- In a large bowl, dissolve yeast in warm water. Add buttermilk, butter, honey, salt, baking soda, wheat germ and 4 cups flour. Beat until smooth. Gradually stir in enough remaining flour to make a soft dough. , Turn onto a heavily floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a floured surface; divide into thirds. Divide each portion into thirds; shape each into a 12-in. rope. Braid three ropes; pinch ends to seal and tuck under. Place in a greased 9x5-in. loaf pan. Repeat with remaining dough. Cover and let rise until doubled, about 45 minutes. , Preheat oven to 350°. Bake 40-45 minutes or until golden brown. Remove from pans to wire racks to cool.

- Combine buttermilk, butter, and sugar in a mixing bowl. In a separate bowl, combine dry ingredients, including yeast. Whisk dry ingredients together to combine, then add to buttermilk mixture in the mixing bowl. (I use a Kitchenaid Mixer.) Mix ingredients until well combined. I like about a quarter sized amount of dough to be sticking on the very bottom. If your dough looks a bit dry, add in another splash of buttermilk. Once you've achieved a good consistency, mix the dough on low for about 6-7 minutes. (Or knead by hand about 10 minutes.) Proper kneading is critical to great textured homemade bread!
- Once dough is done kneading, cover and let rise in a warm place for about 1 hour; until dough has doubled in size.
- Punch dough down and knead several times. Shape dough (I like to roll mine, then tuck the ends under) and place in a greased bread loaf pan. Place dough back in the warm spot and let it rise for another 30-45 minutes.
- Preheat the oven to 350 degrees F. Bake dough for about 30-35 minutes- until top is golden brown. Let cool and slice.
- *You can substitute regular milk + lemon juice for buttermilk, but you won't quite get the full texture and flavor of this bread. So add buttermilk to the grocery list; you'll love it!

Steps:
- Mix the yeast and water in the bowl of your mixer and let proof for 5-10 minutes.
- Meanwhile, heat the buttermilk and butter over low heat until the butter melts.
- The mixture will look badly curdled- don't worry, that's what happens when buttermilk is heated.
- It will be fine.
- Mix the salt, baking soda and sugar into 1 cup of the flour.
- Pour over the yeast, and mix until thoroughly combined.
- Put the bowl on your mixer with the dough hook attachment, add another cup of flour and mix until the flour is incorporated.
- Keep adding flour until the dough comes together and is no longer sticky.
- Then let the dough knead in the machine 5-10 minutes.
- Take out of the bowl and finish kneading by hand until the dough is smooth.
- Turn into a buttered bowl, cover with plastic wrap, then a towel, and then let it sit to rise until doubled.
- Punch down the dough, divide and shape into 2 loaves, then place in greased loaf pans.
- Set aside for the second rising.
- Heat the oven to 350 degrees F.
- Bake the loaves until done, about 30-45 minutes.

Steps:
- Proof yeast in warm water.
- Place the butter or margarine and buttermilk in a small saucepan. Heat slowly until butter or margarine has melted. Cool to lukewarm.
- Place sugar, salt, baking soda, buttermilk mixture, and yeast in large mixing bowl. Add 3 cups flour one cup at a time, and mix with the dough hook attachment of an electric mixer. Gradually add the remaining flour while continuing to mix. When dough is not sticky, turn out on a lightly floured surface. Knead for several minutes, until the dough is soft and smooth. Place in a greased bowl, and turn once. Allow to rise until doubled in size.
- Punch down the dough. Divide, and shape into 2 loaves. Place in two well greased 8 x 4 inch bread pans. Allow to rise until dough has risen one inch above pans.
- Bake in a preheated 375 degrees F (190 degrees C) oven for 30 to 35 minutes. Loaves are done when nicely brown and hollow sounding when thumped.

I found this recipe in the 2004 Taste of Home Quick Cooking Cookbook.It was submitted to them by Nita Anderson of Florence Alabama.NOTE:I just used the dough cycle on my machine. After removing dough from machine, it was kneaded just a bit then formed into a loaf,placed into a greased loaf pan then covered with a towel.I left it to rise in a warm place for 1 hour. Then preheated my oven to 350 degrees,baked for 35 minutes or until I heard a hollow sound when it was " Thumped "This recipe makes a 1 1/2 pound loaf of very soft bread. Submitted to Food.com ( A.K.A. ZAAR ) on March 28th., 2011.

- Add the yeast, salt, and 2 cups of the flour to the bowl of a stand mixer fitted with the hook attachment. Lightly whisk the ingredients together and set aside.
- Add the sugar, buttermilk and 6 tablespoons of the butter to a small saucepan. Mix and heat over medium heat until mixture is very warm (120 to 130 degrees). The butter does not have to be totally melted. Remove from heat.
- Add the buttermilk mixture to the mixing bowl and beat on low speed just until combined. Increase mixer to medium speed and beat for 2 minutes, scraping down the sides of the bowl with a spatula as needed.
- Add 1 cup of the flour and beat on medium speed for 2 minutes, scraping down the sides of the bowl as needed. Add an additional 1 1/4 cups of flour to the mixing bowl and beat on low speed just long enough to incorporate the flour. Turn the mixer to high and beat with dough hook for about 3 minutes. The dough should be stiff but smooth and elastic and should pull away from the sides of the bowl and cling to the dough hook and center of the bowl.

- In a large bowl or the bowl of a stand mixer, sprinkle the yeast over the lukewarm water and allow to sit until dissolved, about 5 minutes. In a separate bowl, stir the buttermilk, honey, and butter. Once the yeast has dissolved, add the buttermilk mixture and stir to combine. Add 2 cups of flour and the salt and stir to incorporate. Add the remaining flour and knead the dough, either by hand or using the dough hook of the stand mixer set to medium speed, for about 8 minutes or until the dough is smooth and slightly tacky. If after a few minutes the dough is still sticking substantially to the sides of the bowl, add 2 tablespoons of flour at a time until the dough pulls away from the sides of the bowl. Spray a large bowl with baking grease and place the dough inside, covering tightly with a sheet of plastic wrap to rise in a warm spot of your kitchen until doubled in size, about 1-1-1/2 hours.
- Once doubled in size, form your dough into a loaf and place in a greased 9″x5″ loaf pan and cover again with plastic wrap to rise until dough puffs about an inch over the top of the pan, about 40 minutes.
- While the dough is rising preheat the oven to 350 degrees. Once the dough has risen, bake in the oven for about 35-40 minutes, or until the loaf is golden, sounds hollow when tapped on the top, and reaches an internal temperature of 190 degrees. Allow to cool in the pan for 10 minutes and then place on a cooling rack to finish cooling completely.
