and voila! Bird's nests!
BUTTERSCOTCH BIRD NESTS
My aunt introduced me to these fun little snacks. We made them for Easter and it was a perfect treat, not to mention a hit with everyone! The recipe can be tweaked to however you like your nests, and it is all based on personal preference.

- Prepare two sheet pans with parchment paper (to transfer easily to the refrigerator later), or place a sheet parchment paper on your counter top before beginning.
- In a microwave safe bowl, add butterscotch chips and peanut butter. Microwave in 30 second increments, stirring until melted and smooth. Alternatively, melt over a double boiler on the stove top.
- In a separate bowl, combine chow mein noodles and coconut flakes. Add butterscotch mixture and stir until evenly coated.
- Working quickly (your mixture will solidify within about 10 minutes), spoon mixture in heaping mounds on your prepared parchment paper (about 2-3 tablespoons per mound). Form into a round shape and hollow out the center to make space for your eggs. Top each mound with 2 to 3 eggs while butterscotch is still wet.
