BUTTERMILK HONEY BREAD
A tangy and delicious bread. I have gotten compliments on this bread wherever I take it!

Steps:
- In a small mixing bowl, dissolve yeast and sugar in the warm water. Let stand until creamy, about 10 minutes.
- Combine buttermilk, butter, honey and the yeast mixture in a large mixing bowl. Add salt and two cups of the flour. Whisk well to combine. Add the remaining flour, 1/2 cup at a time, mixing well with a wooden spoon after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and supple, about 6 minutes.
- Lightly oil a large mixing bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and put in a warm place to rise until doubled in volume, about 1 hour.
- Preheat oven to 375 degrees F (190 degrees F).
- Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into two equal pieces and form into loaves. Place the loaves into two lightly greased 9x5 inch loaf pans. Cover with a damp cloth and let rise until doubled in volume, about 40 minutes.
- Bake at 375 degrees F (190 degrees C) for about 30 minutes or until the tops are golden and the bottoms of the loaves sound hollow when tapped.

- Set machine on whole wheat medium cycle: at the beep check dough, you may add bread flour or water 1T at a time to adjust consistency of dough.

BUTTERMILK RYE ROLLS
These German rolls are made with buttermilk and rye flour. This makes them soft and moist for a hearty meal.

- Heat the buttermilk to medium warm, don´t boil it.
- Add flour, yeast, sugar and salt to a mixing bowl and blend briefly.
- Add buttermilk to the bowl while mixing.
- Knead for about 10 min. and allow to rise for 30 min. in a warm place.
- Knead dough briefly and shape to a rectangle.
- Cut into 8 pieces and set on a baking sheet lined with parchment paper.
- Slash with a sharp knife and sprinkle lightly with flour.
- Allow to raise for another 20 to 30 min.
- In the meantime, preheat the oven to 400 F and place a large heatproof bowl or pan with about 1-2 cups of water in the oven.
- Bake the rolls for 20 - 25 min.

RYE BREAD
Homemade rye bread made without yeast.

Steps:
- Preheat the oven to 400, and ensure a wire rack is in the middle position. Line a small baking sheet with parchment paper.
- Sift the flours, baking soda and salt into a large bowl.
- Make a well in the center of the flours and pour in all of the buttermilk at once. Stir just until a dough forms.
- Scoop the dough out onto a lightly floured surface. Knead for about 30 seconds to bring it together.
- Using your hands, press the dough into an even flat disk.
- Sprinkle the top of the dough disk with about 2 tablespoons of all-purpose flour.
- Next, make 4 deep slashes into the dough, about two-thirds of the way through. Be careful not to cut all the way through.
- Bake for 30 minutes, and then move the dough to the top rack of the oven. Bake for another 20 minutes to crisp up the surface.
- Let cool on a wire rack completely before serving with salted butter.

- If using a bread machine, load ingredients in order listed and choose a setting that bakes in around 3 hours and 25 minutes.
- If mixing by hand or in a mixer, blend milk, water, sugar, salt, caraway seeds, butter and yeast. You may substitute milk kefir or sour milk or buttermilk powder and additional water for the buttermilk if needed. I usually use milk kefir because that’s what I have on hand.
- Mix until yeast and sugar are dissolved. Add flour cup by cup until a slightly sticky dough forms. Knead for six to eight minutes. Cover and let rise for 20 minutes. Punch down down dough. Let rise again until about double in size.

- Add the yeast, salt, and 2 cups of the flour to the bowl of a stand mixer fitted with the hook attachment. Lightly whisk the ingredients together and set aside.
- Add the sugar, buttermilk and 6 tablespoons of the butter to a small saucepan. Mix and heat over medium heat until mixture is very warm (120 to 130 degrees). The butter does not have to be totally melted. Remove from heat.
- Add the buttermilk mixture to the mixing bowl and beat on low speed just until combined. Increase mixer to medium speed and beat for 2 minutes, scraping down the sides of the bowl with a spatula as needed.
- Add 1 cup of the flour and beat on medium speed for 2 minutes, scraping down the sides of the bowl as needed. Add an additional 1 1/4 cups of flour to the mixing bowl and beat on low speed just long enough to incorporate the flour. Turn the mixer to high and beat with dough hook for about 3 minutes. The dough should be stiff but smooth and elastic and should pull away from the sides of the bowl and cling to the dough hook and center of the bowl.
