Remove from the heat and stir in 3 tablespoons cheese and nutmeg, to taste. Season with salt and pepper. Cool completely.

BUTTERNUT SQUASH RAVIOLI WITH SAGE BROWN BUTTER SAUCE
A delicious dish that your family and friends will think you spent all day making. This recipe is a compliation of several different recipes with my own twist. I've tried to eliminate some fat and added some personal favorites like amaretti cookies and pancetta.

Steps:
- Directions:.
- In a sauté pan, over medium heat cook 5 slices of pancetta until crispy. Remove the pancetta from the pan and set aside.
- In the same pan, melt ½ tablespoon of butter. Add the shallots and sauté for 1 minute. Add the mashed butternut squash and cook until the mixture is slightly dry, about 2 minutes. Stir in ¼ cup chicken broth and continue to cook about 3 minutes. Remove from the heat and stir in 3 tablespoons cheese and nutmeg, to taste. Season with salt and pepper. Cool completely (before putting the filling into the ravioli).
- Make pasta, roll and cut into 3-inch rectangles. Place a teaspoon of the filling in the center of each pasta/wonton rectangle. Fold in half and seal completely.
- Start boiling a pot of salted water.
- In a sauté pan, melt the remaining 5 tablespoons of butter. Add the sage to the butter and continue to cook until the butter starts to brown. Add ¼ cup of chicken broth and cook another 10 minutes. Remove from the heat.
- Add the pasta to the pot of boiling salted water. Cook until al dente. This will take about 5 minutes or until the pasta floats. Tip: Even if they are floating, taste test the pasta portion of the ravioli before you drain the pot.
- Crumble the pancetta.
- Remove the pasta from the water and drain well.
- Single Servings: Place some of the pasta in the center of each serving plate. Spoon the butter sauce over the pasta. Sprinkle each plate with remaining cheese and parsley.
- Family Style: Put half of the raviolis in a big serving platter, pour half of the butter sauce (6 pieces of sage) and half of the pancetta over the ravioli; than repeat with remaining half of ingredients. Sprinkle remaining cheese and garnish with parsley.
- Give each person an amaretti cookie to crumble on their pasta (and an extra to snack on).
- Note:
- I'm still working on 'perfecting' this recipe.
- You can roast the squash or microwave it. If you microwave it use the 'fresh vegetable' setting. It takes me about 10 min, but every microwave is different. You can peel the squash or cook it in it's skin, it's doesn't make a difference. You may want to put it in for a couple minutes before you slice it in half.
- To speed up cooling the mixture spread it out on a plate and put it in the refrigerator.
- If using a Kitchen Aid pasta roller, roll out to Level 4. The 5th setting is a little thin.
- While you're stuffing/folding the ravioli start the water boiling and the butter sauce. Every so often swirl around the butter to prevent it from burning.
- Add some oil to the boiling water to prevent the ravioli from sticking.
- The wontons will boil quicker than the pasta.
- If you cook the ravioli a day or two later: Make sure you dust them with flour right after you finish your folding. The next day, don't let the ravioli sit on the counter while boiling the water, they'll get mushy; keep them in the fridge until the last moment.
- If you have left over pasta from cutting your ravioli and extra squash filling....boil the pasta, drain it and mix in the squash. It makes a great snack/lunch.

- Preheat oven to 350 degrees F (175 degrees C).
- Place the squash cut side up on a baking sheet. Place 1 tablespoon butter in the hollow of each half. Sprinkle with salt and pepper to taste. Cover the squash with a sheet of aluminum foil tucking in the edges.

- Scoop the cooked squash into a bowl, and mash until smooth. Mix in the allspice, nutmeg, cinnamon, and Parmesan cheese until well blended. Season to taste with salt and pepper.
- Fill a deep pot with lightly salted water and bring to a boil.

- Drop the ravioli into the boiling water, and cook for 3 to 5 minutes, or until tender. Remove, drain, and keep warm until sauce is prepared.

