5 tablespoons unsalted butter
6 cups 1/2-inch butternut squash cubes
2 cups chopped leeks, white and light green parts only
½ cup chopped carrots
½ cup chopped celery
2 small Granny Smith apples, cored and diced
1 ½ teaspoons dried thyme
½ teaspoon dried sage
5 cups chicken stock
1 cup apple cider
salt to taste
5 slices cooked bacon, crumbled

Steps:

  • Melt butter in a large pot over medium-high heat. Saute butternut squash, leeks, carrots, and celery in hot butter until vegetables are softened, 10 to 12 minutes.
  • Stir apples, thyme, and sage into the squash mixture; pour in chicken stock and cider. Bring mixture to a simmer, reduce heat to low, cover pot with a lid, and cook until vegetables and apples are tender, about 30 minutes. Remove soup from heat and cool slightly, about 10 minutes.
  • Pour soup into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth. Return mixture to pot and season with salt to taste. Garnish individual servings with crumbled bacon.

1 tablespoon unsalted butter
1 medium onion, diced
1 butternut squash (about 2 pounds), peeled, seeded, and chopped
4 red or golden apples, peeled, cored, and chopped, plus 1 apple, finely diced and tossed in lemon juice, for garnish (optional)
2 teaspoons coarse salt
1 1/2 teaspoons ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon ground ginger
1/4 teaspoon cayenne pepper
1/4 teaspoon freshly ground black pepper
2 cups homemade or store-bought low-sodium chicken or vegetable stock
2 1/2 cups water, plus more if needed
1 jalapeno chile, thinly sliced, for garnish (optional)
Sour cream, for garnish (optional)

Steps:

  • Melt butter in a large saucepan over medium heat. Add onion; cook, stirring occasionally, until it begins to soften, about 4 minutes. Add squash, and cook, stirring occasionally, until soft, about 10 minutes.
  • Add apples, salt, cumin, coriander, ginger, cayenne, black pepper, stock, and the water (just enough to cover). Bring to a boil. Reduce to a simmer, and cook until vegetables are very soft, about 30 minutes.
  • Puree in batches in a food processor or blender until smooth, and return to saucepan. Heat over low, thinning with more water if necessary. To serve, ladle into shallow bowls; garnish with diced apples, jalapeno slices, and sour cream if desired.

1/4 cup STAR Extra Virgin Olive Oil
6 cups diced acorn or butternut squash, about 2 1/2 lb.
2 small Granny Smith apples, peeled, cored and diced
1 tsp. dried thyme leaves
1/8 tsp. ground red pepper, or more to taste
4 cups chicken broth
1 cup half and half
Salt and pepper
3/4 cup whipping cream, whipped
Sliced green onion

Steps:

  • In large pot, over medium-high heat, cook onion in olive oil until soft, about 3 minutes, stirring several times. Add squash, apples, thyme and red pepper. Cook, stirring frequently, until squash begins to turn golden around edges, about 5 minutes. Add broth and bring to boil. Reduce heat to low, cover and simmer for 1 hour, stirring several times. Turn off heat, uncover and allow soup to cool about 15 minutes. Transfer about 1/3 of soup to blender and process until pureed. Repeat with remaining soup in two more batches. Return pureed mixture to pot and stir in half and half. Return to simmer. Season to taste with salt and pepper. Serve hot, garnished with whipped cream and a few green onion slices.;

1 yellow onion, chopped
2 inches piece ginger, peeled and grated
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2 butternut squash, about 4 lbs total weight, peeled and cut into chunks
1 tablespoon brown sugar
1/2 teaspoon salt
1/4 teaspoon white pepper
4 cups vegetable broth
1/2 cup sour cream
fresh chives or flat leaf parsley, chopped for garnish

Steps:

  • Saute the vegetables. In a frying pan over medium heat, melt the butter. Add the onion and saute until softened, about 5 minutes. Add the ginger, cinnamon, and nutmeg and saute until fragrant, about 1 minute longer.
  • Cook the soup. Put the squash chunks in the slow cooker and sprinkle with the brown sugar, 1/2 teaspoon salt, and 1/4 teaspoon white pepper. Pour the contents of the frying pan over the squash and add the broth. Cover and cook on the high-heat setting for 3 hours or the low-heat setting for 6 hours.
  • Finish the soup. Using a blender or food processor, working in batches, process the squash mixture to a smooth puree. Return the soup to the slow cooker to keep warn until serving. Season to taste with salt and pepper. Ladle into bowls, garnish with a dollop of the sour cream and chives (or parsley) and serve.

1 large yellow onion, finely chopped
2 shallots, finely chopped
2 granny smith apples
1 butternut squash (about 2 lbs)
6 cups chicken stock or 6 cups prepared broth
1 teaspoon finely chopped fresh rosemary
2 teaspoons finely chopped fresh thyme
1/2 cup half-and-half
salt & freshly ground black pepper
1/2 cup sour cream

Steps:

  • Peel and seed the butternut squash and cut into 2-inch chunks.
  • Peel and core the apples and cut into 2-inch chunks.
  • In a soup pot over medium-high heat, melt the butter.
  • Saute the onion and shallots until softened, about 5 minutes.
  • Add the apples and squash and cook until nicely coated, about 3 minutes longer.
  • Add the stock and rosemary and bring to a simmer. Add the thyme.
  • Reduce the heat to medium and simmer, covered, until the vegetables are very tender, about 25 minutes.
  • Remove from the heat. Using a hand-held or standing blender, puree the soup until smooth.
  • Stir in the half-and-half and season with salt and pepper.
  • Reheat gently over medium-low heat.
  • Ladle the soup into warmed bowls and garnish with the sour cream, using a fork to swirl a zig-zagged pattern.

2 to 2 ½ c. (500 to 624 ml) chicken stock, warmed
½ tsp. finely chopped fresh sage

Steps:

  • In a large saucepan over medium heat, melt the butter. Add the apple and shallot and sauté, stirring occasionally, until softened (5 to 7 minutes). Add the ginger, cinnamon, salt and pepper and sauté until fragrant (about 1 minute). Add the wine, bring to a boil and cook for 1 minute. Add the butternut squash puree, 2 cups of chicken stock and the sage. Bring to a simmer, reduce the heat to medium-low and cook, stirring occasionally, for 20 minutes. Using a blender, puree the soup in batches, then strain through a fine-mesh sieve set over a large saucepan. Add more stock if the soup is too thick. Ladle into warmed bowls and serve immediately. Serves 6.
