BUTTERMILK COCONUT BARS
One of my favorite recipes...you can't go wrong serving these bars.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
- In a medium bowl, combine the sugar, brown sugar, flour, and butter; blend with a pastry blender until the mixture is in coarse crumbs. Remove 2 cups of the mixture to another bowl, and reserve the rest.
- Stir the coconut and walnuts into the 2 cups of the sugar mixture. Pat firmly into the greased pan. Stir the baking soda, salt, and cinnamon into the reserved mixture. Then mix in the egg, buttermilk and vanilla until well blended. Spread this over the crust in the pan.
- Bake for 35 to 45 minutes in the preheated oven, or until firm. Allow to cool. Make a glaze using confectioners' sugar and enough of the milk to give it a drizzling consistency. Drizzle over bars before cutting into squares.

- In a large bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes. In a small saucepan, heat the buttermilk until warm to the touch.
- Pour the buttermilk and oil into the yeast mixture; mix well. Combine the flour, salt and baking soda. Stir the flour mixture into the liquid 1 cup at a time, until a soft dough forms. Turn dough out onto a lightly floured surface and knead 20 times. Cover and let rest for 15 minutes. In a small bowl, stir together the butter, brown sugar and cinnamon.
- On a lightly floured surface, roll dough out into a large rectangle. Spread the brown sugar and butter mixture over the dough, roll up into a log and pinch the seam to seal. Slice into 1 inch pieces and place cut side up in a lightly greased 10x15 baking pan. Cover and let rise 30 minutes or cover and refrigerate overnight. If baking immediately, preheat oven to 400 degrees F (200 degrees C).
- Bake in preheated oven for 20 to 25 minutes, until golden brown. Let stand for 2 to 3 minutes before serving.

- 1. Preheat oven to 350. In a large mixing, combine flour, sugars and butter. Mix at low speed until crumbled well.
- 2. Press 2 cups of mixture into ungreased 9x13 baking pan. To remaining crumb mixture add your nuts, baking soda, cinnamon, salt, buttermilk, vanilla and egg and blend well. Pour evenly over crumb crust.
- 3. Bake at 350 for 20-25 minutes or until golden brown and tests done in the center with toothpick.
- 4. To make glaze-blend all ingredients until smooth. streusel glaze all around the surface of the bars. Cut into bars and serve after they have cooled a bit.
CINNAMON BUTTERMILK BAKED DOUGHNUTS

- Preheat oven to 425F degrees. Spray doughnut pans with baking spray and set aside. Put cinnamon sugar in a bowl.
- In a large bowl, combine flour, sugar, baking powder, cinnamon and nutmeg.
- In a separate bowl, whisk buttermilk, eggs, honey, butter and vanilla. Add to flour mixture, folding gently until combined.
- Pipe batter into the wells of the doughnut pans, filling about ¾ full.
- Bake for 8 to 10 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from pan and dip the top of each warm doughnut in the cinnamon sugar and set on a wire rack to cool completely.
BUTTERMILK CINNAMON BARS
These are from Sally Grosserode. Very old recipe. They have coconut and nuts too. I have made this recipe. It is wicked good. The batter is loose when you put it over the pressed mixture. It is very rich, almost candy bar like. Try this recipe; you will like it.

- Cream butter, sugar and brown sugar.
- Add flour. Divide in 1/2.
- To the first half add nuts and coconut.
- Press into the bottom of a 9x13 pan; set aside.
- Combine egg, salt, cinnamon, baking powder, buttermilk, and vanilla.
- Spread over first layer.
- Bake in 350 degree Fahrenheit oven for 45 minutes.
- While still warm frost with thin icing.
