BUTTERMILK CHRISTMAS COOKIES

This recipe was developed by my 80 year old German grandfather in his days as a chef at a family restaurant. We make these cookies every year as part of our holiday tradition, and usually have many to give away.

Number Of Ingredients 9

1 cup whole buttermilk
1 teaspoon baking soda
1 1/2 cups sugar
1 cup shortening (butter flavored)
2 large eggs
1/2 cup sour cream
1/2 teaspoon ground nutmeg
2 teaspoons baking powder
4 1/2 cups unbleached flour

Steps:

  • Mix together before starting: buttermilk and baking soda. Mixture will foam up, so put it in a medium sized bowl or measuring cup.
  • Mix sugar and shortening until fluffy. Add eggs. Then sour cream, nutmeg, and baking powder.
  • Alternate buttermilk mixture and flour until well incorporated.
  • Refrigerate dough overnight.
  • Preheat oven to 350 degrees.
  • Roll out dough onto a lightly floured surface. Cut shapes into the dough with cookie cutters of your choice.
  • Line a baking sheet with parchment paper or silicone lining. Bake cookies for 9 - 10 minutes or until lightly done.

These are a soft, delicious, sugar cookie but with a hint of buttermilk. A friend of mine gave this recipe to me years ago and my family loves them so much that I have a hard time keeping them in the cookie jar! You can sprinkle the tops of these with a little granulated sugar just before baking or ice after completely cooled.

1 cup shortening
2 cups white sugar
4 eggs
4 cups all-purpose flour
4 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
1 cup buttermilk
4 teaspoons vanilla extract

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the shortening, and sugar. Beat in the eggs, one at a time, then stir in the vanilla. Combine the flour, baking powder, baking soda and salt, stir into the creamed mixture alternately with the buttermilk. Drop by rounded spoonfuls onto the prepared cookie sheets.
  • Bake for 6 to 8 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1 pinch salt
1/2 cup butter, softened
1 cup sugar
1 egg
1 teaspoon vanilla extract
1/2 cup buttermilk
1/4 cup butter, softened
1 cup powdered sugar
2 tablespoons buttermilk
1/2 teaspoon vanilla extract
finely chopped walnuts, for topping

Steps:

  • For the cookies: Preheat oven to 375 degrees and grease baking sheets. In a medium mixing bowl stir together flour, baking soda, and salt, set aside.
  • In a large mixing bowl with an electric mixer on medium speed cream butter and sugar until fluffy. Beat in egg and vanilla. Gradually add flour mixture alternating with buttermilk and mix just until blended.
  • Drop dough by rounded tablespoonfuls 2 inches apart onto prepared baking sheets. Bake for 10 to 12 minutes. Transfer cookies to cooling racks to cool completley.
  • For the icing: In a small mixing bowl on medium speed cream butter until smooth. On low gradually beat in powdered sugar, alternating with milk, adding more if needed. Add vanilla and beat until smooth and creamy.
  • Spread icing on cooled cookies and sprinkle with walnuts.

1 large egg, room temperature
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour
1/2 teaspoon baking soda

1/2 cup buttermilk
FROSTING:
3 tablespoons butter, softened
3-1/2 cups confectioners' sugar
1/4 cup whole milk
1 teaspoon vanilla extract
1/2 cup finely chopped walnuts, optional

Steps:

  • Preheat oven to 375°. Cream butter and sugar until light and fluffy. Beat in egg and vanilla. In a separate bowl, whisk flour, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition. , Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Bake until edges are lightly browned, 10-12 minutes. Remove to wire racks to cool. , For frosting, combine butter, confectioners' sugar, milk and vanilla; beat until smooth. 1 cup butter, softened
3/4 cup sugar
1 egg
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon ground nutmeg
1/4 teaspoon salt
FROSTING:
1/3 cup butter, softened
2 cups confectioners' sugar
1 teaspoon rum extract
1 teaspoon vanilla extract
2 to 3 tablespoons half-and-half cream
Ground nutmeg

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, nutmeg and salt; gradually add to creamed mixture and mix well. , Divide dough into 14 pieces. Shape each portion into a 12-in. x 1/2-in.-thick rope. Cut ropes into 2-in. pieces. Place 2 in. apart on greased baking sheets. , Bake at 350° for 9-12 minutes or until set and bottoms are lightly browned. Cool for 1 minute before removing to wire racks to cool completely., For frosting, in a small bowl, beat butter until fluffy. Add confectioners' sugar and extracts; beat until blended.