Steps:
- Cut the neck off of squash; reserve base for another use. Trim the stem off the neck then peel. Resting neck on cut base, cut in half lengthwise, creating two lobes. Trim off outer rounded side of each piece to create two 3/4"-thick steaks (about 6 oz. per steak); reserve trimmed off sides for another use.
- Heat oil in a large heavy skillet over medium. Cook squash steaks, turning every 3 minutes, until deeply browned on both sides and fork-tender, about 15 minutes. Add butter, sage, and garlic to skillet, tilt pan toward you so that butter pools on one side, and use a large spoon to continually baste steaks with butter. Cook, basting, until butter is no longer bubbling, smells nutty, and is beginning to brown, about 1 minute. Remove from heat and stir in lemon juice; season with salt and pepper.
- Transfer squash steaks to plates and spoon sauce over.

Steps:
- Preheat the oven to 375 degrees F. Spray a baking pan with nonstick cooking spray and place the squash in the pan.
- Heat 1 tablespoon of the butter in a medium skillet over medium heat. Add the onion and cook until tender and translucent, 6 to 8 minutes. Transfer the onion to the pan with the squash.
- Return the skillet to the heat and add the remaining 5 tablespoons butter. Heat until the butter melts and begins to brown, 3 to 4 minutes. (The butter will begin to separate and sizzle. Take care to let it gently brown rather than burn. If the butter burns, throw it out and try again.) Stir in the sage. Drizzle the butter mixture over the squash and sprinkle with the salt and pepper. Use a wooden spoon to toss the mixture until the squash is evenly coated with the browned butter.
- Bake until the squash is tender and beginning to brown around the edges, about 1 hour. Remove from the oven and increase the temperature to 400 degrees F. Top the squash with the crackers and cook until the crackers are nicely golden brown, an additional 20 minutes.

- Agnolotti, ravioli, tortellini….it’s all so good. Stuffed pastas allow you to really show your creativity and personality. In addition to controlling the flavor of the stuffing, you can play with the ratio of pasta to stuffing, and the sauce. Yes, it does take a bit of work, but I think it’s worth it. Especially if you make several servings at once and freeze the extra – then you can take it out whenever you want. Agnolotti, are really just ravioli that are folded to create the pocket, as opposed to using two pieces of pasta with the stuffing sandwiched between. This recipe for butternut squash agnolotti is great in the fall as the leaves are changing colors, and it starts getting cold outside. A great accompaniment is a brown butter sauce seasoned with sage, and then garnished with some toasted almonds. Ingredients for Butternut Squash Agnolotti
- Pasta sheets Cooked butternut squash – a cup Ricotta cheese (although I used goat cheese in the video – you can use any creamy style cheese) Parmesan cheese – a quarter to a third cup Olive oil – a few tablespoons Butter – a stick Sage – 5 – 7 leaves
- Recipe Overview & Keys to Success The only complicated part of this recipe is that it requires a few distinct steps that can each be a bit time consuming, but they are not that hard. The most important of which is making the pasta. If you don’t want to make your own pasta there are a couple short cuts. Option one, is to find a store that sells fresh pasta sheets. Many specialty Italian markets will carry pasta sheets, and they make a good alternative to making your own. Option two, is to buy wonton wrappers at your local grocery store. While wonton wrappers (or skins) are pretty much available anywhere, I think they make a pretty poor substitute. The thickness is usually not right, and the texture is a bit chewier than fresh pasta. But if that’s all you have, you can follow the same process described below. Butternut Squash Stuffing This stuffing is very simple, and lets the squash shine. Feel free to doctor it up a bit, if you’d like.
- Peel the butternut squash, and dice into cubes about 1 inch on each side; you’ll need about a cup to make about 20 Agnolotti. Toss the pieces with olive oil, salt and pepper and roast in a 375 degree over, until very tender Add the squash, ricotta cheese (use about ½ the amount cheese as you have squash), add about 2 tablespoons of finely grated parmesan cheese, and about 2 tablespoons of butter to a food processor and blend until smooth. If needed, add a bit of water or olive oil to loosen the mixture enough to get a smooth creamy texture; and put the blended mixture in a bowl
