Buttermilk Banana Bread - This is the best banana bread recipe ever! This is an easy recipe and the bread is so moist and delicious. I absolutely love it!

2 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 medium overripe bananas, (mashed with a fork (about 1 cup))
2 large eggs
1 cup buttermilk
1/2 cup canola oil (or your preferred cooking oil)
1 cup granulated sugar
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350°F. Spray a 9 by 5 inch loaf pan with cooking spray and set aside.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt
  • In a large bowl, whisk together the mashed banana and the eggs. Add the buttermilk, oil, sugar, and vanilla and mix well.
  • Stir the dry ingredients into the wet ingredients until just combined. Do not over mix. Pour the batter into the prepared baking pan.
  • Bake for 1 hour to 1 hour and 10 minutes. When a toothpick is inserted into the center of the bread, it should come out with moist crumbs but with no raw batter on it.
  • Let the bread cool in the pan for 10 minutes. Remove the bread from the pan and place on a cooling rack to cool completely before slicing. Store covered in the refrigerator*.

1 1/3 cups sugar
1/2 cup butter, softened
2 eggs
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon baking powder
2 cups all-purpose flour
1 teaspoon vanilla
1 1/4 cups mashed ripe bananas
3/4 cup broken pecans

Steps:

  • Cream sugar and butter.
  • Add eggs, one at a time, mixing well after each addition - use a mixer.
  • Stir baking soda into buttermilk and add to mixture.
  • Sift baking powder with flour and blend into creamed mixture.
  • Add vanilla and banana and mix.
  • Stir in pecans.
  • Pour into greased and floured 9"x5" loaf pan. (May also use 4 mini loaf pans.).
  • Bake at 300 degrees F for about 1 1/2 hours or until loaf tests done with a toothpick. (Bake for 50-60 minutes for mini loaves.).
  • Cool for 20-30 minutes before removing from pan.

2 cups flour
1 teaspoon baking soda
½ teaspoon ground cinnamon
1 ¼ cups white sugar
½ cup shortening
2 egg, beaten
1 cup mashed ripe banana
1 teaspoon vanilla extract
½ cup buttermilk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a loaf pan.
  • Sift flour, baking soda, and cinnamon together in a bowl.
  • Beat sugar and shortening together in a separate large bowl with an electric mixer until light and fluffy; add 1 egg at a time, thoroughly beating the first into the sugar mixture before adding the second. Beat banana and vanilla into the wet mixture together. Stream buttermilk into wet mixture while continually beating until smooth; add flour mixture and continue to beat until you have a smooth batter. Pour batter into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

1 egg
5 tablespoons agave syrup or 7 tablespoons sugar
1/4 cup buttermilk
1 teaspoon vanilla extract
1 tablespoon canola oil
2 very ripe bananas, mashed (about 1/2 cup)
1/4 cup chopped walnuts
1 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Preheat oven to 160C (320F). Grease or line loaf tin with parchment paper.
  • In a medium sized bowl, beat the egg. Add agave, buttermilk, vanilla extract and canola oil and mix well. Stir in mashed bananas.
  • In a big bowl, combine flour, baking powder, baking soda and salt. Mix well. Combine wet ingredients and dry ingredients and stir until just combined. Stir in walnuts.
  • Pour batter into prepared loaf tin. Bake for about 60 minutes, until cake tester comes out clean. Take out of the tin and let cool completely.

1/2 cup butter
4 eggs
4 cups mashed bananas (8-10 large ripe ones)
3 cups cake flour
1 cup regular white flour
2 1/2 teaspoons baking soda

1/2 teaspoon baking powder
3/4 cup buttermilk
1/3 cup pecans (optional)

Steps:

  • Spray three loaf pans.
  • Cream together sugar, butter and shortening. Add eggs, one at a time, mixing. Add bananas and mix well.
  • Sift together flours, baking soda, salt and baking powder.
  • Gradually add flour mixture to creamed mixture alternately with buttermilk, beginning and ending with dry things. Use a light hand, mixing just enough to mix each time.

1 large egg white
1 large egg, room temperature
1 cup mashed banana (about 2 very ripe medium-sized bananas)

3 tablespoons of strong espresso coffee, cooled (mixed with 3 tbsp water) or 1 tablespoon instant espresso powder (mixed with 3 tbsp water)

Steps:

  • Butter a bread pan or a 9-inch square pan. Preheat the oven to 350°F (180°C).
  • Sift together in a bowl the flour, baking powder, baking soda, salt, and allspice (or cinnamon). Mix in the sugar.
  • In a large bowl, mix together the butter, egg white, egg, banana puree, buttermilk or sour cream, vanilla and espresso.
  • Make a well in the center of the flour mixture and stir in the wet ingredients with a spatula until almost mixed. Add in your choice of additions if desired and stir until just combined, but don't overstir: stop when any traces of flour disappear.
