Steps:
- Heat the butter and oil in a large frying pan. Add the onions and cook slowly over a low-medium heat, stirring every now and then, for 10-15 mins until golden and soft.
- Meanwhile, put the garlic and half the sage in a saucepan, add the cream and milk, and heat gently, not allowing the mixture to boil, for 5 mins. Remove from the heat and set aside to cool for 10 mins, then fish out the sage and garlic. Stir in the mustard and season well.
- If cooking straight away, heat oven to 180C/160C fan/gas 4. Layer the pumpkin slices, onions, most of the cheese and the infused cream into a large baking dish, finishing with a layer of cream. Once you've used the ingredients up, scatter with the remaining cheese and put the remaining sage leaves on top. Cover the dish with foil and bake for 45 mins.
- Uncover the dish and increase the heat to 200C/180C fan/gas 6. Cook for a further 20-30 mins until golden brown and tender all the way through. Leave to cool for 10 mins before serving.

MERRITT'S BUTTERNUT SQUASH GRATIN
Slightly sweet golden squash is topped with a savory herbed cheese-breadcrumb topping. It's been my signature dish every Thanksgiving for the last 12 years. It takes a bit of work, but it is so, so worth it. Your guests will ask you for the recipe, so be prepared.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- Melt the butter in a large skillet over medium heat. Stir in the onions and garlic; cook until the onions soften and turn golden brown, about 10 minutes. Add the butternut squash and brown sugar. Continue cooking and stirring until the butternut squash begins to brown on the edges, but is still somewhat firm in the center, about 10 minutes more. Scrape the squash into the prepared baking dish, and pour in the chicken broth. Wrap tightly with aluminum foil.
- Bake in the preheated oven until the liquid has been absorbed and the squash is tender, 45 to 50 minutes. Toss together the Gruyere cheese, Cheddar cheese, bread crumbs, thyme, and rosemary in a bowl until evenly combined. Remove the foil from the baking dish, and sprinkle the squash evenly with the cheese mixture. Sprinkle the Parmesan cheese on top. Return to the oven, and bake uncovered for 15 minutes more until the topping is lightly crunchy and brown.

Steps:
- Preheat the oven to 400°F (200°C).
- Thinly slice the parsnips, butternut squash, potatoes, and Kroger Brand Brussels Sprouts on a mandoline or with a very sharp knife. Transfer each vegetable to a separate medium bowl.
- Add ½ cup cream, 1 ounce Parmesan cheese, 1 teaspoon thyme, ½ teaspoon salt, and ¼ teaspoon pepper to each bowl, and toss until the vegetables are well coated.
- Grease a 3-quart baking dish on all sides with the butter. Pour the remaining ½ cup cream into the bottom of the baking dish. Stir in the garlic and leek until evenly distributed, then sprinkle with 1 ounce of Parmesan.
- Arrange the sliced vegetable in the baking dish, alternating between vegetables, by stacking a few slices together and fanning out at an angle in the dish. Continue arranging in rows until the dish is filled, tucking smaller slices into any gaps. Sprinkle more salt and pepper and the remaining ounce of Parmesan over the top.
- Cover the dish with foil, then bake for 25 minutes. Uncover and bake for another 20 minutes, or until the vegetables are tender and the sauce has thickened. Cover again with foil if the top is browning too quickly.
- Remove the gratin from the oven and top with the Gruyère cheese.
- Turn the oven to broil. Return the gratin to the oven and broil for 3-5 minutes, or until browned and bubbling on top. Remove from the oven and let sit for 5-10 minutes.
- Before serving, sprinkle with the remaining ½ teaspoon of thyme.
- Enjoy!

- Preheat oven to 400 degrees F. In a large mixing bowl, toss the butternut squash cubes with the olive oil and garlic till the squash is evenly coated with the oil.
- Spread the squash out on a baking sheet in an even layer. You can line the sheet with aluminum for easier cleanup, if you wish. Sprinkle the squash lightly with salt.Place squash in the oven and let it roast for about 35 minutes, turning once during cooking, till squash is tender but not overly soft.
- Meanwhile, spread the chopped walnuts in an even layer in a small skillet. Toast the walnuts over medium heat, stirring frequently, till they're toasted and fragrant. Be careful not to let the walnuts burn-- as soon as they're toasted, pour them out of the skillet to keep them from browning further.
- In a medium saucepan, melt butter over medium heat. Whisk in the flour, salt, and pepper. Stir to form a thick paste.

- Preheat oven to 400 degrees F. Grease a 3-quart round or oval casserole dish with butter; set aside.
- Pour cream into a medium saucepan and set over medium heat. Stir in onion, garlic, thyme sprigs, bay, sea salt, and pepper. Stirring often, cook until mixture starts to steam. Turn heat to low and steep, stirring occasionally, for 15 minutes. Remove from heat. Fish bay leaves and thyme from cream mixture and reserve. Add Emmentaler and stir until smooth.
- Meanwhile, prep the squash. Halve squash lengthwise. Scoop seeds from the base. Cut squash into even half moons about 1/8-inch thick, ideally with a mandoline slicer. If using a knife, work carefully to keep things thin and even.
- Layer squash in the prepared casserole. Place arch-shaped slices from the base of the squash on the bottom and sides of the dish. Then, using two-thirds of the slices, pick up 6 - 8 of the half moon shaped slices at a time and fan them out in a circle along the edge, using the arch-shaped base pieces to prop them up. Carefully spoon in half of the cream mixture. Fan remaining squash in a circle in the center of the casserole. Tuck reserved bay leaves between squash slices. Carefully spoon remaining cream mixture over top.
